3 medium bananas
1 cup dark chocolate chips
2 teaspoons shortening
Optional toppings: Chopped peanuts, toasted sweetened shredded coconut and colored jimmies

Steps:

Cut each banana crosswise into 6 pieces (about 1 in. thick). Insert a toothpick into each piece; transfer to a waxed paper-lined baking sheet. Freeze until completely firm, about 1 hour., In a microwave, melt chocolate and shortening; stir until smooth. Dip banana pieces in chocolate mixture; allow excess to drip off. Dip in toppings as desired; return to baking sheet. Freeze at least 30 minutes before serving.

10 ice pop sticks
5 very ripe bananas, peeled and halved crosswise
1 (16 ounce) package semisweet chocolate chips
1 tablespoon butter
10 tablespoons flaked coconut, or as needed

Steps:

Insert 1 pop stick into the cut end of each banana. Place the bananas on a wax paper covered baking sheet and freeze until the bananas are frozen, about 2 hours.
Melt the chocolate and butter in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave).
Dip the frozen bananas in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll in coconut if desired. Place the dipped bananas on the wax paper-covered baking sheet, and freeze until the chocolate is firm.

1 (17 1/2 ounce) package betty crocker peanut butter cookie mix
1/3 cup vegetable oil
1 egg
2 (8 ounce) packages cream cheese, softened
1 (12 ounce) can betty crocker whipped chocolate frosting
3 eggs
2 tablespoons banana liqueur (optional)
whipped cream
sliced fresh banana

Steps:

Preheat oven to 350 degrees. Prepare cookie mix as per package instructions, substituting 1/3 cup vegetable oil. Measure out 1 1/2 cups of the dough and pat evenly into a 9 inch baking dish. Bake for 15 to 20 minutes or until golden around the edges. (Reserve remaining dough for making cookies. Dough can be frozen for up to 2 weeks.).
Meanwhile, in large bowl, beat cream cheese until completely smooth. Mix in frosting. Add eggs one at a time and blend until silken. Stir in liqueur, if using. Pour mixture over prepared cookie base, smoothing evenly. Bake 30 to 35 minutes, or until almost set but still jiggly. Cool completely and chill until cold in the centre. Serve with whipped cream and garnish with your choice of sliced bananas, dried banana chips or chocolate curls.
