- Place chicken in the bottom of a slow cooker. Sprinkle with chili powder, garlic powder, cumin, and onion powder. Top evenly with salsa and green chile peppers.
- Cook on Low until chicken breasts are very tender, 6 to 8 hours. Shred chicken breast with 2 forks.

Steps:
- Place first four ingredients in crock pot.
- Cook on low 6-8 hours.
- 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
- To serve, use chicken mixture as filling inside tortillas.
- Add desired condiments.
EASY 2-INGREDIENT SALSA CROCK POT CHICKEN
Steps:
- Gather the ingredients.
- Pat the chicken thighs dry with a paper towel.
- Place one layer of chicken thighs in a 3- to 4-quart crock pot and optionally season them with salt and pepper. (If your salsa is exceptionally salty, this shouldn't be necessary.)
- Pour some of the salsa over the chicken and repeat layering chicken and salsa until you end with salsa on top. Or you can cube the chicken, mix it with the salsa and place it in the crock pot.
- Cover and cook on low for 6 to 8 hours or until the chicken is tender and thoroughly cooked to 165 F. Serve over rice and garnished with sliced scallion, if desired.

- Spread onion rings into the bottom of a slow cooker crock. Place chicken onto onion layer with breast-side facing down. Pour salsa over the chicken.
- Cook on High until no longer pink at the bone and the juices run clear, about 5 hours. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (74 degrees C).
- Remove the chicken from slow cooker, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before cutting.

SALSA CHICKEN IN THE CROCK POT
We went on a trip over Labor Day with some friends of ours and they made this for dinner one night. I made it again the next weekend for our big family dinner we have once a month. I received compliments from everyone! Try it, it is so easy. These are the measurements I used. There were 6 adults (we each ate at least 2) and 3 kids (they ate maybe 1 1/2 between them) and we had tons of extras. Next time I will cut it not quite in half for that size of a group. My servings and yields are just estimates because we had so much left over-hard to gauge. I used thawed chicken when I made it.

- In the crock pot, place the chicken breasts and the salsa on top. Heat on high for several hours (mine took about 4 1/2 to 5 hours).
- About 15-20 minutes before serving, shred the chicken with a fork and add the beans and corn, mixing to combine. Continue cooking until the beans and corn are warmed through.
- Serve on flour tortillas with whatever garnishes you want to add.
- Eat like a burrito. Enjoy!
