FIVE MINUTE ICE CREAM
A fast way to make delicious ice cream without compromising quality. Use any frozen fruit in place of the strawberries. This is a quick recipe to WOW company who drop by.

Steps:
- Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped. With the processor running, slowly pour in the heavy cream until fully incorporated. Serve immediately, or freeze for up to one week.

FRENCH MERINGUE BUTTERCREAM

Yield about 4 pounds of buttercream (enough to ice a 3-tier cake)

Steps:
- Start whipping egg whites slowly in the mixer until foamy. Increase the speed of the mixer and slowly start adding the sugar until all the sugar is incorporated. Once all the sugar is in, increase the speed of the mixer even more and whip until the mixture is shiny and stiff. You now have a meringue. You know when your meringue is done when you pull out the whip, hold it horizontally, and if you have what looks a "sparrow's beak" on the end of the whip.
- Replace the whip, turn the mixer on medium and start adding the butter a bit at a time. Once all the butter is incorporated, turn the mixer on high and let mix; depending on the weather, the buttercream could take anywhere from 5 to 15 minutes to form. You will know when it has formed when you hear the motor of the mixer start to slow down and whine a little bit; also, when you first add the butter, your meringue will break down and look weird and this is what you want. When the buttercream is done, the mixture will be homogeneous, consistent, and tasty.
- Remove the buttercream from the bowl and transfer to an airtight container. Buttercream can be kept at room temperature for a few days or in the refrigerator for a 1 to 2 weeks, but always use warm buttercream when icing a cake. To warm up the buttercream, put it back in the mixer using the whip or the paddle, and apply direct heat with a propane torch you can find at any hardware store.
THE BEST OLD-TIMEY HOMEMADE VANILLA ICE CREAM

Steps:
- Mix all ingredients except whole milk into a one gallon ice cream freezer.
- Add whole milk to reach the top of the fill line on the container.
- Swish the dasher a few times to combine the milk with other ingredients.
- Add crushed ice to the top of the bucket, sprinkling ice cream salt over the layers as you fill the bucket.
- As the ice melts, add more layers of ice and salt.
- Freezer until the freezer stalls and ice cream is ready.

MINT ICE CREAM

- Special Equipment: Mix It In Soft-Serve Ice Cream Maker
- Place milk and sugar in a medium bowl. Use a hand mixer on low speed for about 1 to 2 minutes or a whisk to mix until the sugar is dissolved. Stir in the heavy cream and mint extract. Add food coloring in drops to reach desired color. If not freezing immediately, cover and refrigerate until ready to use.
- Turn on ice cream maker and pour in ingredients. Allow to mix and freeze until desired serving consistency is reached. Begin checking consistency after 12 to 15 minutes of freezing. If ice cream is not thick enough, pour back into the freezer bowl and continue mixing/freezing until desired consistency is reached, checking every few minutes.
CREAMSICLE FREEZE
EXACTLY like the Orange Julius in the mall, without the stomach curdling mixture of acidic orange juice and milk/ice cream.... I also included variations including different fruit, like PEACHES & CREAM, STRAWBERRIES & CREAM, etc. I tried for years to figure out this recipe, beginning at around age 12! I finally got it one day at age 25 and now my 11 year old daughter whips them up for herself and friends after school or for breakfast.

- Add all ingredients into blender and blend on high until no ice chunks are left.
- (My blender makes a god-awful racket, then sound changes once no ice chunks are left) Makes about (2) tall glasses.
- *I don't recommend replacing the powdered creamer with milk, as the acid in the orange juice will curdle the milk!
- Powdered milk may be used in emergency!

EASY, SPECTACULAR FREEZER ICE CREAM - NO MACHINE NEEDED!

Just dense creaminess. And it's super simple to make. If you can operate a hand mixer, you can make this. "Cooking" time is freezing time.

- In a large bowl, mix condensed milk and fruit puree/flavorings thoroughly.
- In a separate bowl, beat chilled whipping cream until stiff peaks form.
- Fold whipping cream into condensed milk mixture, along with any stir-ins (like cookie pieces, fruit chunks, candy, etc.) that you desire.
- Pour into a plastic or metal container (not glass), cover, and freeze for at least 4 hours or overnight. Scoop and enjoy!
- Makes about 1 1/2 pints (3 cups).
- Note on flavorings: Fruit puree or a strong fruit juice (even concentrate) works well, but be sure it's unsweetened or relatively sour or your ice cream will be too sweet. Lemon juice works great, as does margarita mix; top with crushed pretzels when serving for a salty-sweet treat. Or use brewed coffee or tea. If using tea, steep 3 teabags in 1/3 cup of hot water for about 5-7 minutes and press the water out of the teabags when removing them. I just made an excellent chamomile tea ice cream this way; it had a lovely, delicate flavor.
- Another note: I've heard you can substitue Cool Whip for the whipping cream--I'd go with about 1 1/2 to 2 cups--but as I haven't tried it myself, I can't vouch for the results. It would make it lower fat and easier to put together, but the texture might suffer.

- In a large bowl, combine the cookie crumbs and butter. Press into two 13x9-in. dishes. Refrigerate for 30 minutes., In a small saucepan, combine the milk, sugar, butter and chocolate. Cook and stir over medium heat until thickened and bubbly, about 12 minutes. Remove from the heat; cool completely., Spread ice cream over each crust. Spoon cooled chocolate sauce over top; evenly spread to cover. Freeze until firm. Spread with whipped topping. Desserts may be frozen for up to 2 months. Remove from freezer 10 minutes before cutting. Garnish with shaved chocolate.
