- In a microwave, melt candy coating; stir until smooth. Stir in extract., Dip crackers in candy coating mixture; allow excess to drip off. Place on waxed paper. Decorate with candies and colored sugar as desired. Let stand until set.

QUICK CINNAMON ROLLS
Quick and easy cinnamon rolls from scratch, with no yeast, proofing, or kneading necessary!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Brush a 9-inch square baking dish with 2 tablespoons melted butter.
- Whisk flour, 2 tablespoons white sugar, baking powder, and salt together in a large bowl. Work 3 tablespoons softened butter into flour mixture using your hands. Beat milk and egg together in another bowl; pour into flour-butter mixture and stir with a rubber spatula until a soft dough forms.
- Turn dough out onto a floured work surface and roll dough into a 1/4-inch thick rectangle. Brush surface of dough with 2 tablespoons melted butter.
- Whisk 1/2 cup white sugar, brown sugar, and cinnamon together in a small bowl. Sprinkle 1/2 of the cinnamon sugar mixture in the bottom of the prepared baking dish. Sprinkle remaining cinnamon sugar over butter-brushed dough. Roll dough around filling to form a log; cut log into 18 rolls and place rolls in the prepared baking dish.
- Bake in the preheated oven until rolls are set, 20 to 25 minutes.
- Beat confectioners' sugar, cream cheese, 1/4 cup softened butter, and vanilla extract together in a bowl until frosting is smooth. Top hot cinnamon rolls with cream cheese frosting.

- Cream butter and sugar until light and fluffy.
- Add egg and beat well.
- Combine flour with baking powder and salt.
- Add to creamed mixture and mix well.
- Drop onto greased cookie sheet in marble-sized balls.
- Press flat with bottom of greased glass dipped in the sugar-cinnamon mixture.
- Bake in 350°F oven 10 minutes.
- Remove from cookie sheet and cool.

SUNNY'S EASY CINNAMON SUGAR CRISPY NOODLES

- In a large pot or wok over medium-high heat, add about 1 inch oil. Heat until it swirls and reaches 375 degrees F. Line a baking sheet with paper towels.
- Separate and break the noodles into 4- to 6-inch sections. Test the oil with a few strands; they should almost instantly get puffy. When the oil is ready, add the noodles in batches and cook until puffy, then remove to the paper towels. Season with a pinch of salt and a dusting of cinnamon sugar over the top.
CINNAMON THINS
I came up with the recipe the other day and it turned out perfectly. These are high in protein and fiber and totally low in sugar and high glycemic carbs. And the best part is they are vegan and gluten free.

Steps:
- Mix all of the ingredients well in a small bowl.
- All ingredients should be moist and the dough should hold together.
- Put the dough on a greased sheet of heavy-duty aluminum foil or parchment paper, about 15x18".
- Cover the dough with a piece of wax paper that's been sprayed with non-stick spray.
- Roll out the dough to about 1/8" thick or slightly thinner.
- Try to get the dough to an even thickness about 9 x 9" square.
- Peel off the wax paper, sprinkle the topping over the dough, spread the topping evening over the dough with your hand.
- Use a pizza or ravioli cutter to score the dough into approximately 1-inch squares.
- Lift the foil and set it on the oven rack and bake them at 325ºF for 10-15 minutes, or until golden brown.
- Check after 10 minutes and if crackers at outer edge are getting pretty brown, remove those and continue baking the rest until golden.
- I used a thin metal spatula to very gently pry the crackers from the foil.
- Break them apart on the score lines and let cool.
- Can be frozen.
