1 pound boneless, skinless chicken breast halves, cut into cubes
2 green and/or red bell peppers, thinly sliced
1 medium onion, thinly sliced
1 teaspoon chili powder
2 cups water
1 (5.7 ounce) package Knorr® Rice Sides™ - Cheddar Broccoli

Steps:

  • Melt 1 tablespoon Spread in 12-inch nonstick skillet over medium-high heat and cook chicken, stirring frequently, 5 minutes or until chicken is thoroughly cooked. Remove chicken and set aside.
  • Melt remaining 1 tablespoon Spread in same skillet and cook green peppers, onion and chili powder, stirring occasionally, 5 minutes or until vegetables are crisp-tender. Stir in water and Knorr® Rice Sides™ - Cheddar Broccoli and bring to a boil over high heat. Reduce heat to low and simmer covered 7 minutes or until rice is tender.
  • Return chicken to skillet; heat through. Serve, if desired, with warmed flour tortillas, lime wedges, sour cream and finely chopped fresh cilantro.

4 tablespoons minced fresh cilantro, divided
1 tablespoon plus 2 teaspoons olive oil, divided
3 teaspoons Caribbean jerk seasoning
1/8 teaspoon chili powder
1/8 teaspoon ground cumin
1 cup fat-free sour cream
1 large onion, halved and thinly sliced
1 medium sweet red pepper, cut into thin strips
1 medium green pepper, cut into thin strips
8 flour tortillas (6 inches), warmed
1/2 cup salsa

Steps:

  • In a large bowl, toss shrimp with 2 tablespoons cilantro, 1 tablespoon oil and spices; let stand 10 minutes. Meanwhile, in a small bowl, mix sour cream and remaining cilantro., In a large nonstick skillet coated with cooking spray, heat 1 teaspoon oil over medium-high heat. Add onion and peppers; cook and stir until crisp-tender. Remove from pan., In same pan, heat remaining oil over medium-high heat. Add shrimp; cook and stir until shrimp turn pink. 1 1/4 lbs medium shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pure chile powder
1/2 teaspoon chopped oregano
1/4 teaspoon garlic powder
1 lime, juice of
8 -12 flour tortillas or 8 -12 soft corn tortillas, warmed
2 tablespoons vegetable oil
6 green onions, cut into thirds
2 green bell peppers, cut into 1/3 inch strips
sour cream
chopped fresh cilantro
minced red onion

Steps:

  • Add shrimp, salt, cumin, chile powder, oregano, garlic, lime juice to a large bowl or heavy duty zip-top plastic bag.
  • Toss until spices are distributed and shrimp is well coated.
  • Let marinate for 10 minutes.
  • Heat oil in a large skillet (cast-iron is best).
  • Add the green onions and peppers; cook and stir occasionally 2 minutes or until slightly softened.
  • Add the shrimp and marinade; cook and stir constantly about 3 minutes or until the shrimp are pink.
  • Spoon shrimp and vegetables into warmed tortillas; garnish with sour cream, cilantro and onion if desired.
  • Fold up and eat.

1 cup white rice
5 teaspoons fajita seasoning mix, divided (store-bought or homemade)
2 tablespoons flour
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
1 small onion, halved and thinly sliced
1 sweet red pepper, halved and sliced into strips
1/4 cup dry white wine (such as Chardonnay)
1/2 cup seafood stock (can sub chicken stock)
juice of one lime
1 cup chopped fresh pineapple (okay to use canned)
1 tablespoon unsalted butter
3 tablespoons chopped cilantro

Steps:

  • Cook rice according to package directions, adding 1 1/2 teaspoons fajita seasoning mix to cooking water. Set aside and keep warm.
  • In a small bowl, mix together flour and remaining fajita seasoning mix. Pour over shrimp, toss to coat and set aside.
  • Heat oil in a large saute pan over medium heat. Add onion and pepper and cook for about 10 minutes or until soft and slightly browned.
  • Add wine and reduce by half. Add stock and reduce by half. Add lime juice and cook for 2 minutes.
  • Add shrimp and pineapple and cook about 4 minutes, stirring to coat. Add butter and cook another 2 minutes. Sauce should be thickened slightly and shrimp should be done. Stir in cilantro.
  • Divide rice between four bowls and add shrimp and vegetables.

Steps:

Steps:
