Lemon Raspberry No Bake Pie image

Creamy, delicious lemon filling bejeweled with fresh raspberries, this no-bake pie is the perfect springtime dessert! Just as easy as it is delicious, this luscious lemon pie is great for Easter dinner, cookouts, or any get-together!

1 prepackaged graham cracker crust ( in tin)
8 oz cream cheese at room temperature
1/2 c. powdered sugar
3.4 oz instant lemon pudding mix
1 c. cold milk
zest of 1 lemon
16 oz frozen whipped topping, thawed
12 oz fresh raspberries, rinsed and divided
mint leaves for garnish (if desired)

Steps:

  • With a had or stand mixer, beat together the cream cheese and powdered sugar until creamy and smooth. In a seperate bowl, whisk together the milk and pudding mix until thick (about 1 minute.) Pour the pudding mixture into the cream cheese mixture and beat together until creamy. Stop mixer to scrape down the sides of the bowl. Add in 1 container of whipped topping, and mix together until just combined. Gently fold in the lemon zest and 1 container of raspberries. Add filling to the pie crust, and refrigerate for at least two hours to set.
  • Just before serving, top with the second container of whipped topping, and additional raspberries. Garnish with mint leaves, if desired.

This is a refreshing no bake pie, great for the summer, and easy to put together. I clipped it from Better Homes magazine, and made it for visiting family, and it was gone in one round. You can use strawberries or blueberries in place of or in addition to the raspberries. Be sure to let it set in the refrigerator for at least the 4 hours called for in the recipe. Prep time includes chill time.

1 (3 1/2 ounce) package lemon flavor instant pudding and pie filling (4 serving-size)
1 cup cold milk
2 teaspoons grated lemon peel
2 cups thawed Cool Whip, divided
1 (6 ounce) graham cracker pie crusts
1 cup raspberries

Steps:

  • Beat cream cheese, dry pudding mix, milk and lemon peel in large bowl until well blended.
  • Gently stir in 1 cup of Cool Whip.
  • Spoon into crust.
  • Top with remaining 1 cup Cool Whip.
  • Refrigerate 4 hours or until firm.
  • Top with raspberries (or berry of choice) just before serving. Store leftover pie in refrigerator.

1/4 cup seedless raspberry jam
1 (9 inch) shortbread pie crusts
1 cup fresh raspberry, divided
4 ounces cream cheese, softened
1 (12 ounce) can evaporated milk
2 (3 1/2 ounce) packages instant lemon pudding mix
1 lemon, zest of
1 (8 ounce) container frozen whipped topping, thawed, divided
additional lemon zest (optional garnish)

Steps:

  • Spread raspberry jam over bottom of crust. Sprinkle 3/4 cup raspberries over jam.
  • Beat cream cheese in a large mixing bowl until creamy.
  • Gradually add evaporated milk, pudding mix, and lemon zest. Beat for 2 minutes on medium speed until well blended.
  • Fold in half the whipped topping.
  • Spoon mixture into crust and top with remaining whipped topping.
  • Refrigerate for 2 hours or until set. Garnish with remaining raspberries and additional lemon zest, if desired, just before serving.

1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter
⅓ cup brown sugar
¼ teaspoon ground cinnamon
4 large egg yolks
8 fluid ounces sweetened condensed milk
2 cups fresh lemon juice
½ cup fresh red raspberries, crushed
2 tablespoons white sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pulse graham cracker crumbs, butter, brown sugar, and cinnamon together in a food processor until well mixed. Press mixture firmly into a 9-inch pie pan.
  • Bake in the preheated oven until golden, about 8 minutes. Remove from the oven and let cool, 15 to 20 minutes. Leave the oven on.
  • Whisk egg yolks and sweetened condensed milk together. Slowly add lemon juice. Continue to rapidly mix until the mixture thickens.
  • Bake in the preheated oven until set, about 12 minutes. Allow the pie to cool to the touch on the counter, 15 to 20 minutes. Refrigerate until very cold, 2 to 3 hours.
  • Meanwhile, mix crushed raspberries and white sugar together in a bowl and allow to sit until pie is ready to serve. Drizzle or spread the raspberry mixture over the pie.

To this day, Jan's raspberry pie is my favorite thing about summer! This no-bake treat always brings back memories of going out and picking raspberries for the pie!

1 cup crushed fresh raspberries
¾ cup water
1 cup white sugar
3 tablespoons cornstarch
⅛ teaspoon salt
1 teaspoon lemon juice
4 cups fresh raspberries, or as needed
1 (9 inch) baked pie shell

Steps:

  • Bring crushed raspberries and water to a simmer in a saucepan. Simmer for 2 to 3 minutes. Strain and return 1 cup liquid to the pan.
  • Whisk sugar, cornstarch, and salt together in a small bowl. Add to the 1 cup liquid, whisking to combine. Bring to a boil over medium heat and cook, whisking constantly, until thick and clear, about 1 minute. Remove from heat and cool slightly, 10 to 15 minutes. Stir in lemon juice.
  • Heap fresh raspberries into pie shell. Pour glaze over top. Chill until set, 1 to 2 hours.

1 1/2 cups graham cracker crumbs
3 Tablespoons sugar
1/3 cup butter (melted)
1 (3.4 ounce) box instant lemon pudding
2 cups milk
6 Tablespoons lemon juice
1 (8 ounce) package Cool Whip
12 ounces fresh raspberries
2 Tablespoons sugar

Steps:

  • Heat oven to 350 degrees.
  • Mix together graham cracker crumbs, sugar, and melted butter until well blended. Press mixture firmly into bottom and side of a lightly greased 9 inch pie pan. Bake for 9-10 minutes until set. Cool completely.
  • In a mixing bowl whisk together the pudding mix and milk until thick. Then add in the lemon juice and stir to combine. Fold the cool whip into the pudding mixture until combined.
  • In a food processor blend the raspberries and sugar together until smooth.
  • Pour a little less than half of the lemon filling into the cooled pie crust and spread evenly. Then pour half of the raspberry filling over the pudding. Then add more lemon filling over the raspberry and spread carefully. Drizzle the top of the pudding with the remaining raspberry puree. Use a knife and swirl the raspberry filling into the pie.
  • Cove the pie pan with foil and freeze for about 3 hours.
  • Thaw slightly before serving.
  • (You will have a little lemon filling left over after filling your pie crust)

Remove any unmelted ice. Whisk in 2 cups COOL WHIP until blended. Refrigerate 15 to 20 min. or until mixture is thick enough to mound.
  • Spoon into crust.
