Hibiscus-and-Ginger Iced Tea image

If any drink was made for leisurely back-porch sipping, it's iced tea. Our version is brewed from zesty hibiscus tea, which is made from coppery-red hibiscus leaves and is naturally caffeine free. Ginger syrup and fresh lemon juice add layers of flavor.

Number Of Ingredients 5

1 tablespoon thinly sliced, peeled fresh ginger
3/4 cup sugar
4 hibiscus tea bags
2 tablespoons fresh lemon juice
Lemon wedges, for garnishing

Steps:

  • Put 4 cups water, ginger, and sugar into a medium saucepan. Bring to a boil over medium-high heat, stirring until sugar has dissolved. Remove from heat; add 4 hibiscus tea bags. Cover, and let steep 15 minutes.
  • Pour through a fine sieve into a bowl set in an ice-water bath. Let cool. Stir in 2 tablespoons fresh lemon juice. Serve over crushed ice, and garnish with lemon wedges.

Ginger Hibiscus Tea is a great drink to have during chemo treatment. It combines hibiscus and ginger, a truly heavenly blend. The result is a glorious, naturally ruby red tea rich in vitamin C, beta-carotene and antioxidant flavonoids. Try it poured over ice for a refreshingly different summer drink. Dried hibiscus flowers have a wonderful tart taste that pleasantly neutralizes any bad taste in the mouth from chemo drugs plus hibiscus has the added benefit of lowering high blood pressure. Ginger brings spiciness as it cools the body and aids the digestion. So good.

¼ cup dried roselle flowers (hibiscus) 2-inch piece of ginger, thinly sliced 1 tablespoon honey 6 to 8 cups boiling water

Steps:

  • Put the dried hibiscus flowers and ginger, into a measuring cup or pot big enough to hold 8 cups. Cover with the boiling water, and steep for 5 minutes or until you have the desired strength. The longer you leave it to steep, the stronger and more intense the flavor will be.
  • Strain the tea into a jug or carafe through a fine sieve. It will be a gorgeous dark red. Stir in the agave or honey to taste. Serve hot or poured over ice.

I visited a coffee shop in Hartford on a cold winter day and ordered their honey lemon ginger tea. It was tart, sweet, full of flavor, and warmed me from head to toe. The proprietor was nice enough to give me a rough description of her recipe. After a few tries at home, I came up with this close version.

4 cups water
¾ cup brown sugar
¼ cup grated ginger root
3 tea bags
2 lemons, juiced
3 tablespoons honey

Steps:

  • Stir water, brown sugar, and grated ginger root together in a saucepan; bring to a boil, reduce heat to medium-low, and cook at a simmer for 20 minutes.
  • Remove saucepan from heat and add tea bags; steep tea to desired strength, 3 to 5 minutes. Remove and discard tea bags.
  • Stir lemon juice and honey into the tea; strain into a pitcher.

This tangy infusion was inspired by a combination of Indian, Egyptian, and Costa Rican wisdom for soothing the common cold. Make a pot in the morning when you are not feeling well and drink throughout the day, reheating by the mugful as needed. My husband and I keep these ingredients on hand throughout the winter just because we like it. For children, add a splash of orange juice to cool it down.

¼ teaspoon ground cinnamon

Steps:

  • Place honey, lemon juice, ginger, and cinnamon in a teapot or 4-cup glass measuring beaker with spout. Pour boiling water over mixture and stir well until honey is dissolved. Cover and let steep for 5 minutes. The ginger should sink to the bottom, but may be strained out while pouring into mug.

1 cup light rum (optional)

Steps:

  • In a large heatproof pitcher, combine tea bags, honey, and 5 cups boiling water; let steep 10 minutes. Discard tea bags. Add lime juice, rum (if using), and 3 cups cold water. Refrigerate until cold, at least 1 hour (and up to 1 week). Serve over ice.
