CAPTAIN'S CRUNCH FRENCH TOAST



Captain's Crunch French Toast image

Inspired by a recipe I saw on television, I experimented with different combinations and came up with this. This is a delicious and unusual variation on plain old French Toast. Try it, I guarantee you'll love it! Thanks to the Blue Moon Cafe in Baltimore for the inspiration. Not for the diet conscious, but it tastes so good you won't care! Put bread in a warm oven to keep heated until the rest of the bread is done, if needed. Serve with a dollop of butter and warmed pure maple syrup, if desired.

3 large eggs
2 ½ tablespoons white sugar
1 cup heavy cream
½ cup 2% low-fat milk
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ (14 ounce) package brown sugar and butter flavored crispy corn and oat breakfast cereal (such as Cap'n Crunch®), crushed
6 thick slices egg bread (Challah)
2 tablespoons butter

Steps:

  • Beat the eggs and sugar in a bowl until smooth. Pour in the cream, milk, vanilla extract, cinnamon, and nutmeg; whisk until smooth. Pour the crushed cereal into a shallow dish; set aside. Dip the egg bread into the egg mixture two pieces at a time until the egg has been soaked into the center of the slices, about 30 seconds per side. Press the soaked bread into the crushed cereal until coated on both sides. Set the finished slices aside on a piece of waxed paper.
  • Melt the butter in a nonstick skillet over medium-high heat. Cook the French toast in the hot pan until golden on both sides, about 3 minutes per side.

1 loaf challah bread or any tall braided bread
2 1/2 cups tropical or fruity cereal, such as Fruity Pebbles, plus more for garnish
8 ounces cream cheese, softened
2 tablespoons chopped strawberries, plus more for garnish
2 tablespoons chopped blueberries, plus more for garnish
1 cup half-and-half
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon ground cinnamon
2 large eggs, beaten
4 tablespoons salted butter
Whipped cream, for serving
Maple syrup, for serving

Steps:

  • Cut four 2-inch-thick slices of bread from the center of the loaf (save the rest for another use). Using a paring knife, make a small cut through the bottom of each slice of bread going horizontally to create a pocket for the filling.
  • Pour the cereal into a large resealable plastic bag and seal. Using a rolling pin, crush the cereal into pieces; stop before it gets too fine. Pour 2 tablespoons of the crushed cereal into a bowl. Add the cream cheese and chopped strawberries and blueberries and mix.
  • In a shallow baking dish, whisk together the half-and-half, vanilla, cinnamon and eggs.
  • In a large skillet over medium-low heat, melt 1 tablespoon of the butter.
  • Using a spoon, stuff a slice of bread with about 2 tablespoons of the filling. Close the opening and dip into the egg mixture to coat (about 5 seconds on each side). Transfer the bread to the bag filled with cereal and carefully coat each side.
  • Cook the bread in the skillet until toasted on both sides, being careful not to burn it, 3 to 4 minutes per side. Transfer to a serving plate.
  • Stuff, dip, coat and cook the remaining bread slices one at a time, adding an additional tablespoon of butter to the skillet when cooking each batch (see Cook's Note).
  • Serve with whipped cream or maple syrup and garnish with berries and more cereal.

These french toast bites are a crowd pleasure! Make a big pile and serve with strawberries, bananas and maple syrup!

1 loaf brioche toast (cut into 1-inch pieces)
3 eggs
1/2 cup whole milk
1/4 cup half and half
2 tsp vanilla extract
1 tsp cinnamon
1/8 tsp nutmeg
4 tbsp butter
1/4 cup brown sugar
strawberries (bananas, maple syrup and whipped cream for topping!)

Steps:

  • In a large mixing bowl add eggs, milk, half and half, cinnamon, nutmeg, and vanilla extract. Whisk until combined. Add brioche bread and mix until all the bread is soaked in the mixture.
  • In a skillet on medium-high heat melt 2 tbsp butter with 2 tbsp brown sugar. Reduce heat to medium. Add half of the bites. Flip once it caramelizes. Repeat until you have made all of the bites.
