My family loves these big old-fashioned cookies. They're crisp, yet still chewy in the center, and the cinnamon makes them a little different from typical oatmeal cookies.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups quick-cooking oats

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda, cinnamon, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats. , Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

Applesauce oatmeal cookies are packed with cinnamon spice, raisins, and chopped pecans in every bite for a wonderful flavor combination you're going to love. Deliciously soft and chewy while completely irresistible.

1 cup granulated sugar
1 cup applesauce
½ cup butter
1 egg
2 cups flour
1 cup quick oats
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
¼ tsp salt
½ cup raisins
½ cup chopped pecans

Steps:

  • Preheat oven to 375°F. Line a baking tray with parchment paper and set aside.
  • In a large mixing bowl, whisk sugar, applesauce & butter for 2 minutes. Add in the egg and mix again.
  • Combine dry ingredients in a separate bowl and whisk together until well combined.
  • Add dry ingredients into butter mixture, mixing as you add. Whisk until a soft dough forms.
  • Stir in raisins and pecans.
  • Use a medium cookie scoop to measure out 1.5 TBSP portions of dough. Place on baking tray. Bake 11-14 minutes. Do not overcook. Cool cookies on a cooling rack. Enjoy!

⅓ cup butter, softened
⅔ cup packed brown sugar
½ teaspoon ground cinnamon
¼ teaspoon baking soda
1 egg
½ cup applesauce
1 ¼ cups all-purpose flour
1 ¼ cups rolled oats

Steps:

  • In bowl beat butter till creamy. Add brown sugar, cinnamon, and baking soda. Stir until combined. Mix in applesauce and egg. Add flour, a little at a time. Stir in oats.
  • Drop dough onto ungreased cookie sheets. Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until lightly browned. Enjoy!

This is a healthier cookie but is still delicious! From one of my favourite cookbooks, "One Smart Cookie", by Julie Van Rosendaal. Dough needs an hour to chill before rolling out.

1/4 cup stick butter or 1/4 cup margarine, softened
1 1/4 cups packed brown sugar
1/4 cup applesauce
1 large egg
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • In a large bowl, beat margarine, brown sugar, applesauce and egg until smooth.
  • In a medium bowl, combine flour, baking powder, cinnamon and salt. Add to the applesauce mixture, stirring by hand just until you have a soft dough. Divide the dough in half, wrap each half in plastic and refrigerate for at least an hour or until well chilled.
  • When ready to bake, preheat oven to 375 degrees. Roll dough 1/8 inch thick between two sheets of waxed paper. Cut with a 2 1/2 inch cookie cutter or glass rim, and place 1 inch apart on a cookie sheet that has been lightly sprayed with nonstick spray.
  • Bake for 10 - 12 minutes, until edges are golden. Bake 5 minutes longer for darker golden, crispier cookies. Transfer to a wire rack to cool.

  • In a medium size mixing bowl, combine the oats, applesauce, cinnamon, mix well to combine. Prepare the apple, letting the mixture set a few minutes. Add the apple and mix again.
  • Using a tablespoon measurer, scoop out well-rounded mounds of the mixture, making sure to gently pack it with your fingers, place on cookie sheet. If these aren’t packed well enough they may have a tendency to fall apart. Sprinkle the top of each cookie with sugar, this last step is optional.

  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Whisk the oats, flour, baking soda, salt, cinnamon, and apple pie spice (if using) together in a large bowl.
  • Whisk the butter, applesauce, brown sugar, and white sugar together until combined. Then whisk in the egg and vanilla. Pour the wet ingredients into the dry ingredients and whisk until just combined. Fold in the apples and walnuts. The cookie dough will be thick and sticky.
