CRISPY POTATO CRUST

Number Of Ingredients 10

3 Idaho potatoes, peeled and grated
1 teaspoon salt
1 egg, lightly beaten
1 tablespoon unsalted butter
1/2 cup chopped onion
2 cups sliced mushrooms
1 1/2 cups grated Swiss cheese
4 eggs
1 1/2 cups light cream
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F. Heavily oil a 9-inch metal pie pan. Squeeze out excess liquid from grated potatoes and place in large bowl. Mix in salt And egg until well combined. Press potatoes into pie pan and up the sides. If mixture is too sticky, dip fingers in flour. Bake crust for 30 minutes or until it begins to turn golden brown, brushing occasionally with oil.
  • In a medium skillet melt butter over medium heat and cook onion until tender. Stir in the mushrooms and cook until golden brown.
  • Spread grated cheese over bottom of potato crust. Spread out the onion and mushroom mixture over the cheese. In a medium bowl, whisk or beat together with a fork the eggs and the cream. Season mixture with salt and pepper and pour over vegetables and cheese.
  • Reduce oven heat to 375 degrees F and bake for 40 minutes or until firm. Allow quiche to cool for 15 minutes before slicing and serving.

These are Delicious!! They're not the healthiest but because of their yumminess it is a standby to serve with roasted meats and poultry. This recipe came from one of my favorite cookbooks (with my own tweaks) "The New Basics" by Julee Rosso and Sheila Lukins.

3 lbs idaho potatoes (about 6)
1 1/2 cups heavy cream
2 tablespoons butter
1/2 cup finely chopped shallots or 1/2 cup onion
2 teaspoons minced garlic cloves
2 bay leaves
1 1/2 teaspoons finely chopped fresh rosemary leaves
3/4 cup cream cheese, at room temperature
1/2 cup milk
1/2 teaspoon paprika
salt & freshly ground black pepper, to taste
3/4 cup freshly grated parmesan cheese
1/4 cup crushed Ritz crackers or 1/4 cup breadcrumbs
2 tablespoons chopped fresh Italian parsley (flat leaf)

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Oil the bottom of a shallow 2 quart baking dish. Peel and very thinly slice the potatoes. Place them in a mixing bowl and add 3/4 cup of the heavy cream. Toss to mix. Set aside.
  • Melt the butter in a skillet, and add the shallots or onions and garlic. Saute over low heat for 3 - 4 minutes; DO NOT brown.
  • Add the bay leaves and rosemary to the skillet. Whisk in the cream cheese, milk, and remaining 3/4 cup cream. Simmer, whisking constantly, until smooth, 2 - 3 minutes. Then add the paprika and salt and pepper. Discard the bay leaves and pour the mixture over the potatoes; toss gently. Arrange the potato mixture in the prepared baking dish, spreading it out evenly. Sprinkle it first with the Parmesan cheese, and then with the Ritz crackers or bread crumbs. Bake until the potatoes are tender and the top is golden brown and bubbly, 1 - 1 1/4 hours. Sprinkle with the parsley and serve immediately.

I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. 6 potatoes, peeled and cut into chunks
¼ cup butter
¼ cup milk, or as needed
salt and ground black pepper to taste
½ cup shredded American cheese
pastry for a 9 inch double crust pie
2 teaspoons butter, melted
2 teaspoons milk

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with 1/4 cup butter, 1/4 cup milk, salt, and black pepper to make medium-stiff mashed potatoes; stir in the American cheese.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Fit a crust into a 9-inch pie dish, and fill with the potato mixture. Place the top crust on the pie, roll the edges together and crimp with a fork to seal. Stir the melted butter and 2 teaspoons of milk together in a small bowl, and brush the mixture all over the pie crust. Cut several vent holes in the top of the crust.
  • Bake the pie in the preheated oven until the crust is golden brown, about 45 minutes; if the edges are getting too brown, wrap them in aluminum foil.

2 tablespoons butter
1/4 cup shallot, finely chopped (or white of scallion)
3 teaspoons garlic, minced
2 bay leaves
2 teaspoons fresh rosemary, finely chopped
3/4 cup cream cheese, at room temperature
1/2 cup milk
1/2 teaspoon paprika
salt, to taste
pepper, to taste
3/4 cup parmesan cheese, freshly grated
1/4 cup dried breadcrumbs
2 tablespoons fresh parsley, chopped

Steps:
