Steps:
- Hull the fruit, save a dozen whole berries for garnish.
- Liquidize or mash them and pass them through a fine sieve to remove pips.
- Beat in the sugar until dissolved, add water (if using) and strained lemon juice and pour into a freezing container.
- Freeze for 40 minutes.
- Remove and beat with a "silver" or "wooden" spoon and freeze again for 4 hours.
- Serve in tall glasses.
- Garnish with whole berries.

RECETTE DE SORBET AUX FRAMBOISES MAISON - ZESTE

- Mettre les framboises fraîches (500 ml – 2 tasses) et la confiture dans le mélangeur pour les réduire en purée. Passer la purée au chinois pour retirer les pépins.
- Réserver 1 verre de purée à utiliser comme coulis au moment de servir. Ajouter la crème de cassis et réserver au réfrigérateur.
- Mélanger dans un bol le jus de citron, l’eau et le restant de la purée. Mettre au congélateur pendant 3 heures.
- Une fois sortie du congélateur, broyer la préparation dans un mélangeur pour lui donner une texture lisse et souple, soit pendant environ 30 secondes. Puis remettre au congélateur pendant 3 heures.
