FESTIVE GOAT CHEESE



Festive Goat Cheese image

Number Of Ingredients 5

Two 4-ounce packages fresh goat cheese
3 tablespoons finely chopped fresh dill
1 1/2 tablespoons finely chopped dried cranberries
1 1/2 tablespoons finely chopped skinned pistachios
Crackers, for serving

Steps:

  • Put the packages of goat cheese in the freezer to harden slightly, about 15 minutes.
  • Spread the dill out on a cutting board to dry for a few minutes. Mix together the cranberries and pistachios on another part of the cutting board.
  • Remove the cheese logs from the freezer and take them out of the package. Gently roll one log over the dill, coating it almost completely. Do the same with the second log, rolling it in the cranberries and pistachios. Wrap the logs in plastic wrap and chill until time to serve.
  • Serve with crackers.

¼ cup butter or margarine, softened
2 tablespoons McCormick® Freeze-Dried Chives
2 teaspoons McCormick® Parsley Flakes
1 teaspoon McCormick® California Style Blend Garlic Pepper
½ teaspoon McCormick® Dill Weed
¼ teaspoon McCormick® Thyme Leaves
½ red bell pepper, chopped

Steps:

  • Beat together cream cheese and butter until fluffy with an electric mixer. Add remaining ingredients except red bell pepper; beat well.
  • Place a piece of plastic wrap on a baking sheet. Spoon cheese mixture onto plastic wrap to form a candy cane shape, log or ball. Fold up plastic wrap over cheese to encase. Refrigerate until cheese is firm, about 4 hours or overnight.
  • Unwrap cheese mixture. Place on serving plate. Smooth entire shape with spatula or knife. Decorate with bell pepper. May be covered and refrigerated overnight.

24 sprigs fresh rosemary
12 ounces marinated mozzarella balls, drained
½ cup pitted Castelvetrano olives, rinsed and dried
¼ cup pitted Kalamata olives, rinsed and drained
¼ cup sugar plum tomatoes
toothpicks

Steps:

  • Cut rosemary sprigs and arrange into a 10-inch wreath. Start by placing 1 sprig at a 45-degree angle with the tip facing outwards. Continue adding sprigs in the same direction until you have formed a full circle.
  • Arrange clusters of mozzarella balls, olives, and tomatoes over the rosemary. Serve with toothpicks on the side.
