FRIED OYSTERS

Fried Oysters image

Virginia is known for its fresh Chesapeake Bay oysters, and this crispy Deep Fried Oysters recipe is the best way to prepare them!

Provided by Blair Lonergan

Categories     Appetizer     Dinner

Time 30m

Number Of Ingredients 13

1 pint fresh shucked oysters (about 18 oysters total)
Peanut oil, for frying
1 cup buttermilk
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon kosher salt
1 teaspoon Old Bay seasoning
½ teaspoon black pepper
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon minced fresh dill or parsley, optional
1 ½ tablespoons freshly-squeezed lemon juice
Salt and pepper, to taste

Steps:

  • For the Tartar Sauce: Combine all of the ingredients in a small bowl. Cover and refrigerate until ready to use.
  • Heat oil in a deep fryer to 350°F, in a deep cast iron skillet, or in a Dutch oven over medium heat to a depth of about 2-3 inches, until it reaches 350°F. If you don't have a deep-fry thermometer, sprinkle a few drops of water on the hot oil. If it sizzles, the oil is hot enough.
  • Drain the oysters in a colander and pat dry with paper towels. Use a toothpick to poke a small hole in the large round part of each oyster.
  • Put the buttermilk in a shallow dish. In a separate shallow dish, combine the cornmeal, flour, salt, Old Bay seasoning and pepper.
  • Add the oysters to the buttermilk and soak for a few minutes. Remove the oysters from the buttermilk, gently shake off excess liquid, and dredge in cornmeal mixture to coat on all sides. Shake off excess breading and transfer to a wire rack.
  • Working in batches so that you don't overcrowd the pan, fry oysters until golden and crispy, about 2-3 minutes. Drain on paper towels, season with additional salt and pepper (if necessary) while they're still warm, and serve hot with tartar sauce or other dipping sauce.

CHICKEN-FRIED OYSTER SANDWICH

Chicken-Fried Oyster Sandwich image

Provided by Food Network

Categories     main-dish

Time 8h25m

Yield 4 sandwiches

Number Of Ingredients 12

1 cup real mayonnaise
2 heaping tablespoons finely diced salty gherkins
1 tightly packed tablespoon finely chopped capers
Zest of 1 lemon plus juice of 1/2 lemon
1 cup buttermilk
1 tablespoon sriracha chili sauce (more if you're feeling feisty!)
12 jumbo oysters, shucked (8 if they are huge beach oysters)
Vegetable oil, for frying
2 cups all-purpose flour, for dredging
4 sesame-seed hamburger buns
Pinch kosher salt
2 cups finely sliced (chiffonade) romaine lettuce

Steps:

  • For the tartar sauce: Combine the mayonnaise, gherkins, capers, lemon zest and lemon juice and mix well. Refrigerate until needed. The sauce is best when made the day before use.
  • For the fried oyster sandwich: Combine the buttermilk and chili sauce and mix well. Soak the shucked oysters in the mixture and refrigerate, overnight if you can.
  • Preheat the vegetable oil to 350 degrees F. Pour the flour out onto a plate. Gently remove the oysters one by one from the buttermilk, being careful not to tear them, and lay them quickly in the flour. The excess buttermilk will help for the delicious crunchy bits so don't worry about making a mess. Cover the oysters completely with flour, using clean hands, and gently press them down to make sure they are completely coated. Remove from the flour, shaking off the excess, and place them in the fryer. Cook until nicely browned, just past golden (think of your favorite fried chicken).
  • While the oysters are cooking, toast the insides of the buns and set aside. Transfer the oysters to a paper towel-lined plate to drain, and season with the salt.
  • Spread the tartar sauce on both sides of the buns. Place the oysters on the bottom half then top with the shredded romaine. Close them up, roll up your sleeves, crack your favorite brew and dig in!

Time 7h

Yield 4 servings

Number Of Ingredients 27

1 2-inch knob of fresh ginger, peeled and thinly sliced
1/2 cup rice wine vinegar
1/4 cup water
3 tablespoons sugar
1/2 tablespoon salt
Fried Oysters
12 medium-sized oysters, shucked, reserve the shells for plating
4 large egg yolks
2 cups breadcrumbs, preferably panko
2 cups all-purpose flour
1 quart grapeseed or canola oil
Aioli, recipe follows
3 large eggs yolks
1 tablespoon Dijon mustard
Kosher salt
1/2 cup grapeseed or canola oil
1/2 cup extra-virgin oil
2 teaspoons white wine vinegar
1/2 lemon, zest and juice
1 clove garlic, peeled and minced
1 tablespoon Pickled Ginger, recipe follows
1 tablespoon soy sauce
1 2-inch knob fresh ginger, peeled and thinly sliced
1/2 cup rice wine vinegar
1/4 cup water
3 tablespoons sugar
1/2 tablespoon salt

Steps:

