LIME AND CHILE ROASTED PORK SHOULDER

Steps:
- 1. Pulse the garlic, scallions, coriander, chipotle chile, cumin, 2 tablespoons salt, and 1 teaspoon pepper in a food processor or mini-chopper to make a thick paste. If the butcher didn't trim the fat cap on the pork shoulder, trim off all but a thin layer of fat. Make deep incisions with a paring knife, at about 2-inch intervals, all over the meat. Rub the garlic and spice mixture into and all over the meat.
- 2. Combine the lime zest and juice, orange juice, adobo sauce, olive oil, and cinnamon in a nonreactive stainless steel or glass bowl. Add the meat, cover tightly with plastic wrap, making sure the meat is submerged. Refrigerate for at least 8 hours or up 2 days. Bring to room temperature about 1 hour before roasting.
- 3. Preheat the oven to 450 degrees F. Put the pork, fat-side up, in a large Dutch oven. Roast the meat, uncovered, for 30 minutes. Add the marinade to the pot and cover with the lid. Lower the temperature to 350 degrees F and roast for 2 hours more. Uncover and continue to cook, basting occasionally, until an instant read thermometer inserted into the meat registers 190 degrees F and the meat is a rich burnished brown, 1 1/2 to 2 hours more. Set aside on a cutting board to rest for 20 minutes before slicing.
- 4. For the sauce: Strain the pan drippings through a fine mesh sieve into a gravy separator and discard all excess fat. In a small saucepan, mix the pan drippings with 1/2 cup water and bring to a vigorous boil. Slice the meat and serve with the pan drippings.
CHILI RUBBED BBQ PORK CHOPS

- Preheat broiler.
- Rinse chops with cold water and pat dry. Place on foil-lined baking sheet and season with garlic salt and pepper. Rub with chili seasoning. Broil 4 minutes per side. Brush with BBQ sauce and broil 1 minute, turn, brush with more BBQ sauce and broil an additional 1 minute. Serve hot.
- Combine mangos and tomatoes in pan over heat. Squeeze in lime juice. Add salt and pepper to taste. Break up the mangos with a spoon so they are consistent in size with the tomatoes. Heat over medium-low heat for about 5 minutes or until heated through, stirring occasionally.
- Once heated through stir in chopped cilantro and serve with pork chops.
GARLIC-LIME PORK CHOPS
These deliciously seasoned, slightly spicy pork chops can be eaten as-is for a great main dish or turned into pork tacos. They are really quick and easy.

- Mix salt, Italian seasoning, black pepper, chili powder, 1/4 teaspoon garlic powder, paprika, and onion powder together in a bowl. Sprinkle spice mixture generously on both sides of pork chops.
- Heat butter and olive oil in a large, heavy skillet over medium heat. Cook pork until no longer pink in the center and golden brown on both sides, about 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Transfer pork chops to a serving plate, reserving juices in the skillet.
- Add lime juice and garlic powder to the same skillet and mix into leftover juices. Stir to combine and pour over the pork chops.

Steps:
- Heat closed contact grill for 5 minutes.
- Meanwhile, in small bowl, mix all seasoning ingredients. Brush mixture evenly on both sides of each pork chop.
- When grill is heated, place pork chops on bottom grill surface. Close grill; cook 5 to 7 minutes or until pork is no longer pink in center. If desired, sprinkle pork with chopped fresh cilantro and serve with lime wedges.

- Place the pork chops in a plastic bag or bowl.
- For the marinade, in a small bowl, stir together the lime juice, chili powder, olive oil, cumin, cinnamon, hot pepper sauce, salt and garlic.
- Pour over the chops, turning to coat well. Label and freeze at this point if you are doing OAMC. If not, allow to marinate for 4-24 hours before broiling.
- Preheat broiler.
- Place chops on the unheated rack of a broiler pan Broil for 6-8 minutes (3-4 minutes on each side) or until done and juices run clear.

EASY CHILI-LIME PORK CHOPS
I through this together one night when I was tired after a long day at work but didn't want to eat plain chops. The chili-lime seasoning is readily available in the ethnic food aisle of grocery stores in areas with a large Hispanic population or it can be obtained at Latin grocery stores. I have the Klass brand, but there are others that are just as good. This recipe is flavorful but not spicy. If you want spicy feel free to add additional hot chilies. Be sure to get pork chops that do NOT have "broth" or "flavoring solution" added because they have too much salt and the company-added seasonings tend to overpower recipe ingredients.

- Measure and mix dry seasonings.
- Rub seasoning mix on pork chops.
- Saute pork chops in skillet over medium heat, turning once, until nearly cooked. Use a little olive oil in the pan if chops are lean enough to be likely to stick.
- Turn heat to very low, sprinkle sherry over chops, and cover the pan.
- Let chops sit about 5 minutes or until fully cooked. Chops should be nicely browned and not dried out.
- Remove to a serving platter and pour any pan juices overtop.
- Note: Chili-lime pork chops could get MUCH fancier with the use of fresh lime juice, lime zest, specific varieties of chilies, etc. but this easy version was what I was up to after a 10 hour shift in the near-100-degree heat.
- Note: This would be very good cooked on the grill and served with sauteed onions and peppers.

- In a large resealable plastic bag, combine the first four ingredients. Add pork chops. Seal bag and turn to coat; refrigerate for 8 hours or overnight. , Drain and discard marinade. Grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. - Start by pre-heating the oven to 350°F, and then prepare the sauce for the pork chops. Squeeze the lime into a small bowl. You’re looking for about 1-1/2 to 2 tablespoons here, so if your lime is stingy you may need more than one. Add 2 teaspoons of rosted red chili paste, and about 2 tablespoons of low sodium soy sauce. Blend it with a fork.
- Heat a skillet pan on the stovetop and add 1 tbsp extra virgin olive oil, or another oil of your choice. When hot, add the chops (you should hear the sizzle) and sear until the bottom is nicely caramelized. Grind pepper onto the top and turn over. Shut the burner off and let the other side sear a bit. (Note, if your pan can't go into the oven, transfer the chops into an ovenproof baking dish). Being careful of any splattering, add about 1/3 cup water to the pan (the purpose of this is to prevent the sauce from cooking down too quickly, and also to have enough moisture in the pan for the rest of the cooking process). Pour the sauce over the chops and then finish with another grinding of pepper
- If you’d like to add some extra flair, put the squeezed lime halves and/or some torn fresh sage into the pan. Bake for approximately 30 minutes, or until the juices run clear. The internal termperature should be at least 145°F. I usually roast mine to about 150 or 155°F.
