Myrna Ossin's book "What to Do with Your Leftover Matzah, the Fifth Question" compiles recipes for using up the unleavened bread. Here's her recipe for sugar cookies made with matzah cake flour, delicately flavored with Earl Grey tea.This recipe is by Myrna Ossin and was originally published in the Chicago Tribune.

1 cup (two sticks) butter
1/2 cup confectioners' sugar (see notes)
contents of two earl grey tea bags (about 2 teaspoons of tea leaves)
1 1/2 cups matzah cake flour
1/2 cup potato starch
1/4 teaspoon salt (optional)

Steps:

  • Step 1: In a food processor, mix 1 cup (2 sticks) butter and 1/2 cup confectioners' sugar. Add 2 teaspoons Earl Grey tea leaves, 1 1/2 cups matzah cake flour, 1/2 cup potato starch and 1/4 teaspoon salt (optional), and mix until the dough forms a ball, about two minutes.
  • Step 2: Place dough between two sheets of plastic wrap and roll dough to about 1/4-inch thick. Refrigerate on a cookie sheet until stiff, about 30 minutes.
  • Step 3: Preheat oven to 350 F. Remove dough from the refrigerator. Use a cookie cutter to form desired shapes. Press scraps together to form more cookies.
  • Step 4: Place the cookies on a tray covered with parchment and sprinkle each cookie with sugar. If dough has softened, return to the refrigerator for 15 minutes before baking. This will make the cookies more crispy.
  • Step 5: Bake for 20 minutes.

Crisp and buttery shortbread cookies with a hint of Earl Grey, with just 5-ingredients and an easy lemon glaze, they're perfect for parties, tea time, or scarfing down all by yourself!

1 cup unsalted butter (room temperature)
2 tablespoons Earl Grey tea leaves
½ cup powdered sugar
2 cups all-purpose flour
½ tsp salt
1 cup powdered sugar
1 tablespoon lemon juice

Steps:

  • Blend the butter and earl grey tea leaves together and allow to sit at room temperature for at least 2 hours, longer is fine. If you are running short on time, this step can be skipped and the tea can be added with the powdered sugar. Just note that the flavor may not be as strong.
  • Once the butter has finished setting. Preheat oven to 350­° F and line a baking sheet with parchment paper and set aside.
  • Cream the butter and tea mixture and powdered sugar in a large bowl or stand mixer.
  • Add in the flour and salt. Continue to mix until a soft dough forms. The mix will be dry and crumbly at first but will come together.
  • Roll dough out on a lightly floured surface until it's 1/4-inch thick.
  • Cut out cookies using a 2-inch round cookie cutter.
  • Bake on a parchment lined baking sheet for 12 to 15 minutes or until the edges are golden brown in color.
  • Once cooled, whisk together the glaze ingredients and dip or drizzle the cookies as desired and place on wax paper to set.

1 Earl Grey tea bag
1/3 cup boiling water
1/4 cup butter, softened
1/2 cup sugar
1 large egg, room temperature
2 cups all-purpose flour
1 teaspoon ground cinnamon, divided
1/4 teaspoon ground cardamom
1/4 teaspoon salt
2 tablespoons confectioners' sugar

Steps:

  • Place tea bag in a 1-cup glass measuring cup. Add boiling water; steep 3-5 minutes. Discard tea bag. Cool completely., Preheat oven to 400°. In a small bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and cooled tea. In another bowl, whisk flour, 1/2 teaspoon cinnamon, cardamom and salt; gradually beat into creamed mixture., Shape level tablespoons of dough into balls; place 2 in. apart on ungreased baking sheets. Flatten slightly with bottom of a glass., Bake 6-8 minutes or until light brown. Remove to wire racks to cool completely. Mix confectioners' sugar and remaining cinnamon. Dust cookies with cinnamon mixture.

1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a baking sheet with cooking spray.
  • Combine flour, white sugar, confectioners' sugar, baking soda, and salt in a large bowl. Cut open tea bags and mix tea leaves evenly into the flour mixture.
  • Add butter, eggs, water, and vanilla extract to the flour mixture. Mix with an electric mixer or rubber spatula until dough comes together.
  • Roll dough into balls and shape into 2-inch cookies on the prepared baking sheet.

  • In a food processor, pulse together the flour, tea, and salt, until the tea is just spotted throughout the flour. Add the confectioners' sugar, vanilla, and butter. Pulse together just until a dough is formed. Place dough on a sheet of plastic wrap, and roll into a log, about 2 1/2-inches in diameter. Tightly twist each end of wrap, and chill in refrigerator for 30 minutes.
  • Preheat oven to 375 degrees F.
  • Slice the log into 1/3-inch thick disks. Place on parchment or silpat lined baking sheets, 2 inches apart (2 probably needed depending on size of sheets). Bake until the edges are just brown, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks and cool to room temperature.
