FIESTA CROCK POT CHICKEN CASSEROLE

Steps:

• Heat your oil in a skillet over medium high heat and cook your chicken pieces with your onion and garlic salt and drain
• Combine your cooked chicken, black beans, salsa, garlic powder, soup, tomatoes and 1/2 cup of shredded cheese
• Spread your mixture in a lightly greased 6 quart slow cooker
• Top with remaining cheese
• Cover and cook on low for 3-4 hours or high for 1-2 hours, turning your insert halfway through if your slow cooker does not cook evenly
• Serve hot over a bed of crushed Doritos, if desired

CROCK POT CREAMY MEXICAN CHICKEN (AKA FIESTA CHICKEN)

Steps:

• Add all ingredients to crock pot EXCEPT cream cheese & yes, you can add the chicken breasts frozen.
• Cook on high for 4-6 hours or low for 8 hours.
• Add the package of cream cheese (whole) to top of cooking chicken mixture for last 30 minute of cooking.
• Serve over cooked rice or egg noodles with a dollup of sour cream & sprinkles of shredded cheddar if desired.

FIESTA CROCK-POT CHICKEN

Steps:

• Pour tomato soup in bottom of crockpot.
• Place chicken pieces on top of soup.
• Sprinkle chicken pieces with taco seasoning.
• Pour salsa on top of chicken.
• Cover and cook for 8-10 hours.
• 30 minutes before serving, shred chicken and mix well.
• Serve with tossed salad, on floured tortilla if desired and top with sour cream and/or shredded cheese.
