FROSTED TEXAS BROWNIES
These Frosted Texas Brownies are made with a whisk and a bowl -- no mixer required! They make a huge sheet pan and are perfect for potlucks!

Steps:
- Preheat oven to 400 degrees F and grease a 10x15" sheet pan (I like to line mine with tin foil before greasing!).
- In a large bowl, combine butter and sugar with a whisk. Add eggs and whisk until smooth.
- Add cocoa, milk, baking soda and vanilla and whisk until combined.
- Stir in flour. Add coffee and stir until combined.
- Spread into prepared baking sheet and and bake for 20 minutes, turning half way. Remove from the oven and cool to room temperature.
- FrostingIn a medium bowl, combine butter, cocoa, milk, sugar and vanilla and whisk until combined. Spread over cooled brownies and let set -- or don't! Simply cut yourself a slab and dive right in ?

Steps:
- Brownie: Preheat oven to 400°; grease an 11" x 17" jelly roll pan.
- Mix sugar and flour in a bowl; in a saucepan bring to boil the butter, shortening, water, cocoa and salt; pour cocoa mixture over flour mixture and stir until combined.
- Beat in buttermilk, baking soda, eggs and vanilla; pour into baking pan and bake for 15 minutes, until center is barely set; DO NOT OVERBAKE; the center of the brownie will be slightly puffed but, if not overbaked, will fall when cool.
- Frosting: Prepare the frosting while the brownie bakes; in same saucepan, bring to boil the butter, milk and cocoa; remove from heat and stir in confectioners' sugar and vanilla; stir until smooth.
- Pour and spread over the brownie immediately after removing it from the oven; cool and refrigerate.
FROSTED BROWNIES OR TEXAS BROWNIES
This makes a huge cookie sheetful of wonderful brownies or better yet, a cross between a brownie and a cake. These will be enough to bring to a gathering and everyone will love them.

- In a large bowl combine flour and sugar.
- In a large saucepan combine butter, shortening, cocoa, and coffee.
- Mix well and heat to boiling.
- Pour into the flour and sugar; mix well.
- Add the buttermilk, baking soda, eggs, and vanilla.
- Mix well.
- Pour into a well-greased 11x17 1/2 cookie sheet and bake at 400 degrees for 20 minutes or till done.
- While brownies bake make the frosting.
- In a large saucepan combine the butter, cocoa, and milk; heat to boiling and mix well.
- Mix in the confectioners sugar and vanilla and mix till smooth.
- Pour warm frosting over the brownies as soon as you take them out of the oven.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In a large bowl, stir together the flour, sugar, baking soda and 1/3 cup cocoa. In a small saucepan, combine water and 2/3 cup of butter; bring to a boil. Allow the butter and water to cool down a bit before adding to the dry ingredients. Beat in the buttermilk and eggs last. Spread evenly into the prepared pan.
- Bake for 30 to 35 minutes in the preheated oven. Allow to cool for 20 minutes before frosting.
- To make the frosting: In a large bowl, stir together the confectioners' sugar, 1/3 cup cocoa, milk and vanilla until smooth. Beat in the melted butter until light and fluffy. Spread over brownies while they are still slightly warm. Cut into squares when cool.

- In a saucepan, melt butter. Remove from the heat. Stir in cocoa; cool. In a large bowl, beat eggs and sugar until blended. Combine flour, baking powder and salt; gradually add to egg mixture. - In a large mixing bowl, combine the flour and the sugar.
- In a heavy saucepan, combine butter, shortening, water, and cocoa. Stir and heat to boiling.
- Pour boiling mixture over the flour and sugar in the bowl.
- Add the buttermilk, eggs, baking soda, and vanilla. Mix well using a wooden spoon or high speed on an electric mixer.
- Pour into a well greased cookie sheet (17 1/2 x 11 inch) pan.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 13x9-inch baking pan. Place 8 ounces of baking chocolate with 1 cup of butter in a microwave-safe bowl, and microwave on High until the chocolate is soft and the butter has melted, about 2 minutes. Stir to mix.
- Place the eggs, 3 cups of sugar, and 1 tablespoon of vanilla extract in a large bowl, and beat with an electric mixer on high speed for 2 minutes. Reduce the mixer speed to low, and beat in the melted butter-chocolate mixture. Beat in the flour until just combined (do not overmix), and stir in the chopped walnuts. Spread the batter in the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out with fudgy crumbs, about 35 minutes. Cool in the pan before frosting.
- To make frosting, combine 1 1/4 cup of sugar with the heavy cream in a saucepan over medium heat, and stir until the sugar dissolves and the mixture begins to simmer, about 3 minutes. Reduce the heat to low, and let the mixture simmer for 7 minutes without stirring.
- Remove the cream mixture from the heat, and stir in 5 ounces of baking chocolate and 1/2 cup butter, stirring to melt and blend the chocolate. Add 1 teaspoon vanilla extract; whisk until smooth. Place the frosting in the refrigerator and stir every few minutes until the frosting is chilled and thick, about 30 minutes. Frost the cooled brownies, and cut into squares.
