A very easy pineapple cake with a cream cheese frosting.

2 cups all-purpose flour
2 cups white sugar
2 eggs
2 teaspoons baking soda
1 teaspoon vanilla extract
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish.
  • In a large bowl, mix together the flour, sugar and baking soda. Make a well in the center and add the eggs, vanilla and crushed pineapple, with liquid from can. Mix well to blend.
  • Bake for 45 minutes, or until a toothpick inserted into cake comes out clean.
  • To make the frosting: in a medium bowl, combine cream cheese, butter, confectioners sugar and 1 teaspoon of vanilla. Beat until creamy. Spread on warm cake.

1 (18 ounce) box duncan hines angel food cake
1 (16 ounce) can crushed pineapple in juice

Steps:

  • Dump both ingredients into a bowl and mix until smooth.
  • Pour into an angel food cake pan. Do not grease the pan!
  • Bake according to package directions for plain angel food cake.or until toothpick comes out clean and top is golden brown.
  • Cool and remove from pan by placing hole over a bottle upside down.

Steps:

  • Preheat oven to 350°F
  • Spray 13 x 9 x 2-inch baking pan with nonstick cooking spray.
  • CAKE: Beat egg whites and sugar until blended.
  • In another bowl, combine flour and baking soda.
  • Beat into wet ingredients.
  • Add pineapple and vanilla extract.
  • Pour batter into prepared pan.
  • Bake for 40 minutes, or until it tests done when a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes.
  • FROSTING: Gradually whisk in confectioners' sugar into cream cheese and vanilla.
  • Frost cake with a knife, or by pouring it on if the frosting is thin.

9 maraschino cherries halves

1/2 teaspoon vanilla extract
1-1/3 cups cake flour
1-1/4 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Pour butter into a 9-in. square baking pan; sprinkle with brown sugar. Arrange pineapple slices in a single layer in pan; place cherry halves in center of pineapple slices; set aside., In a large bowl, beat the sugar, milk, oil, egg and extracts until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended. Pour into prepared pan., Bake at 350° for 35-40 minutes or until a toothpick comes out clean. 1 (20 ounce) can pineapple chunks in juice
¼ cup unpacked brown sugar
⅓ cup vegetable oil
1 ½ tablespoons vanilla extract
1 tablespoon white vinegar
1 ½ cups all-purpose flour
1 cup white sugar
1 tablespoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
¼ cup water, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Drain pineapple juice from the can into a 1-cup liquid measure and add enough water to make 1 cup; set aside. Dump pineapple chunks into the bottom of a 12-inch springform pan and sprinkle brown sugar over top.
  • Combine pineapple juice mixture with oil, vanilla, and vinegar in a bowl.
  • Mix flour, sugar, cinnamon, baking soda, and salt together in a large bowl. Mix in wet ingredients, stirring quickly to combine and get out any big lumps. Pour into the the pan on top of the pineapples and brown sugar.
  • Bake until the top is golden and a toothpick inserted in the center comes out clean, 25 to 35 minutes.
  • Remove from the oven and let cool in the pan, about 30 minutes. Loosen the sides of the cake from the pan, then remove the side ring. Place a serving plate on top and flip cake over. Remove the pan bottom and serve.
