SOUTH-OF-THE-BORDER PIZZA
When we moved from Santa Barbara, California to Alaska 25 years ago, my friends gave me copies of all their special Mexican recipes. This easy-to-assemble entree remains one of our favorites. -Eileen Becker of Homer, Alaska

- Coat two 12-in. pizza pans with cooking spray; sprinkle with cornmeal. Divide the bread dough in half; roll each portion into a 12-in. circle. , Transfer to prepared pans. Build up edges slightly; prick dough thoroughly with a fork. Bake at 425° for 12 minutes or until lightly browned., Meanwhile, in a large skillet, cook the beef, onion, yellow pepper and garlic over medium heat until meat is no longer pink; drain. Stir in refried beans, salsa, chilies and chili powder; heat through. , Spread over the crusts; sprinkle with cheese. Bake 6-7 minutes longer or until cheese is melted. Top with tomatoes and lettuce; serve immediately.

EASY BUBBLE PIZZA
This throw together dish has been a lifesaver; working full-time and taking care of my disabled fiance doesn't leave much time for cooking. He loves this, I love it, and the kids love it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray; place biscuit dough pieces into the prepared baking dish to cover the base of the dish.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease, leaving meat in the skillet. Add pasta sauce to beef and stir to combine. Pour sauce mixture over biscuit pieces to cover completely. Sprinkle mozzarella cheese and Cheddar cheese over the top.
- Bake in the preheated oven until cheese is bubbling and biscuits are cooked through, 30 to 35 minutes.

BUBBLE PIZZA

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in pizza sauce. Cut each biscuit into quarters; place in a greased 13x9-in. baking dish. Top with the beef mixture. , Bake, uncovered, at 400° for 20 minutes. Sprinkle with cheeses. Bake until cheese is melted, 5-10 minutes longer. Let stand for 5 minutes before serving.

BUBBLE PIZZA
This is my granddaughter's most requested meal when she comes to visit. It's a meal in itself, but a salad would go nice with it. Have fun experimenting with your favorite pizza toppings.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish. Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in pepperoni, and cook until browned. Drain excess fat. Stir in pizza sauce. Remove from heat, and set aside.
- Cut biscuits into quarters, and place in the bottom of baking dish. Spread meat mixture evenly over the biscuits. Sprinkle top with onion, olives and mushrooms.
- Bake uncovered in preheated oven for 20 to 25 minutes. Sprinkle top with mozzarella and Cheddar cheese. Bake an additional 5 to 10 minutes, until cheese is melted. Let stand 10 minutes before serving.

EASY SOUTH OF THE BORDER WRAPS
The idea came from ... Taco Bell, rice and beans in a tortilla. Friends were coming over and we wanted Mexican so I decided I could probably make it cheaper than taco bell. Bought some cheese and sour cream and presto. Well, mine is a bit different but it turned out really good. It was the start of my clean out the pantry, fridge, and freezer couple of weeks so this was a perfect dish for that. Now, I added 1 very small diced chicken breast to the mix for 4 of the wraps, and the other 4 wraps were just the beans and rice - but either way, they were great. One pan ... just heat - wrap - and serve. Canned beans, frozen or canned corn, leftover white rice (if you don't have left over 1 bag of the "Boil-in-Bag rice" is about the right amount, or just make a quick cup of rice). A jar of chunky salsa (use your favorite brand), shredded Mexican cheese, and just a few fresh vegetables. Besides, you can really get creative with this dish and add jalapenos, cumin or other spices, onion, olives, different beans, roasted peppers, or green chilies, etc. Just have some fun with it. As far as the chicken goes, 1 leftover cooked chicken breast diced, or 1 cup rotisserie chicken works great; or how about pork or even shrimp. Garnish with some sour cream and serve with a corn chowder or even a spicy tomato soup on the side.

- Filling -- In a large saute pan, add the olive oil and bring to medium heat. Add in the garlic, green pepper and cook just a couple of minutes. Then, add in the scallions, beans, corn, salsa, rice and cilantro. Just cook 4-5 minutes on medium low simmer until heated through. Check for any additional seasoning like salt and pepper if needed.
- Tortillas -- As you are heating up the filling -- heat up the tortillas. I do this as easy as possible. Wrap 4 tortillas in a damp paper towel and microwave for 1 minutes on medium heat. Flip over after 30 seconds. Done.
- Wraps -- Lay each tortilla out flat and add 1/4 cup of the cheese. Then add the bean filling and wrap. I start at one end and roll, then tuck in each side as you finish rolling them up. There is no real right or wrong procedure for this.
- Finish -- After the wraps are finished, I like to add them to a serving platter or dish, cover with the same paper towels you originally heated the tortillas in; and back in the microwave for just another minute on medium heat to melt the cheese and to make sure the tortillas and filling are hot.
- Serve -- Garnish with sour cream on the side; and serve along side a nice bowl or soup or a salad.

EASY SOUTH OF THE BORDER BUBBLE PIZZA
I adapted this dish from a recipe I got from a friend. It is so easy and such a hit. Whenever I take it somewhere I always take copies of the recipe because someone asks for it every time. This recipe makes 8 really filling servings.

Steps:
- Preheat oven to 350°F.
- Brown ground beef in large skillet over medium- high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain.
- Season ground beef with salt, pepper and garlic powder.
- Add enchilada sauce and bring to a boil. Reduce heat and simmer for 5 minutes.
- While sauce is boiling, open biscuit dough and separate. Cut each biscuit into 8 triangle shaped pieces (like cutting a pie).
- Place biscuit dough in a greased 13 x 9 pan.
- Pour sauce mixture over biscuit dough.
- Bake for 25 minutes until biscuits are brown.
- Remove pan from oven and sprinkle with cheese.
- Bake an additional 12 minutes until cheese is melted.
- Allow pizza to cool for 5 minutes.
- To serve, cut into squares and top with your favorite toppings.
