2 cups buttermilk
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
2 teaspoons plus 1 tablespoon kosher salt
One 2 1/2- to 4-pound fryer chicken, cut into 8 pieces
2 cups all-purpose flour
1 teaspoon baking soda
Vegetable oil, for frying
Maple syrup, warmed, if desired for serving

Steps:

  • Stir together the buttermilk, paprika, cayenne and 2 teaspoons of the salt in a large bowl. Add the chicken pieces and submerge them to coat. Allow to sit for at least 30 minutes but ideally as long as possible (up to 2 hours at room temperature or up to 8 hours refrigerated).
  • Preheat the oven to 375 degrees F; set a rack in a rimmed baking sheet.
  • Combine the flour, baking soda and remaining 1 tablespoon salt in a large bowl. Remove the chicken from the soak mixture and add to the flour mixture, turning to coat. Remove, dip again in the soak mixture and then again in the flour mixture.
  • Heat 1 1/2 inches of oil in a very large cast-iron skillet over medium-high heat. When hot, shallow-fry the chicken in batches, turning once, until golden brown and an instant-read thermometer inserted into the thickest part (avoid the bone) registers 165 degrees F, around 15 minutes per side. Transfer the chicken to the prepared baking sheet and place in the oven to finish cooking through if necessary. Serve with warmed maple syrup if desired for dipping.

1-3/4 cups all-purpose flour
1 tablespoon dried thyme
1 tablespoon paprika
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon pepper
1 large egg
1/3 cup 2% milk
2 tablespoons lemon juice
1 broiler/fryer chicken (3 to 4 pounds), cut up
Oil for deep-fat frying

Steps:

  • In a shallow bowl, mix the first 6 ingredients. In a separate shallow bowl, whisk egg, milk and lemon juice until blended. Dip chicken in flour mixture to coat all sides; shake off excess. Dip in egg mixture, then again in flour mixture., In an electric skillet or deep fryer, heat oil to 375°. Fry chicken, a few pieces at a time, 6-10 minutes on each side or until skin is golden brown and juices run clear. Drain on paper towels.

Every self respecting Southern lady must have the perfect recipe for fried chicken and I claim this one. I found it in the cookbook named Square Table, A Collection of Recipes from Oxford, Mississippi. The cooking time includes marinating in a brine overnight.

1 chicken, cut up
salt
2 eggs
1 cup buttermilk
2 cups flour
salt and pepper
vegetable oil

Steps:

  • Rinse chicken and place in a large baking dish or ziploc bag.
  • Cover with water and sprinkle with salt.(approx. 1 TBS per 3 lbs of chicken).
  • Refrigerate overnight.
  • Drain, rinse, and pat dry.
  • In a shallow bowl, beat eggs with buttermilk.
  • In a separate shallow bowl, combine flour with salt and pepper to taste. (Here is where I either add just salt and lots of pepper, or I use Emeril's Creole Seasonings, from this site).
  • Drain chicken pieces and dredge in egg mixture, then flour mixture.
  • In a heavy large skillet over high heat, pour enough oil to cover chicken.
  • Heat until flour sprinkled in the pan causes grease to splatter.
  • Turn heat to medium.
  • Add chicken, and fry chicken, uncovered, until brown on one side, 5-8 minutes.
  • Turn chicken to brown on the other side. Larger pieces will take longer.
  • Remove and drain on paper towels.

2 tablespoons granulated garlic
2 tablespoons granulated onion
2 tablespoons kosher salt, plus additional for seasoning
2 tablespoons freshly ground black pepper
1 tablespoon cayenne
1 tablespoon paprika
2 (3 1/2-pound) whole chickens, cut into 10 pieces each and trimmed of fat
4 cups all-purpose flour

Steps:

  • In a large skillet, add canola oil over medium heat.
  • In a small bowl, mix together all spices. Use 1/2 of mix to season chicken. Let seasoned chicken sit at room temperature for 15 minutes.
  • In a large bowl, add flour and remaining seasoning mix. Toss chicken with seasoned flour and add to hot oil, 1 piece at a time. Cover pan with foil. Remove foil after 8 to 10 minutes and flip chicken. Cook until the chicken is golden brown. Remove from fryer to a paper towel-lined sheet tray. Season with salt, if desired, and serve.

1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons lemon zest, about 1 lemon
8 bones in chicken pieces, (4 drumsticks and 4 thighs)
6 cups canola oil, for frying
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 ½ teaspoons kosher salt, plus more to taste
1 cup buttermilk
2 large egg whites
2 tablespoons vodka

Steps:

  • Dry brine the chicken: In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and lemon zest.
  • Pat the chicken pieces dry with a paper towel and season with the salt mixture, evenly coating each piece.
  • Line a large resealable container with paper towels and add the seasoned chicken. Refrigerate uncovered for at least 4 hours, preferably overnight.
  • 30 minutes before frying, remove the chicken from the refrigerator to bring to room temperature.
  • Add the canola oil to a large Dutch oven and heat over medium heat until the temperature reaches 350°F (180°C). Place a wire rack over a rimmed baking sheet and set nearby.
  • In a large bowl, whisk together the flour, baking powder, onion powder, garlic powder, and salt.
  • In a separate large bowl, whisk together the buttermilk, egg whites, and vodka.
  • Working with one piece at a time, coat the dry-brined chicken in the flour mixture, then in the buttermilk mixture, then again in the flour, shaking off any excess.
  • Add 2-3 pieces of chicken to the hot oil and fry for 7-10 minutes, flipping once, until the internal temperature reaches 165°F (75°C) and the exterior is golden brown and crispy. Remove from oil, transfer to the wire rack, and season with salt. Repeat with the remaining chicken.
