Steps:
- Bring a pot of water to a boil. Add eggs, and cook for 3 minutes. The yolks need to be runny. While the eggs cook, crush the crackers into two coffee mugs with the butter. When the eggs are done, remove from the water, and peel. Place one soft-boiled egg into each cup. Mix into the crackers, and season with salt and pepper.

Steps:
- Bring a small saucepan of water to a boil and slip in the egg gently (prick the fat end if you have an egg pricker).
- Boil for 4 minutes (sea level, 5 minutes a little higher altitude).
- Warm a teacup.
- Remove top of shell& pop the egg into the warm dry cup.
- Chop with a teaspoon, add crumbs and butter.
- Salt& butter to taste, eat with a teaspoon from the cup.

KETO EGG CUPS
These delicious and portable keto-friendly cups are great at room temperature, making them the perfect on-the-go snack or lunch.

- Position an oven rack in the center of the oven and preheat to 400 degrees F.
- Brush 6 standard muffin cups with the butter (the butter will pool on the bottom of the cups, but that's okay). Line each cup with a slice of prosciutto, folding and overlapping so that the entire surface of the cup is covered and no metal is peeking through. Divide the mozzarella evenly among the cups. Repeat with the Parmesan, spinach and roasted red pepper.
- Whisk the eggs and cream in a large measuring cup or small pitcher; add some salt and a few grinds of pepper. Pour the egg mixture in each cup, making sure not to overfill.
- Bake until the eggs are set and wobble only slightly, 10 to 12 minutes (the eggs will continue to cook after they come out). Let cool 5 minutes, then use an offset spatula to loosen the prosciutto from the edges of each cup and transfer to a plate for serving.

SCRAMBLED EGGS IN A CUP
My grandmother passed down this recipe after I had my son. This was one of his very first foods. Its easy to make, easy to clean up and easy to feed. Even the pickiest of toddlers will devour this simple easily digestible meal. After 10 years my son still asks for his eggs to be made this way and can even make them himself. It is still his favorite way to eat his eggs :) Also makes a quick on the go breakfast you can eat in your car. For adults add salt and pepper with your favorite cheese, spices or ketchup.

- * Add all the ingredients into the mug.
- * Whist with a fork.
- * Cook uncovered on high in the microwave for 30 seconds.
- * Remove, stir with the fork and microwave an additional 30 seconds.
- * Allow the mug to stand for 4 minutes to cool and continue to cook. Fluff with a fork and transfer to a cool plate. Make sure the internal temperature is safe before feeding to your toddler. Great for older kids learning how to cook.
- Sometimes you must repeat depending on your microwave and how large the egg is that you used.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 6-cup muffin pan with nonstick spray, making sure the spray coats all sides of the cup.
