Number Of Ingredients 10

1 1/2 cups cooked Pad Thai noodles, cooled and drained*
1/4 cup honey
1/4 packed cup fresh mint leaves, finely chopped
6 (8-inch) rice paper rounds*
6 medium strawberries, stemmed
1 mango, halved, peeled, seeded and cut into 1/4-inch thick slices
6 tablespoons sliced almonds, toasted* see Cook's Note
1/4 cup packed fresh mint leaves, finely chopped
1/4 cup honey
1/4 cup fresh lime juice (about 2 to 3 large limes)

Steps:

  • For the rolls: Put the noodles in a medium bowl and add the honey and the mint. Using 2 forks, toss the ingredients together until the noodles are coated. Lay a damp kitchen or paper towel on a work surface. Soak a rice paper round in warm water for 20 to 30 seconds until softened. Put the rice paper on the damp towel. Add 1/4 cup of the noodle mixture in the center of the rice paper and form into a 3 by 2-inch rectangle. Using a paring knife, slice a strawberry lengthwise into 1/4-inch slices. Arrange the slices over the noodle mixture. Sprinkle 1 tablespoon almonds on top. Arrange 2 to 3 mango slices on top of the almonds. Roll the rice paper around the filling and seal the ends with a little water. Repeat with the remaining ingredients. Wrap the finished spring rolls in damp paper towels and store in the refrigerator.
  • For the dipping sauce: In a small bowl, combine the mint, honey and lime juice. Pour into a serving bowl.
  • Arrange the spring rolls on a platter and serve with the dipping sauce.
  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly toasted, about 6 to 8 minutes. Cool completely before using.

warm water
8 rice paper wrappers
1 kiwi, sliced
¼ cup strawberry, sliced
½ mango, sliced
¼ cup raspberry
½ green apple, sliced
½ cup vanilla greek yogurt
½ cup strawberry, sliced
3 sprigs fresh mint leaf
1 tablespoon honey
1 tablespoon lemon juice
¼ tablespoon lemon zest, plus more for garnish

Steps:

  • Make the Strawberry Lemonade Dip: Add the Greek yogurt, strawberries, mint, honey, lemon juice, and lemon zest to a blender. Blend until smooth.
  • Transfer the dip to a small bowl and garnish with more lemon zest. Chill in the fridge while you assemble the rolls.
  • Fill a medium shallow bowl with warm water and set near your work station.
  • Dip a rice paper wrapper in the warm water for a few seconds, submerging completely. Remove and lay flat on a smooth, clean surface, such as a plate.
  • Add your desired combination of sliced kiwi, sliced strawberries, sliced mango, raspberries, and sliced green apple to the middle of the wrapper. Be careful not to overfill, or rolling it will become difficult.
  • Working quickly, before the rice paper dries out, fold both sides of the rice paper over the fruit to secure.
  • Lift the bottom edge of the rice paper and carefully fold it over the top of the fruit, tucking it under on the other side, then gently roll until the fruit is completely covered and the top edge of the wrapper adheres to the spring roll. Repeat with the other ingredients.
  • Set the spring roll aside and cover with a damp paper towel to keep fresh while you repeat with the remaining ingredients.
  • Serve with the chilled dip.
  • Enjoy!

  • Start by chopping your fruit. It is up to you how you chop and present your fruit in the spring roll. I decided to cut the apple and mango in long, thin strips, almost like matchsticks. I then sliced the strawberries and kiwi into rounds and cut the peach into thin wedges. You can leave the raspberries whole. Place all the fruit on a plate ready to make into spring rolls.
  • Next you will need to prepare the rice paper wrappers by submerging them one at a time in hot water for 2-3 minutes until they are soft and malleable. Immediately transfer the soft rice paper to a large plate and start to fill your spring rolls. Choose either strawberries, kiwi, raspberries or peach to lay down first and then directly onto of your chosen fruit place a few sticks of apple and mango, followed by some pomegranate seeds and a couple of mint leaves. Repeat for each spring roll, making one at a time.
  • I kept the spring rolls quite small so that they would be easier for young children to eat but you can stuff them so that they are a lot fuller if you wish!
  • Quickly make the dressing by mixing the honey and lime juice together in a bowl and serve with the fruit spring rolls.

  • Hull and slice the strawberries into thin slices. Peel and cut the kiwis into thin slices. Peel and cut mango into matchsticks. Quarter the apple, cut out the seeds and cut into matchsticks as well. Drizzle some lemon juice over the apples to prevent from browning.
  • In a large pot, add warm water and soak the rice paper wraps for about 20-30 seconds, turning it as you’re turning the steering wheel. The wrap should be pliable, but still slightly firm, as it will soften while you put the filling. Put the rice paper wrap smooth side down and arrange the fruits on one half of the wrap, as shown in the video. Fold in nearest end over the filling, fold in 2 sides of the wrap, and then tightly, but carefully roll it.
  • To prepare the caramel sauce for dipping, place the butter and sugar in a saucepan over medium heat. Melt the butter and stir until the sugar is dissolved. Add heavy cream and cook for about 5 minutes, whisking frequently. Add vanilla extract and salt.
  • To make the chocolate sauce for dipping, heat the heavy cream in the microwave for 30 seconds or so. Pour it over chocolate chips and let it stand for a minute. Stir until smooth.

  • Prepare the rice paper wrappers as per the instructions on your packaging. I poured water into a large wide bowl. I then dipped the rice papers into the water, until they began to become completely transparent. You want to ensure it's soft, but not so soft that it can be easily ripped. For my rice papers, this was 20 seconds.
  • Remove the rice paper with two hands, allow the excess water to drip off and place on a plate or board (I found a plastic or silicone mat made it easier than wood) and slightly pat dry.
  • Fill your rolls - lining them up in the centre of the rice paper. The arrangement is completely up to you, but here are two general layouts I did: - 3 Strawberry slices slightly overlapped with some mint, apple on top, mango on top, then some slices of kiwis - Kiwi on the bottom, then mango slices, then apple, then strawberries
