CHOCOLATE FUDGE FILLING
Use this chocolate filling when making Sparkling Vanilla Sandwich Cookies.

Steps:
- Place chocolate chips, sugar, and salt in a medium bowl; set aside. Heat evaporated milk in a small saucepan over medium-high heat until it just comes to a simmer. Remove from heat and pour over chocolate mixture; let stand until chocolate melts, about 5 minutes. Add vanilla, whisk until filling is smooth and well combined.
- Transfer chocolate filling to refrigerator; let chill until slightly firm, but still spreadable, about 2 hours.
FUDGE-FILLED PEANUT BUTTER COOKIES

Steps:
- Heat oven to 375°F (if using dark or nonstick cookie sheet, heat oven to 350°F). In large bowl, beat 1/2 cup peanut butter, the shortening, granulated sugar and brown sugar with electric mixer on medium speed until fluffy. Beat in egg until smooth. Beat in flour, baking powder and baking soda.
- Shape dough into 48 one-inch balls. On ungreased cookie sheet, place balls 1 inch apart. Flatten balls to 1/4-inch thickness by pressing with a fork in a crisscross pattern.
- Bake 4 to 8 minutes or until bottoms are golden brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
- In small microwavable bowl, microwave chocolate chips uncovered on High about 1 minute or until softened; stir until smooth. Stir 1/4 cup peanut butter into chocolate until smooth. Cool to room temperature or until thickened.
- Sandwich pairs of cookies, bottoms together, with 1 teaspoon chocolate mixture. Let stand about 1 hour or until chocolate is firm.

- Combine white sugar, milk, and butter in a large saucepan; bring to boil for 1 minute.
- Remove saucepan from heat and add peanut butter, oats, cocoa, vanilla, and raisins.
- Stir well. Drop by teaspoon onto waxed paper. Let sit one hour.

ITALIAN FUDGE-FILLED COOKIES
Steps:
- Preheat oven to 350 degrees F.
- For the dough: in a mixer, beat together the shortening and brown sugar. Add the milk and the egg, and beat until combined. Add the salt, baking powder, vanilla and flour. Mix until everything is thoroughly combined.
- Remove dough from bowl, cut in half. Roll each half of dough between 2 sheets of waxed paper. Peel waxed paper off the bottom of 1 of the layers and place it in a greased 9 by 13-inch baking pan. Press dough with hands into the corners of the pan, trimming any pieces that come over the sides. Peel off the waxed paper from the other side.
- Meanwhile, stir all the filling ingredients together. Evenly pour fudge filling on top of first layer in pan. Remove waxed paper from 1 side of top dough layer and place that side over filling. Then remove waxed paper from the top side. Bake until top is brown, about 30 to 35 minutes. Let cool on a rack for 4 to 5 hours or even overnight. Sprinkle with powdered sugar and cut into serving pieces
FUDGE-FILLED TOFFEE COOKIES
I combined three recipes to come up with these crisp cookies topped with a sweet chocolate center. They're a nice addition to a holiday cookie tray.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in oil, egg and extracts. Combine flours, salt, baking soda and cream of tartar; gradually add to creamed mixture and mix well. Stir in toffee bits, pecans and coconut. Cover and refrigerate 1 hour or until easy to handle., Preheat oven to 350°. Shape dough into 1-in. balls; roll in sugar. Place 2 in. apart on ungreased baking sheets. - In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour and mix well. , Turn onto lightly floured surface; knead until smooth, about 3 minutes. Divide dough into fourths; cover and refrigerate for 1-2 hours or until easy to handle. , In a microwave-safe bowl, melt chocolate chips and milk; stir until smooth. Stir in walnuts. Cool to room temperature. , Roll out each portion of dough onto an ungreased baking sheet into an 11x6-1/2-in. rectangle. Spread 3/4 cup chocolate filling down the center of each rectangle. - HEAT oven to 375°F Coat baking sheets with no-stick cooking spray.
- For Cookies: BEAT peanut butter, shortening, brown sugar, milk and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs. Beat just until blended.
- COMBINE flour, baking soda and salt in medium bowl. Add to creamed mixture on low speed, mixing just until blended. Drop by level tablespoonfuls 2 inches apart onto prepared baking sheets.
- BAKE 6 to 7 minutes or until set and just beginning to brown. Cool 2 minutes on baking sheet. Remove to wire rack to cool completely.
- For Filling: MICROWAVE sweetened condensed milk and chocolate chips in medium microwave-safe bowl on HIGH for 1 1/2 minutes or until melted and smooth when stirred. Stir in vanilla. Let cool 15 minutes. Spread generously on flat side of half the cookies. Top with remaining cookies, flat side down, to form sandwich cookies.