  • Pickled Ginger: Combine vinegar, water, sugar, and salt in a small saucepan and bring to boil over medium-high heat. Add sliced ginger to the pan, and immediately remove from heat. Pour into small mixing bowl and allow to cool, 6-8 hours. (Pickled ginger will keep for up to one month in a lidded container in the refrigerator.)
  • Fried Oysters: Heat oil to 375 degrees F. Meanwhile, gently detach oysters from their shells with a spoon; place meat into a small bowl, making sure they are clean of shells. Wash and reserve the shells. Next, whisk egg yolks and a splash of water in a small bowl to create an egg wash.
  • Dredge each oyster in flour; then coat in egg wash, followed by breadcrumbs. Handling carefully, tap off any excess coating. They should be lightly breaded. Fry oysters in 375 degrees F oil, several at a time, for no more than 20-25 seconds. Remove with a slotted spoon and let them drain on a paper towel. The outside should be golden brown while the inside is barely cooked.
  • To serve, place each oyster in a clean, dry shell. Top with a small dollop of aioli and a slivered slice of pickled ginger.
  • In a small bowl, whisk egg yolks, Dijon mustard, and a pitch of salt until smooth and emulsified. Add grapeseed oil very slowly, drop by drop to start, then in a fine drizzle, whisking constantly to emulsify with the yolks. Add olive oil in the same manner. The mixture should thick and emulsified. Add vinegar, lemon juice and zest, and whisk again until doubled in volume. Add the soy sauce and stir to combine; fold in the garlic and pickled ginger. Let sit to let flavors come together, about 1 hour. Taste and season as necessary, perhaps with a bit of pickling liquid. (Can be made up to one week in advance.)
  • Combine vinegar, water, sugar, and salt in a small saucepan and bring to boil over medium-high heat. Add sliced ginger to the pan, and immediately remove from heat. Pour into small mixing bowl and allow to cool, 6-8 hours. (Pickled ginger will keep for up to one month in a lidded container in the refrigerator.)

Deep-fried Oyster Po' Boy Sandwiches with Spicy Remoulade Sauce image

Provided by Sunny Anderson

Categories     main-dish

Time 54m

Yield 4 sandwiches

Number Of Ingredients 23

32 ounces shucked oysters
1 cup plus 1 tablespoon milk
1 tablespoon water
1/4 teaspoon cayenne pepper
2 eggs
1 cup all-purpose flour
1/2 cup cornmeal (recommended: Indian Head)
1/2 teaspoon freshly ground black pepper
Kosher salt
Vegetable oil, for frying
Four 6-inch hoagie loaves
Remoulade Sauce, recipe follows
4 leaves romaine lettuce
1 to 2 lemons
1 1/4 cups mayonnaise
1/4 cup stone-ground mustard
1 clove garlic clove, smashed
1 tablespoon pickle juice
1 tablespoon capers
1 teaspoon prepared horseradish
1/4 teaspoon cayenne pepper
1/4 teaspoon hot paprika
1/2 teaspoon hot sauce (recommended: Frank's Red Hot)

Steps:

  • Drain the oysters and place in a small bowl. Cover with 1 cup milk and let soak for 15 minutes. In a medium bowl, whisk together remaining milk, water, cayenne and eggs. Place the flour, cornmeal, black pepper, and salt into a brown paper bag, close and shake to mix.
  • In a large heavy-bottomed pot, pour enough oil to fill the pan halfway. Heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
  • Drain the oysters from the milk. In batches dip oysters in the egg mixture then drop in the paper bag. Close and shake. Remove to a plate and repeat with the rest of the oysters. When oil is at 360 degrees F, fry oysters in batches. Do not overcrowd. Cook turning once until golden brown and cooked through, about 3 minutes. Remove to a paper towel. Repeat with remaining oysters.
  • To serve, cut sandwich loaves in half horizontally. Slather a generous amount of Spicy Remoulade Sauce on the inside. Place a lettuce leaf inside and fill generously with oysters. Squeeze fresh lemon juice over oysters just before serving.
  • Place all ingredients into a food processor and blend until smooth. Chill until ready to serve.

Fried Oyster Sandwiches with Lemon Aioli image

Crispy fried oysters with creamy lemon aioli.

Provided by Sharon

Categories     Main Course

Time 30m

Number Of Ingredients 13

2 cups vegetable oil
1 egg
2 tbsp. whole milk
2 tsp. tabasco sauce
⅔ cups all purpose flour
⅓ cup fine cornmeal
⅛ tsp. black pepper and kosher salt
24 fresh oysters, shucked and drained
4 hoagie rolls, warmed
1 cup shredded romaine lettuce
1 cup sliced plum tomatoes
¼ cup mayonnaise
1 tbsp. fresh lemon juice

Steps:

  • Begin by heating the oil in a Dutch oven to 365 degrees.
  • While the oil heats, make the Lemon Aioli: Simply mix all the ingredients together in a bowl and chill until serving.
  • Next, prepare a dredging station: In the first bowl, mix together the egg, milk, and tabasco. In the second bowl, mix together the flour, cornmeal, salt, and pepper.
  • Dip the drained and dried oysters in the milk mixture, and then in the flour mixture. Place the coated oysters on a plate.
  • When the oil has reached 365 degrees, fry six oysters at a time, for about two minutes. Turn the oysters so that they get golden brown all over. Drain the cooked oysters on a wire rack over a pan. Let the oil come up to 365 degrees again, and then fry the next six oysters. Repeat until all the oysters are done.
  • Spread some Lemon Aioli on each roll, and add six oysters and some lettuce and tomato.
