DYNAMITE SHRIMPS
Batter coated shrimps, deep fried in oil and dressed with a sweet chili mayo sauce.

Steps:
- Add all the ingredients for the prawn marination in a bowl and whisk well.
- Add prawns to the marination and keep overnight in the fridge.
- Mix all the ingredients for the dredging mixture in a bowl.
- Line a plate or a tray with cling wrap and lightly dust with the dredging mixture.
- Coat the marinated prawns with the dredging mixture and place it on the dusted tray.
- Cover the prawns with a damn cloth or cling wrap for 10 to 15 minutes.
- Meanwhile, mix all the ingredients for the sauce together and set aside
- Once you see all the dredging mixture has been absorbed, your prawns are ready to fry.
- Deep Fry the prawns in oil at high to medium flame for about 10 to 15 minutes or until the color turns golden brown.
- Dish out the fried prawns and pour the dynamite sauce on the shrimps generously while they are hot.
- Serve in a cocktail glass garnished with green onions.

SHRIMP ENCHILADAS WITH GREEN SAUCE

- Preheat oven to 350°. In a skillet, heat 1/2 cup oil over medium-high heat. In batches, fry tortillas until pliable (do not allow to crisp), about 10 seconds on each side. Drain on paper towels. Cover with foil to keep warm and softened., In a large skillet, heat remaining oil over medium-high heat. Add tomatoes, onions, garlic and cumin; cook and stir until onions are tender, 3-4 minutes. Add shrimp; cook until shrimp turn pink, stirring occasionally, 3-4 minutes. Stir in spinach; heat through., Place 1/4 cup shrimp mixture off center on each tortilla; top with 1 tablespoon cheese. Roll up and place in a greased 13x9-in. baking dish, seam side down. Top with sauce; sprinkle with remaining cheese., Bake, uncovered, until heated through and cheese is melted, 25-30 minutes. If desired, sprinkle with cilantro.

DYNAMITE HALIBUT
I created this recipe because my family just loves the dynamite dishes served in sushi restaurants. It's a hit for all ages! This would even be great on top of chicken breasts! Serve atop of sushi rice and a side of steamed broccoli. Garnish with a lemon wedge.

- Preheat oven to 375 degrees F (190 degrees C).
- Set an oven rack into the center of the oven.
- Line a baking sheet with aluminum foil and a layer of cooking spray.
- Arrange halibut pieces on the prepared baking sheet so that all pieces are touching.
- Mix the mayonnaise, lemon juice, chili garlic sauce, sugar, soy sauce, and sesame oil in a bowl; fold the mushrooms and onion into the mayonnaise mixture.
- Spread the mushroom mixture over the halibut pieces.
- Squeeze one lemon half over the mushroom mixture; sprinkle with Kosher salt.
- Bake in the preheated oven until almost opaque, 15 to 20 minutes; remove the baking sheet from the oven.
- Raise the oven rack with the baking sheet to the next-highest level switch the oven to broil.
- Continue cooking the fish under the broiler until the top is browned, about 10 minutes.
- Squeeze the remaining lemon half evenly over the fish.
- Sprinkle with sesame seeds and green onions.

- Place the ground beef in a large skillet over medium-high heat. Add the green pepper, red pepper, yellow onion and red onion to the skillet, and cook until meat is evenly browned and vegetables are tender. Drain excess grease from the pan.
- Transfer the mixture to a slow cooker, and stir in tomato paste, water and red pepper flakes. Cover, and cook at the Low setting for at least 4 hours. I usually let it go for 12. The longer it simmers, the spicier it gets! Spoon into torpedo rolls and serve.

P.F. CHANG'S DYNAMITE SHRIMP RECIPE
Steps:
- In a small bowl, combine all sauce ingredients. Mix well. Set aside.
- Heat oil in medium skillet or wok over medium heat.
- In a medium bowl combine all batter ingredients. Mix well until smooth.
- Toss prepared shrimp in batter. Turn to coat well.
- Remove shrimp, 1 or 2 at a time, from batter, allowing excess to drip off, and add to hot skillet. Add as many shrimp as will fit comfortably in skillet. Do not crowd. Cook for 2 - 3 minutes on each side.
- When done remove from oil and place on a paper towel-covered plate to drain. Keep warm.
- Repeat with any remaining shrimp.
- When all shrimp are cooked, place into a sealable container. Add about 1/2 of the prepared sauce. Seal and toss to coat. Add more sauce if desired.
- Line 1 or more large martini glasses (or small plates or bowls, if you prefer) with 2 to 3 leaves lettuce each.
- Spoon shrimp onto lettuce.
- Sprinkle scallions onto shrimp.
- Serve hot.
DYNAMITE RICE
This recipe is inspired by the popular dynamite sushi roll. We use some of the same elements to create something that's not only gorgeous and delicious, but is also one of the easiest, most foolproof ways to cook seafood ever. So, if you enjoy seafood but are afraid to cook it, this is the technique for you.

- Rinse rice and drain. Add rice to a pot and pour in water. Bring to a simmer over high heat, then reduce heat to low. Cover and cook for 20 minutes. Turn off heat and let rest for 10 minutes.
- While rice cooks, combine rice vinegar, sugar, and salt together in a small bowl until dissolved. Set aside.
- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a shallow 2-quart baking dish with some sesame oil.
- Uncover rice and drizzle over seasoned vinegar mixture. Use a fork to break up and fluff rice. Transfer rice into the prepared baking dish. Sprinkle over toasted sesame seeds, bonito flakes, and nori; use a fork to gently stir into the rice.
- Mix mayonnaise, soy sauce, ½ teaspoon sesame oil, and Sriracha for topping together in a bowl and stir in scallops and shrimp. Spread over rice, and sprinkle cayenne over the top.
- Bake in the center of the preheated oven until the seafood is just cooked through (or 95% cooked through), about 20 minutes. Turn oven to a high broil setting, and brown the top, 1 to 2 minutes. Garnish the top with more Sriracha, toasted sesame seeds, and green onions before serving.
