FALAFEL WRAPS
These tasty veggie wraps can be easily adapted for vegans by swapping the plain yoghurt for a dairy-free alternative. Packed with crunchy veg, they are a healthy choice for lunch or a light dinner. Each serving provides 390 kcal, 14.5g protein, 54g carbohydrate (of which 8g sugars), 10.5g fat (of which 3g saturates), 9g fibre and 1.7g salt.

Steps:
- Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper.
- To make the falafel, put all the falafel ingredients in a food processor. Season and blend until fairly smooth. Divide the mixture into 12 balls or patties (using wet hands so that they don't stick). Spread the falafels over the prepared tray and bake for 12-15 minutes, or until golden-brown and crisp.
- To assemble the wraps, mix together the yoghurt, lemon juice and harissa in a small bowl.
- Warm the wraps in a large pan over a medium heat for 1-2 minutes, then spread a large spoonful of yoghurt mixture onto the wraps. Divide the cucumber, carrot, gherkins and lettuce between the wraps and top each with three falafels. Wrap up and serve.

- How to make Falafel-Wash and soak the chickpeas in water overnight. On the next day wash this soaked chickpeas in freshwater and drain all the water
- Take the chickpeas along with 1 roughly chopped medium-sized onion, 4-5 garlic cloves, 4 green chilies, 1 teaspoon cumin seeds, a handful of coriander leaves
- Coarsely grind this mixture. Don't make too smooth or too coarse. No need to add water while grinding
- Transfer mixture in a bowl and add 1 teaspoon coriander powder, ½ teaspoon black paper powder, and salt to taste. Mix all the ingredients very well
- Now add 3 teaspoons all-purpose flour (maida) and mix well. Additionally, add 2 tablespoons of hot oil in it. It helps to make falafel crispy
- Heat the pan and add oil for deep frying
- Wet your hand with water and take a small portion of the falafel batter and make patty shape falafel. Or you can make falafel balls also. Deep-fry the falafel in hot oil on a medium flame
- When it looks golden from one side turn the falafel and fry until golden on both sides
- Make all the falafel and keep aside. You can eat falafel as it is with any dipping sauce or tomato chutney or with mayonnaise
- How to make Wheat Flour Tortilla-In a mixing bowl or plate, add 1½ bowl wheat flour (atta), ½ bowl all-purpose flour (maida), 1 teaspoon oil, and ½ teaspoon of salt simultaneously
- Mix all ingredients and make a soft dough by adding water. Also, grease the dough with 1 teaspoon oil. Cover the dough and keep aside for 10 to 15 minutes
- Now take a small ball sized dough, and dust with wheat flour
- Further, using a rolling pin roll it in round shape tortilla
- Heat the griddle/ Tawa and place the tortilla on it and cook for a couple of minutes
- Flip the tortilla and cook until the golden spot appears on the base. When tortilla is cooked, remove it from griddle/Tawa. Similarly, cook all tortilla and keep aside
- How to make Wrap Dressing- In other bowl take 1 cup thinly sliced onion, 1 cup thinly sliced tomato,3-4 teaspoon coriander leaves, and 1 teaspoon lemon juice. Mix all the ingredients gently
- Making Falafel Wrap-Take a single tortilla and spread 2 to 3 teaspoon of Mayonnaise on it and add onion tomato dressing at the center of the wrap
- Now place 3 to 4 falafel on it and add 1 teaspoon tomato sauce on top of the falafel
- Carefully roll the tortilla over falafel and our falafel wrap is ready to serve. Enjoy your falafel wrap with sauce or creamy mayonnaise.

- For the tahini sauce, mix together all the ingredients with some seasoning in a small bowl.
- Warm the flatbread in a dry frying pan - around 30 seconds on each side. Spoon the tahini sauce onto the flatbread and top with the falafel and avocado, then scatter with the herbs, squeeze over the lime juice and add the chilli sauce. Roll up and enjoy.

- In a grinder, add boiled chickpeas, chopped garlic, chopped parsley, cumin powder, salt and pepper as per your taste. Grind the mixture well to form a coarse paste. Now, make small equal sized balls from this paste and keep them aside for a while.
