4 tablespoons butter
One 16-ounce bag frozen corn, defrosted
3 tablespoons white sugar or honey
1/3 cup heavy cream
Salt
1/2 teaspoon black pepper

Steps:

  • In a large skillet over medium-high heat, melt 4 tablespoons butter. When butter is foamy add the corn stirring to coat with the butter. Cook stirring frequently for 1 minute. Add sugar or honey and cook for 2 minutes more. Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan. Add salt and pepper. Cook corn until most all of the cream has absorbed about 5 minutes more. Remove add serve hot.

Steps:

  • Cut corn kernels from cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper. Enjoy warm or cold.

1 pound bacon, chopped
1 onion, chopped
2 medium green bell peppers, chopped
2 (16 ounce) packages frozen corn
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown, but still soft. Stir in onion and green bell peppers, and cook until tender, about 10 minutes.
  • Reduce heat to low. Stir corn into skillet, and cook until tender, about 15 minutes. Salt and pepper to taste. Do not drain grease from bacon - that is the secret to the flavor.

Fried Corn - Bev's Style image

For a real treat, when you tire of the corn ON the cob this summer, give my version of Fried Corn a try. It is very easy and takes little time while preparing the rest of the meal. My mom always fixed fried corn this way when I was growing up. She used milk, but the half and half gives it a little richer taste. Trust me, if you try this, you will want to have it again ; )

3 -4 ears fresh white corn or 3 -4 ears corn
4 slices bacon, cut up
1/2-1 cup half-and-half or 1/2-1 cup milk
1/2 cup vidalia onion, chopped (optional)
salt and pepper, to taste

Steps:

  • Fry the cut up bacon in a large cast iron skillet till just crisp.
  • While frying bacon, cut corn kernels off cob.
  • Remove cooked bacon and save for another recipe (I use mine in a tossed salad).
  • Empty all except 4 TBS bacon fat in pan.
  • If using onion, cook in bacon fat for a couple minutes on medium heat.
  • Add corn to skillet and season to taste with salt and pepper; cook and stir on medium heat until just beginning to brown.
  • Add a little half and half (milk; or a combination of both) and continue to cook, stirring, adding more liquid as it begins to evaporate.
  • Add only enough half and half or milk to give it a creamy texture.
  • If using half and half and the consistancy is too thick, add a little milk to thin.
  • Continue cooking on low, stirring every now and then, until corn is tender, maybe 10-15 minutes.
  • Check and adjust seasoning adding more salt and pepper as needed.
  • Serves 4.

4 tablespoons (1/2 stick) butter
1 jalapeno, seeded and finely chopped, optional
4 cups fresh corn kernels (scrape "milk" and any bits of kernels from cob as well)
Salt and freshly ground black pepper

Steps:

  • In a large nonstick skillet, melt the butter over low heat. Add the jalapeno, if using. Add the corn, season with salt and pepper, and stir well. Cover and cook, stirring often, being very careful not to let the corn stick to the skillet, until the corn is heated through, 10 minutes. Serve hot.

Buttery Fried Corn with Bacon image

A perfect holiday side dish. Not for everyday eating as it has both bacon and butter, but let yourself indulge for the special occasion! Use fresh corn if you can, but frozen works okay as well. A nifty way to remove corn from the cob is by cutting a small part off both ends, then cutting the cob in half. vertically. Then turn the cob on it's end and you have a much more stable way to cut the corn off. This recipe is adapted from Paula Deen. Update: I forgot to say that I only simmer it for 5 more minutes, corn doesn't need to be cooked for 15 minutes in my opinion.

12 ears fresh corn, shucked
4 slices thick slab bacon
1/4 cup butter
fresh ground black pepper
salt

Steps:

  • Remove corn from cobs by using a corn grater or knife, and mash the whole kernels a little.
  • Slice bacon into 1-inch pieces. Cook bacon until brown in a large skillet. Remove bacon from skillet and add 1/2 stick butter to bacon grease.
  • Over medium-high heat, pour in the corn. Fry in the grease and butter mixture.
  • Lower the temperature and cook for 5 minutes, then put on simmer until corn is done, 10 to 15 minutes.
  • Add black pepper and salt to taste.
  • If corn seems too dry, add a little milk or water.
