1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1 package (8-1/2 ounces) cornbread/muffin mix
1 large egg
2 tablespoons butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon paprika

Steps:

  • In a large bowl, combine all ingredients. Pour into a greased 11x7-in. baking dish. Bake, uncovered, at 400° for 25-30 minutes or until the top and edges are golden brown.

This is a super speedy dinner I like to make when it is getting late and I haven't cooked yet. Chili, corn chips and cheese are topped with lettuce and tomato. Spice it up with your favorite salsa. Vegetarian chili can be found with the regular chili - it is often labeled as 'fat free'. This recipe can easily be doubled, and cooked in a 9x13 inch baking dish.

6 cups corn tortilla chips
2 cups vegetarian chili with beans
1 cup shredded Cheddar cheese
2 cups shredded lettuce
2 roma (plum) tomatoes, chopped
½ cup salsa
¼ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chips in the bottom of a 9 inch square baking dish. Pour chili straight from the can over the chips. Sprinkle shredded cheese over the top.
  • Bake for 20 to 25 minutes in the preheated oven, until chili is bubbling and cheese is melted. Top with lettuce, tomato, sour cream and salsa in the pan, or after serving (if people are picky).

1 (8 1/2 ounce) box cornbread mix (Jiffy)
1 (8 1/2 ounce) can of sweet creamed corn
1 (8 1/2 ounce) can sweet whole kernel corn, drained
2 eggs
1 cup sour cream
1/2 cup butter, melted
1 cup cheddar cheese

Steps:

  • Mix all ingredients and blend well.
  • Pour into a greased 2 1/2 quart casserole baking dish.
  • Bake at 350 degrees for 45 to 50 minutes or until light brown on top.
  • Note: 1/2 cup of shredded cheddar cheese may be sprinkled on top during last 10 minutes of baking (optional).

Corn casserole is a favorite Thanksgiving side dish. It has a sweet, golden, bready layer and a delicious, creamy corn center. Just how it should be!

2 15 ounce cans creamed corn
1 15 ounce can whole corn (drained)
1 cup soda (or saltine) crackers (crushed)
1/2 cup milk
1/2 cup sugar
3 eggs
3 tablespoons flour
3 tablespoons butter (melted (or bacon grease, see notes above))

Steps:

  • Preheat oven to 350-degrees.
  • Combine all ingredients in a large bowl, mix well.
  • Pour mixture into a greased 9x13 glass baking dish.
  • Bake for 1 - 1 1/2 hours or until cooked through and golden brown on top.
  • Tip: If you like it more bready, bake longer. It will become more like a cornbread. If you like it more like a corn pudding, bake for less time.

  • In a large bowl, stir together all of the ingredients. Transfer the mixture to the prepared dish.
  • Bake for 45-50 minutes, or until lightly browned on top. The casserole is done when the center is set -- but still soft.

1 can whole kernel corn
1 can sweet creamed corn
8 oz sour cream
4 tbsp chopped green onion
1 cup shredded cheddar cheese
1 pkg corn muffin mix
[try adding some chopped jalapenos]

Steps:

  • Melt margarine and mix in with all ingredients in a 9x11 pan. Stir until completely mixed. Bake at 350° for about 40 minutes or until golden brown on top (not jiggly). The inside should be gooey, but not liquid.

Stir together until fully mixed and pour into the prepared baking dish. Spread into an even layer and bake for 18-20 minutes until a toothpick comes out smooth. Keep oven at 400.
  • While the cornbread layer is cooking, bring a large saute pan or medium pot to medium heat and add the ground beef. Use a wooden spoon to break it up into small pieces as it cooks. When the meat is breaking up and almost browned, add the onions and the garlic and stir together. Continue to cook another few minutes until the meat is browned and onions are softened.
  • Add the kidney beans, diced tomatoes, chili powder, salt, and remaining 1 teaspoon of cumin and ¼ teaspoon of cayenne to the meat mixture and stir together until well combined. Reduce the heat to low and simmer, uncovered, for about 5 minutes.
