This elegant appetizer features a creamy blue cheese and apple spread inside crunchy endive leaves. You can use pears instead of apples or use the spread to top crackers.-Katie Fleming, Edmonds, Washington

1 tablespoon lemon juice
1 tablespoon water
1 large red apple, finely chopped
2 celery ribs, finely chopped
3/4 cup crumbled blue cheese
3 tablespoons mayonnaise
4 heads Belgian endive, separated into leaves
1/2 cup chopped hazelnuts, toasted

Steps:

  • In a small bowl, combine lemon juice and water; add apple and toss to coat. Drain and pat dry. , Combine the apple, celery, blue cheese and mayonnaise; spoon 1 tablespoonful onto each endive leaf. Sprinkle with hazelnuts.

I got this recipe from my friend Heather who served it at her New Year's party a few years ago and I have made it many, many times since. This recipe makes enough for 2 large platters so it's perfect when entertaining a crowd.

1 cup crumbled Gorgonzola cheese
1 apple - peeled, cored and finely chopped
3 stalks celery, finely chopped
3 tablespoons mayonnaise
1 tablespoon lemon juice
salt
5 medium heads Belgian endive
1 cup chopped toasted hazelnuts

Steps:

  • Combine Gorgonzola cheese, apple, celery, mayonnaise, and lemon juice in a bowl and season with salt.
  • Separate endives into individual leaves and lay out on a serving platter. Spoon about 1 to 2 teaspoons of Gorgonzola mixture onto each leaf and sprinkle with roasted hazelnuts.
