DEEP-FRIED OYSTERS WITH ROCKET AND TOMATO DRESSING

Deep-Fried Oysters with Rocket and Tomato Dressing image

I first put these oysters on the menu at Monte's - they were served raw with the tomato dressing. One day we tempuraed them to serve as canapes and they went down so well I thought I'd give you the recipe. When picking the kids for the new restaurant I served these to them as a bit of a taste test and asked for their reaction. They're such an experience to eat, as they're crunchy, soft, sour, sweet and salty. You can serve these as a starter or as canapes.

Yield 4 servings

Number Of Ingredients 13

24 native oysters
3 1/2 ounces (100 grams) all-purpose flour
6 ounces (170 milliliters) cold water
1 egg white, stiffly whisked
1 tablespoon olive oil
1 3/4 pints (1 litre) vegetable oil
2 bags arugula
12 ripe plum tomatoes
2 tablespoons horseradish, creamed or freshly grated
1/4 clove garlic, peeled
2 tablespoons white wine vinegar
Couple drops hot pepper sauce (recommended: Tabasco)
Sea salt and freshly ground black pepper

Steps:

  • Open the oysters and clean the shells or ask your fishmonger to do this for you. To make the batter, whisk the flour with the cold water and fold in the stiffly whisked egg white and 1 tablespoon of olive oil. To make the dressing, whiz the tomatoes in a blender with the horseradish, garlic and vinegar. Add the hot pepper sauce and season with salt and pepper. Tweak the amounts of hot pepper sauce and vinegar to tast e¿ you want it to be hot and tangy. Pass the mixture through a fine sieve to remove any chunky bits. This will give you a nice smooth dressing. Check the seasoning.
  • Heat the vegetable oil in a deep-fat fryer to 350 degrees F (180 degrees C) and fry the arugula in small batches for about 25 seconds until nice and crisp. Remove and place on some kitchen paper. Drop each oyster into the batter, then remove with a spoon and fry for around 2 minutes until crisp and golden. Serve each oyster in its shell on a little fried rocket, drizzled with the tangy tomato dressing.
  • Try this: Place the shells on some cracked ice or a bed of coarse sea salt.

FRIED OYSTERS WITH TARTAR SAUCE

Fried Oysters With Tartar Sauce image

Getting fried oysters from your summer seafood shack is fun, but making them yourself yields something crispy, light and, most significantly, tender. Shuck carefully, bread delicately and fry to golden perfection, then serve with this bright, lively tartar sauce, which gets its spark from cornichons, capers and lemon juice. Eat while hot - whether you're wearing flip flops or polished oxfords, that's up to you.

Time 45m

Yield 24 oysters and 1 pint sauce

Number Of Ingredients 15

1/2 cup all-purpose flour
Kosher salt and finely ground black pepper
24 shucked plump meaty oysters
2 large eggs, well beaten
1 cup panko bread crumbs
Vegetable shortening, preferably Crisco (about 1 1/2 pounds)
1 garlic clove
Kosher salt
2 small shallots
8 cornichons plus 2 tablespoons vinegar from the cornichon jar
2 tablespoons plus 2 teaspoons capers and their brine
1 shy cup mayonnaise, preferably Hellmann's or Real Foods
1/3 cup sour cream
Juice of 1/2 lemon (about 1 1/2 tablespoons)
1 1/2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Prepare the oysters: Season flour with salt and pepper. Dredge each oyster in the flour, then dip in the beaten egg, then coat evenly in the panko.
  • Set breaded oysters on a baking cooling rack, leaving a little room between the oysters so they can dry and set. Refrigerate until ready to fry and serve.
  • Make the sauce: Finely mince garlic with a pinch of salt until sticky and pasty. Mince shallots, cornichons and capers as finely as possible. Add all to a small bowl. Stir in mayonnaise, sour cream, lemon juice, caper brine and cornichon vinegar, and stir well. Add chopped parsley, stir well and season to taste with salt. Refrigerate until ready to serve.
  • Fry the oysters: Melt enough shortening in a deep medium skillet (we love cast iron) over medium for 1 1/2 inches of liquified fat once hot. Increase heat to medium-high. It's ready to fry in when a few crumbs of panko or the tip of a wooden chopstick sizzles actively in the fat.
  • Add the oysters cold from the refrigerator, working in batches of 6 to 8 or as you have room. Fry, making sure to turn them to get both sides, until golden brown, 1 to 2 minutes, depending on size. Remove with a slotted spoon or spider, and let rest on a clean rack while you fry the rest. Season each batch with a little salt while still piping hot, as soon as you pull them from the fat. Serve with tartar sauce.

