6 ounces multi-grain spaghetti
1/4 cup multi-grain croutons, crushed
1/4 cup chopped fresh flat-leaf parsley
1 1/2 tablespoons grated lemon zest
1 tablespoon olive oil
1 shallot, thinly sliced
1 garlic clove, minced
1/4 teaspoon crushed red pepper
3/4 pound large shrimp, shelled and deveined (about 16 large shrimp, 21 to 25 count)
1/4 teaspoon salt
1/4 cup low-sodium chicken broth
1/4 dry white wine
1 tablespoon lemon juice
6 black pitted and chopped olives such as Kalamata (about 1 tablespoon)

Steps:

  • Cook the spaghetti according to package directions. Drain; set aside.
  • Meanwhile, combine the croutons, 1/2 tablespoon of the parsley, and 1 tablespoon of the zest in a small bowl; set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Add the shallot, garlic, and red pepper. Cook, stirring until the shallots are soft, about 1 minute. Add the shrimp and the salt, and cook, over medium-high heat, turning occasionally, until the shrimp are opaque, 1 to 2 minutes. Stir in the broth, wine, lemon juice, and olives. Bring to a boil and cook for 1 minute, then reduce the heat to medium. Stir in the spaghetti, the remaining 3 tablespoons parsley, and the remaining 1/2 tablespoon zest, tossing to coat well; remove from the heat.
  • Transfer to a large bowl. Sprinkle with the crouton mixture. Serve at once.

2 (8 ounce) packages shirataki noodles, drained and rinsed
1 tablespoon olive oil
1 tablespoon minced shallot
2 cloves garlic, minced
¼ teaspoon red pepper flakes
12 ounces raw shrimp, peeled and deveined
¼ teaspoon salt
⅛ teaspoon ground black pepper
3 tablespoons fresh lemon juice
3 tablespoons dry white wine
2 tablespoons butter
1 tablespoon chopped fresh parsley

Steps:

  • Cover shirataki noodles with water and bring to a boil. Boil for 5 minutes. Drain.
  • Return drained noodles to the saucepan and cook over medium heat to remove any excess moisture, 5 to 6 minutes. Remove from heat and set aside.
  • Drizzle olive oil into a large skillet over medium heat. Add shallot and stir until translucent, 2 to 3 minutes. Take care not to burn. Add garlic and red pepper flakes; stir for 1 minute. Add shrimp and cook for 2 to 3 minutes per side, taking care not to overcook. Season with salt and pepper.
  • Transfer shrimp to a bowl, reserving pan drippings in the skillet. Whisk lemon juice and white wine into the skillet. Add butter and cook until fully incorporated and sauce begins to thicken slightly, 3 to 4 minutes.
  • Return shrimp to the skillet. Add noodles. Sprinkle with parsley and toss to combine.

1 pound linguini pasta
¼ cup butter
5 cloves garlic, minced
1 pound medium shrimp - peeled and deveined
1 cup bread crumbs
½ cup white wine
1 lemon, juiced
¼ cup light olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain pasta, and set aside.
  • In a large skillet, melt butter over medium heat. Add most of the garlic, keeping some for later. Coat the garlic completely with butter. Do not let the garlic brown. Add shrimp, and toss to coat. Immediately remove pan from heat; shrimp will not be cooked yet.
  • Sprinkle the shrimp with breadcrumbs (enough to coat the shrimp), and transfer the entire mixture to a medium casserole dish. Pour wine and the lemon juice over the shrimp. Cover, and bake at 350 degrees F (175 degrees C) for 10 minutes.
  • Remove cover, and bake an additional 5 minutes.
  • In a small saucepan heat olive oil with remaining garlic. Toss the pasta with the olive oil and garlic mixture. Serve the shrimp over the pasta with additional lemon slices on the side.

1 1/4 lbs medium shrimp, peeled and deveined (tails left on)
6 -8 garlic cloves, minced
1/2 cup low sodium chicken broth
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup parsley, minced (plus 1 tbsp)
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
4 lemon wedges

Steps:

  • In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, about 2-3 minutes. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter and keep them warm.
  • In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; and bring it to a boil. Boil uncovered, until the sauce is reduced by half.
  • Spoon the sauce over the shrimp. Serve garnished with the lemon wedges and sprinkled with the remaining tablespoon of parsley.

  • Start by setting a large pot of water to boil over high heat. Since you'll be using this water to cook the spaghetti noodles, it's important to salt the water generously. I've heard it said that the pasta water should taste like the sea, so I use a few good pinches of salt and it always works well.
  • When your pasta water has boiled, add the spaghetti and boil it according to the package directions until it's done to your liking (we like ours al dente).
  • While the pasta cooks, set a large skillet over medium high heat. Once the pan is hot, add the olive oil and butter and once it heats up add the chopped garlic. Saute the garlic for about a minute and then add the shrimp, along with the chili flakes and the paprika.
  • Once the shrimp begins to turn pink, move it around in the pan with the garlic, red pepper flakes, paprika and pepper for another minute or two.
