MEXICAN WHITE CHEESE DIP/SAUCE
This dip is similar to white cheese sauces served in many Mexican restaurants. The amount of heat can be adjusted by adding your favorite chili pepper or crushed cayenne pepper to taste. As is, it is kid-friendly, quick, and delicious! It can be used as a dip for tortilla chips or a sauce for many Mexican dishes.

- Place cheese, milk, and butter in a medium saucepan over low heat. Cook until cheese has melted, stirring frequently. Stir in green chilies, cumin, garlic powder, onion powder, and cayenne pepper to taste. Add more milk if dip is too thick. Heat through and serve immediately.

- In a medium bowl, mix Monterey Jack cheese, cottage cheese, sour cream, scallions, onion soup mix, hot pepper sauce and worcestershire sauce.
- In a small skillet saute onion and garlic in margarine over medium heat, 3 - 5 min (until transparent). Stir into cheese mixture and chill at least 2 - 4 hours before serving. Serve with tortilla chips.

This is a recipe from a dear friend in WI. She made it one time for our bowling league potluck and I have been hooked since! It is great with tortilla chips as well as Fritos.

- Combine all of the veggies together in a bowl.
- In a separate bowl combine the vinegar and Italian dressing mix, drizzle in the olive oil while stirring.
- Pour dressing on veggies and mix gently to combine.
- Can serve immediately or cover and refrigerate up to 1 hour.
EL AZTECO CHEESE DIP

- Mix the sour cream, cottage cheese and add Worcersterhire sauce, garlic powder, and cumin. Stir.
- Add the vegetables and the Monterey Jack cheese.