Fried Oysters Rémoulade image

Yield Makes 2 servings

Number Of Ingredients 10

2 dozen oysters (such as Belon) on the half shell
1/4 cup cornichons or dill pickles
1 cup mayonnaise
3 tablespoons chopped fresh parsley leaves
1 1/2 tablespoons minced shallot
1 1/2 tablespoons tomato paste
1 tablespoon Tabasco sauce
1 tablespoon fresh lemon juice
2 quarts vegetable oil for deep-frying
1/2 cup cornmeal

Steps:

  • Transfer oysters to a bowl and chill, covered. Clean and dry oyster shells. Line a shallow baking pan with a double layer of paper towels.
  • Finely chop cornichons or dill pickles and in a bowl whisk together with remaining rémoulade ingredients and salt to taste until combined well. Transfer rémoulade to a serving bowl.
  • In a 4-quart heavy saucepan heat oil over moderate heat until a deep-fat thermometer registers 375°F.
  • Preheat oven to 200°F.
  • In a blender blend cornmeal 30 seconds, or until it is powdery, and in a bowl season cornmeal with salt. Drain oysters in a colander and dip each in cornmeal to lightly coat, transferring to a plate. Working in batches of 6, fry oysters, until golden, about 2 minutes. With a slotted spoon transfer oysters as fried to baking pan and keep warm in oven. Return oil to 375°F. between batches.
  • Serve oysters on shells with rémoulade.

1 teaspoon dried basil
1 teaspoon granulated garlic
1 teaspoon white pepper
16 medium oysters, shucked, liquid reserved
1/2 cup panko breadcrumbs
1/4 cup cornmeal
1/4 cup flour
2 tablespoons dried basil
2 tablespoons granulated garlic

FRIED OKRA WITH RéMOULADE

Fried Okra With Rémoulade image

"Fresh, never frozen" - that's Joseph J. Boudreaux III's motto when it comes to making the best fried okra. The Tipping Point Coffee co-owner and Houston home cook believes fried okra relies on fresh okra pods and a righteous cornmeal breading. Paired with a creamy rémoulade that's infused with a bit of heat, Mr. Boudreaux's fried okra recipe pays homage to his father, who grows the flowering plant right in his backyard in Texas. It captures all that the South adores about the quintessential summer side: simplicity, ease and plenty of flavor.

Time 40m

Yield 6 to 8 servings

Number Of Ingredients 15

1 cup mayonnaise
1/4 cup ketchup
3 tablespoons Dijon mustard
1 teaspoon Cajun seasoning, preferably Slap Ya Mama
1 teaspoon white white vinegar
1 teaspoon lemon juice
2 quarts canola oil, plus more as needed
2 cups/450 grams buttermilk
2 tablespoons hot sauce, preferably Louisiana Hot Sauce
1 pound fresh okra, stem ends trimmed, cut crosswise into 1/2-inch pieces (about 3 cups)
2 cups/240 grams all-purpose flour
1 cup/138 grams fine or medium yellow cornmeal
1 tablespoon Cajun seasoning, preferably Slap Ya Mama
1 teaspoon ground cayenne
Sea salt, to taste

Steps:

  • Make the rémoulade: In a medium bowl, stir together the mayonnaise, ketchup, mustard, Cajun seasoning, vinegar and lemon juice. (Makes about 1 1/2 cups rémoulade.) Cover the sauce and chill it in the fridge until you serve.
  • Prepare the okra: Pour oil into a large pot with high sides and a lid, to a depth of a few inches. Heat oil over medium-high to 350 degrees.
  • While the oil is heating, combine the buttermilk and hot sauce in a large bowl. Place the cut okra into the buttermilk mixture and stir to coat.
  • In a large bowl, stir the flour, cornmeal, Cajun seasoning and cayenne.
  • Working in 4 separate batches, dredge the soaked okra in the cornmeal mixture using your hands. Shake off the excess flour and place the okra onto a wire baking rack. After one to two dredgings of okra, use your hands or a slotted spoon to sift the flour and cornmeal mixture, removing any clumps. Finish coating the remaining okra.
  • Working in about 4 batches, making sure to not crowd the pot, fry the okra, stirring frequently, until crispy and golden, about 4 minutes. (Take care not to burn it.)
  • Remove okra using a spider and allow the okra to drain on two plates covered with paper towels. Immediately season okra with sea salt. Serve immediately with the chilled rémoulade.
