Living in New England, I've come to appreciate the unique qualities of our area. Many people here enjoy the flavor of maple in their recipes, and I love this adaptation of an old favorite. -Connie Borden, Marblehead, Massachusetts

1/2 cup shortening
1-1/2 cups packed brown sugar
2 large eggs, room temperature
1 cup sour cream
1 tablespoon maple flavoring
2-3/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 cup chopped nuts
FROSTING:
1/2 cup butter
2 cups confectioners' sugar
2 teaspoons maple flavoring
2 to 3 tablespoons hot water

Steps:

  • In a large bowl, cream together shortening and brown sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Stir in sour cream and maple flavoring. Combine the flour, salt and baking soda; add to creamed mixture and mix well. Stir in nuts. Cover and refrigerate for 1 hour. , Preheat oven to 375°. Drop dough by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake for 8-10 minutes or until edges are lightly browned. Cool completely on wire racks. , For frosting, in a small saucepan, heat butter over low heat until golden brown. Remove from the heat; blend in confectioners' sugar, maple flavoring and enough water to achieve spreading consistency. Frost cookies.

Steps:

  • combine brown sugar, maple extract, vanilla, egg and butter together.add flour, baking soda,.dough will be very sticky.
  • drop by tspful on greased cookie sheet.
  • bake for 10-12 minutes at 350*.
  • let rest for 1 minute on sheet before removing to rack --
  • frost when cool with maple frosting.
  • to prepare FROSTING:.
  • combine frosting ingredients until smooth and spread over cooled cookies.

1 cup packed brown sugar

½ cup real maple syrup
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup flaked coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed.
  • Combine flour, baking powder and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoonfuls 2-inches apart onto greased baking sheets.
  • Bake at 375 degrees F (190 degrees C) for 10-12 minutes.

1/3 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract

FROSTING:
1/2 cup butter, softened
1-1/2 cups confectioners' sugar
2 teaspoons vanilla extract
Halved red candied cherries, optional

Steps:

  • Cream shortening and brown sugar until light and fluffy. Beat in egg, vanilla and maple flavoring. Whisk flour, salt and baking powder; gradually beat into creamed mixture. Refrigerate, covered, until easy to handle, about 2 hours., Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. With floured 2-in. round cookie cutters, cut out 18 circles. Repeat with 1-1/2-in. and 1-in. round cookie cutters. Place 1 in. apart on greased baking sheets. Bake until lightly browned, 7-9 minutes. Remove to wire racks to cool., Meanwhile, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; transfer frosting to bag. To assemble cookies, place a 2-in. cookie on waxed paper. Pipe frosting over cookie. Steps:

  • Heat oven to 350°F.

  • Combine the brown sugar and cream in a small sauce pan. Bring the mixture to a boil over medium heat, whisking constantly. Boil for 4 minutes. Remove the mixture from heat and stir in the butter and maple extract. Add 1 1/4 cups powdered sugar and whisk until smooth. If needed add an additional 1/4 cup of powdered sugar. You want the frosting to be thick but still spreadable. Immediately spread the frosting on the cookies. Sprinkle with chopped pecans.
