1 pound Ground beef
1 packet Taco seasoning
1 cup Salsa
4 oz Cream cheese
1 can Corn
1 box Cornbread mix ((8.5oz))
1 Egg
1/3 cup Milk
1/2 cup Shredded cheese
1 tablespoon Chopped cilantro ((optional for garnish))

Steps:

  • Preheat oven to 400 degrees. Prepare a pie dish with nonstick cooking spray and set aside.
  • Start by cooking your ground beef in a large skillet. Drain fat and return to stove top. Add taco seasoning, salsa, and cream cheese. Cook until cream cheese is melted and all ingredients are well combined. Add this to your prepared pie pan.
  • Drain corn well and add to the top of your pie.
  • Mix your cornbread according to box instructions. Mine called for 1 egg and 1/3 cup milk. Spoon this on top of your pie. Top with shredded cheese.
  • Bake for 20-25 minutes or until cornbread is cooked through. Optional: garnish with fresh cilantro.

1 can (2.8 ounces) french-fried onions, divided
1/3 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the corn, tomato sauce, water, green pepper and taco seasoning. Spoon into a greased 2-qt. baking dish., Prepare cornbread mix according to package directions for cornbread. Stir in half of the onions. Spread over beef mixture. Bake, uncovered, at 400° for 20 minutes. , Sprinkle with cheese and remaining onions. Bake until cheese is melted and a toothpick inserted into cornbread layer comes out clean, 3-5 minutes longer.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (6 ounce) can tomato sauce
1 cup grated cheddar cheese

Steps:

  • Mix cornbread according to package directions. Cook ground beef and drain fat. Add, taco seasoning mix and water according to package. Add tomato sauce. Cook until slightly thickened. Pour meat mixture in a 8x8 cassarole dish. Add layer of grated cheese and then spread the cornbread mixture on top spreading it to the edges of the pan. Bake at 350 degrees for about 45 minutes or until brown.
  • Optional: serve with sour cream and taco sauce.

2 cups shredded rotisserie chicken
1/2 cup water
1 Tablespoon taco seasoning

1 can black beans (drained and rinsed, 15 ounce can)
1 can tomato sauce (8 ounce)
1 package Jiffy corn muffin mix (8.5 ounce)

Steps:

  • Preheat oven to 400 degrees F.

Steps:

  • Combine crust ingredients except water in food processor bowl.

  • The cornbread topping recipe is simply half of my normal cornbread recipe hence the odd measurements. Add dry ingredients through sugar to a medium mixing bowl. Beat with a whisk to aerate and combine. Melt butter in microwave-safe liquid measuring cup in the microwave. Once melted, add buttermilk first to help cool the butter off and then add 1 egg and 2 Tb honey. Beat together to combine and add to dry ingredients. With a rubber spatula, not the whisk, mix the cornbread batter just until combined. You want to remove most of the lumps without overmixing. Add 1/2C shredded colby jack cheese and fold to combine. Set aside.
