EVERYTHING BAGEL CRACKERS WITH CREAM CHEESE SPREAD



Everything Bagel Crackers With Cream Cheese Spread image

The ever popular everything bagel flavor in an easy-to-make, delicious crispy cracker.

Provided by Land O'Lakes

Yield 24 servings

Number Of Ingredients 21

Spice Mix
1 tablespoon instant minced onion
3/4 teaspoon poppy seed
1/2 teaspoon kosher salt
1/2 teaspoon minced dried garlic
1/2 teaspoon freeze-dried chives
Crackers
1 cup whole wheat flour
1/2 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup Land O Lakes® Butter softened
1/2 cup buttermilk *
3 tablespoons sesame seed
1 large Land O Lakes® Egg (white only) slightly beaten
1 teaspoon water
Spread
1/4 cup Land O Lakes® Butter softened
4 ounces cream cheese, softened

Steps:

  • Heat oven to 375°F. Lightly grease three baking sheets; set aside.
  • Combine all spice mix ingredients in bowl. Set aside.
  • Combine whole wheat flour, flour, sugar, baking powder, baking soda and salt in bowl. Cut in butter with pastry blender or fork just until mixture resembles coarse crumbs. Add buttermilk; stir just until flour is moistened. Stir in sesame seed.
  • Place dough onto lightly floured surface; knead 3-5 times or until smooth.
  • Divide dough into thirds. Roll out dough, one-third at a time, on lightly floured surface to 10 1/2x8-inch rectangle. Transfer to prepared baking sheet. Cut each dough into 3 1/2x2-inch rectangles, using fluted pastry cutter. (Do not separate.) Repeat with remaining dough.
  • Beat egg white and water in bowl with whisk. Brush top of dough, using pastry brush. Sprinkle one-third spice mix onto each dough. Prick each rectangle several times with fork.
  • Bake 10-12 minutes or until golden brown. Cool completely. Break along score marks.
  • Combine all spread ingredients in bowl; mix well. Serve at room temperature with crackers. Store refrigerated.

Number Of Ingredients 7

8 ounces white Cheddar, shredded
1 cup all-purpose flour, plus more for dusting
1 tablespoon everything bagel seasoning
A good pinch of kosher salt
A few turns of black pepper
4 tablespoons unsalted butter, cold and cubed
2 to 4 tablespoons cold water

Steps:

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Place the cheese, flour, everything bagel seasoning, salt and pepper in a food processor and pulse until combined. Add the butter and pulse until the mixture turns to small pea-size pieces. Continue pulsing and add the water, 1 tablespoon at a time, until the mixture resembles couscous and sticks together when you squeeze a small amount in your hand. Turn it onto a lightly floured surface and use your hands to work the mixture together into a ball of dough. Roll it out to 1/4 inch thickness and then cut out 1 1/2-inch squares. Place them 1 1/2 inches apart on your baking sheets, sprinkle with a bit more salt if you'd like and bake until they're lightly browned, about 20 minutes.

5 ounces lox or smoked salmon, cut into bite-sized pieces

Steps:

  • To make schmear, combine cream cheese, sun dried tomatoes, capers, red onion, garlic, and lemon juice in a bowl; stir well to combine.
  • Cover and refrigerate for 1 hour (or longer) so flavors can meld.
  • To prepare, spread 1-1/2 tsp. schmear on RITZ Everything Cracker and top with cucumber half and piece of smoked salmon.
