CRANBERRY ORANGE POUND CAKE

- Preheat oven to 350 degrees F. Grease a 9x5 loaf pan with butter.
- Prepare the dry ingredients: In a large bowl, whisk the flour, baking powder, and salt until evenly combined. Set aside.
- With a handheld mixer or a stand mixer with the paddle attachment, beat the softened butter on high speed until light and fluffy, about 1-2 minutes. Add the granulated sugar, and mix on high speed until fluffy for 1-2 minutes, scraping the sides of the bowl as needed.
- Lower to medium speed and add in the eggs, one at a time, and mix until combined. Add the Greek yogurt, vanilla extract, and the 3 teaspoons of orange zest. Mix on medium speed until combined, scraping the sides of the bowl. Don't worry if it seems like the butter is separating from the liquids, it will come together when you add the dry ingredients.
- On low speed, gradually add the prepared dry ingredients and mix until evenly combined. Do no over-mix. Add the 2 tablespoons of orange juice and mix a few more times. At this point, the batter should be a bit thick and silky. With a rubber spatula, fold in cranberries until just combined.
- Pour batter over the prepared loaf pan, and even out the top with a rubber spatula. Bake for 50-60 minutes, or until a toothpick inserted in the middle comes out mostly clean (a few crumbs are okay). If the top is browning too quickly, cover loosely with foil. When ready, remove from oven and let it cool for 10 minutes. Then, when it's easier to handle, remove pound cake from pan and let it cool completely on a wire rack.
- Once cooled, make the glaze/icing: Whisk the icing ingredients in a bowl, adding the liquid little by little. Glazes can be finicky when you add the liquid components, so whisk the orange juice and milk gradually until you get the desired thickness.
- Pour or spread the glaze over the cooled pound cake. Enjoy!

- Preheat oven to 350 degrees. Butter and flour two 8 1/2-by-4 1/2-by-2 1/2-inch loaf pans. Line bottoms with parchment or waxed paper. Sift together flour, baking powder, baking soda, and salt in a bowl; set aside. In another bowl, combine 1/4 cup orange juice, buttermilk, and vanilla; set aside.
- Cream butter and 2 cups sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy, about 5 minutes. Reduce mixer speed; add eggs, one at a time, combining well between each addition. Add orange zest; combine well. Add flour and buttermilk mixtures alternately to batter, beginning and ending with flour. Divide batter evenly between pans, smooth tops, and bake until golden brown and a cake tester comes out clean, 50 minutes to 1 hour.
- Meanwhile, combine remaining 1/4 cup orange juice and 1/4 cup sugar in a small saucepan. Cook over low heat until sugar dissolves. Cool cakes 10 minutes; transfer to a cooling rack over a baking tray. Spoon glaze over cakes; cool completely.
- Whisk together confectioners sugar and remaining 2 tablespoons orange juice in a small bowl until smooth. Drizzle over the top of one cake, and serve. Wrap other cake in plastic, and store in the refrigerator until needed.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch fluted tube pan (such as Bundt®).
- Sift flour, baking powder, salt, and baking soda together in a bowl; set aside.
- Beat white sugar and butter together in a large bowl with an electric mixer until light and fluffy, about 3 minutes. Beat in eggs one at a time, then beat in vanilla extract and orange zest. - In a bowl, combine the flour and baking soda together, mix well and set aside
- In another bowl, combine the butter, orange zest and sugar together. Beat well until light and fluffy. Add the eggs and orange juice beat well

I find that it's not easy to remove the cake from the bundt pan because it's a very moist cake unless you butter and flour the pan well, so I prefer using a loaf pan and I think it looks beautiful. If you only want to make one loaf, you can halve the recipe.

- Preheat oven to 350°F/180°C. Grease a 12-cup (10-inch) Bundt pan or two standard loaf pans (either 9 x 13 inch pans or 8½ x 4½ inch pans for taller cakes) and set aside.
- In a medium bowl whisk together flour and baking powder. Set aside.
- In a mixer bowl fitted with whisk attachment, whisk together eggs and sugar on high speed until pale and fluffy, about 5 minutes. On low speed and with the mixer running, add oil slowly until combined. Add orange juice, zest, and vanilla extract and keep whisking slowly until combined. - Cook the orange in water until it starts boiling. When it starts boiling, remove the water, replace it with fresh water and leave it to boil again until the peel become soft enough for blending.
- Leave the orange cool, cut it in smaller pieces, remove the seeds and if there is a lot of white parts in the middle of the orange and under the peel, remove it. If there is a lot of white parts, cake might be bitter.
- When you cut the orange into small pieces, blend it in a blender or with immersion blender until you get it completely mashed.
- Preheat the oven to 170 C/340 F.
- Combine almond meal with whey protein, sweetener and baking powder.
- Add eggs and softened butter and stir.
- Add mashed cooked orange, stir or mix until everything combined.
