FILIPINO CHICKEN ADOBO (FLAVOUR KAPOW!)
Recipe video above. One of the most amazing Asian chicken thigh recipes I have ever come across. Intense in flavour, but so fast and easy to prepare! Chicken is so tender, it's like it's been slow cooked.

Steps:
- Combine Chicken and Marinade ingredients in a bowl. Marinate for at least 20 minutes, or up to overnight.
- Heat 1 tbsp oil in a skillet over high heat. Remove chicken from marinade (reserve marinade) and place in the pan. Sear both sides until browned - about 1 minute on each side. Do not cook the chicken all the way through.
- Remove chicken skillet and set aside.
- Heat the remaining oil in skillet. Add garlic and onion, cook 1 1/2 minutes.
- Add the reserved marinade, water, sugar and black pepper. Bring it to a simmer then turn heat down to medium high. Simmer 5 minutes.
- Add chicken smooth side down. Simmer uncovered for 20 to 25 minutes (no need to stir), turning chicken at around 15 minutes, until the sauce reduces down to a thick jam-like syrup.
- If the sauce isn't thick enough, remove chicken onto a plate and let the sauce simmer by itself - it will thicken much quicker - then return chicken to the skillet to coat in the glaze.
- Coat chicken in glaze then serve over rice. Pictured in post as a healthy dinner plate (415 calories) with cauliflower rice and Ginger Smashed Cucumbers.

CHICKEN ADOBO
While the recipe is as varied as the 7,101 islands of the archipelago, Adobo is no doubt the national dish of the Philippines. Here's my version, it's very simple yet it's one of the most requested. Let me know what you think. Note: You can substitute Sprite with regular brown sugar if you wish, use about a teaspoon.

Steps:
- Put all ingredients in a (approximately) 5 quart pan.
- Cover and cook on the stove on medium heat for 20 minutes.
- Remove the cover, turn the heat to high and cook for another 5-10 minutes or until the soup is reduced to desired consistency.
- Chop tomatoes and mix all the other salsa ingredients and toss.
- Serve over boiled rice with tomato salsa.

This is my grandmother's recipe from the Philippines. I used to ask my mom to make it all the time, when I learned how, I made it all the time! Its very simple too!

- You can seperate the wings from the drummettes if you prefer.
- Rinse Chicken wings.
- Boil Chicken wings on Med-High in a pot of water just enough to cover them (add more water if needed). Stir occasionally. Remember to spoon out the fat that rises to the top (Optional). Boil until fully cooked (about 20 mins).
- Add all the ingredients and bring to a boil.
- When boiling, lower heat and let simmer for about 10-15 mins.
- Serve with white rice.

CHICKEN ADOBO

Steps:
- In a large mixing bowl combine thawed chicken, water and salt.
- Allow chicken to soak several minutes while preparing the other ingredients.
- Just before adding to frying pan, drain on paper towels.
- In a medium saucepan combine water, vinegar, soy sauce, bay leaves and pepper.
- Heat on medium low setting, covered, about 15 minutes.
- In a 12" skillet or chicken fryer combine oil and sliced garlic over medium low heat.
- Cook for 5 minutes, stirring occasionally.
- Drain chicken pieces and add, skin side down, to garlic oil, increasing heat to medium high.
- Cook 5 minutes per side.
- Reduce heat to simmer and pour vinegar-soy mixture over chicken.
- If finishing adobo in skillet, partially cover pan and continue cooking, turning occasionally for 30-40 minutes, or until sauce is reduced by half.
- Alternate Slow Cooking Method: After browning chicken, place in 3 or 4 quart slow cooker, on low setting.
- Pour vinegar-soy mixture over top, and cook 2 hours, covered.
- Remove cover, increase setting to high and finish cooking an additional 1 hour.
- Variations May substitute 1 1/2 pounds either cubed pork or beef for the chicken.
- Brown 1" cubes on all sides a total of 5 minutes, then proceed as above.
- Stew meat works well here.
- May use one, (1 to 1 1/2 pound), package boneless, skinless chicken thighs or breasts in place of the regular chicken thighs.
- May replace one cup of water in the vinegar-soy mix with same amount of coconut milk.
- Proceed as above.
- *Discard bay leaves before serving.
