Steps:

  • In a blender, whip egg yolks, agave and salt on medium for 1-2 minutes.
  • Add grapeseed oil and mashed banana and blend for another minute or two.
  • Blend in cocoa powder.
  • Grease a 9-inch springform pan and pour batter into pan.

8 ounces 70% bittersweet chocolate, finely chopped
12 tablespoons cold unsalted butter, cut into cubes
4 large eggs
½ cup granulated sugar
⅛ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F. Adjust a rack to the middle of the oven. Butter six 4-ounce ramekins.
  • Put the chocolate and butter in a metal or glass bowl over barely simmering water. Stir occasionally until melted. Remove from the heat.
  • Place the eggs, sugar, and salt in the bowl of a mixer. Whip at medium-high speed until light and fluffy, about 5 minutes. Reduce speed to low and add the chocolate; mix until combined. Spoon into the prepared ramekins and place on a baking sheet.
  • Bake for about 10 minutes or until the edges are set but the center is underdone. Let cool 3 minutes before serving.

⅓ cup honey
3 tablespoons vegetable oil
3 eggs, separated
⅓ cup chopped walnuts
1 teaspoon ground cinnamon, or to taste
1 teaspoon ground nutmeg, or to taste
1 teaspoon ground allspice, or to taste
salt to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place bananas on a baking sheet and prick peels with a fork.
  • Bake bananas in the preheated oven until peels turn black and flesh is very tender and mushy, 15 to 20 minutes. Remove from oven and let cool to room temperature, about 20 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Lightly grease a loaf pan.
  • Split banana peels with a sharp knife and transfer flesh to a large bowl. Add honey and oil; beat with an electric mixer on low speed until combined. Beat in egg yolks 1 at a time. Add walnuts, cinnamon, nutmeg, and allspice to the batter.
  • Beat egg whites with salt in a glass, metal, or ceramic bowl until soft peaks form.
  • Fold beaten egg whites into the batter. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Invert onto a plate and let cool.

3/4 cup sour milk (put 1 tbsp. of vinegar in 3/4 measuring cup, fill with skim milk)

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine with sugar and eggs.
  • Mix in banana and vanilla.
  • Mix flour with remaining dry ingredients.
  • Add flour mixture to margarine mixture in 3 parts, alternately with sour milk.
  • Begin and end with flour.
  • Spread in 2 greased 8" cake pans.
  • Bake in oven about 40 minutes.
  • When cool, frost generously with chocolate butter frosting.
