FRUITY CELEBRATION CAKE
Jazz up a birthday cake with candleholders made from fruit, and celebrate!

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch rounds.
- Place 1 cake layer, rounded side down, on serving plate. Spread with about 1/3 cup frosting. Place other layer, rounded side up, on top. Frost side and top of cake with remaining frosting.
- Make a small hole in each piece of fruit with a skewer. Place a birthday candle into each piece of fruit. Gently push fruit candleholders into frosting. Keep cake cool until ready to serve. Store loosely covered in refrigerator.

- Prepare and bake cake mix according to package directions for a 10 inch Bundt pan. Allow to cool completely.
- Cover cake with cream cheese frosting. Pour pie filling over frosted cake.

My grandmother and mother made these cakes for years. They are moist but don't contain eggs. Applesauce is the secret ingredient. I sold these at bake sales for years and we had many customers who returned every year just to get one.

Steps:
- Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.
- Sift the flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon and cloves into a large bowl. Stir in the applesauce and oil, then mix in the raisins, dates, mixed fruit and 2 cups of walnuts. Pour into the prepared pans. Pans should be about 3/4 full if using mini pans, or an assortment.
- Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown of the cake comes out clean.

- Preheat the oven to 180C/fan
- Transfer the soaked fruit mixture to a pan and let it heat to boiling point. When it starts to bubble take off the heat and allow to cool for a few minutes.
- While the fruit mixture is cooling grease and line a 20cm round deep cake tin
- Mix the butter and sugar with an electric mixer so that it becomes light and fluffly. Add the fruit mixture to this along with the spices. Give it a good mix with the electric mixer
- Now add the two cups of flour and the two eggs to the fruit mixture but stir this with a wooden spoon as quickly as you can
- Transfer the mixture to the tin and make a slight dip in the centre of the cake.
- Put the cake in the middle of the oven for 1 hr 15 minutes. Check the cake after 1 hour by placing a skewer in the cake. If it comes out clean then the cake is ready and take it out of the oven. Leave to go cold before taking off the greaseproof paper. If you want to marzipan and ice this cake turn it upside down - you will have a completely flat cake to work with.
