FUSILLI TUNA PASTA SAUCE
This incredibly quick and easy Fusilli tuna pasta dish is ready in no time with just a few ingredients and tastes fantastic.

Steps:
- Prepare Fusilli pasta or your favorite one as recommended in the package.
- Chop the peppers and onion in very small pieces, crush the garlic but don't mix everything.
- On a deep frying pan or wok (this one is better) pour the olive oil and put it over high heat. When it is hot, add in the onions and garlic, mix them until they get a golden and a bit transparent.
- Now add the red and green peppers, the salt and black pepper. Mix for a little while, add the tomatoes (the chopped, the puree and the paste). Stir well all the ingredients for a couple of minutes. Turn the heat down to low and leave it to simmer for about 10-15 minutes.
- After those 20 minutes are up, taste it and correct salt and pepper if needed. It's better to be less salty because usually, the tuna is a bit salty.
- If it's good for you then for the last add the tuna, mix well and leave it for 5 to 10 more minutes the most.
- Remove from heat and it's ready to serve.
- Serve and enjoy!

- Cook 1 sliced shallot in 3 tablespoons olive oil in a large skillet over medium heat until softened, 4 minutes. Add 3 tablespoons capers; cook 1 minute. Add one 14-ounce can cherry tomatoes; cook, stirring, until the tomatoes burst, 5 minutes. Smash with a spatula, then stir in one 7-ounce can Italian oil-packed tuna, breaking it into chunks. Toss with 12 ounces cooked spaghetti and 3 tablespoons olive oil, adding up to 3/4 cup pasta-cooking water to loosen the sauce; season with salt and pepper.

- Heat the oil in a pan, throw in the onion and cook for a couple of minutes. Stir in the garlic, tomatoes, chilli and sugar. Season with salt and pepper and bring to the boil. Give it a good stir, then reduce the heat and simmer for 5 minutes.
- Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions. Flake the tuna into the sauce and heat through. Drain the pasta, return to the pan and stir in the sauce and basil leaves if you have any. Serve with a generous grinding of pepper.

- In a large pot of boiling salted water, cook pasta. Drain.
- Meanwhile in a large skillet, heat oil. Add tomatoes and their liquid, olives, parsley, and lemon juice. Bring to a boil and cook, stirring until heated through.
- Stir in capers and season to taste with salt and pepper.
- Add cooked pasta to the pan and toss to combine. Add tuna with oil and toss to break up any large chunks.

PASTA WITH TUNA AND OLIVES
If you want to make a complete meal of this, you can add a green vegetable to the mix (see the variation below). I like to use fusilli because I like the way the tuna gets lodged in the twists of the corkscrews, but other types of pasta, such as penne or spaghetti, will be just fine.

- Begin heating a large pot of water for the pasta. In a large pasta bowl, break up the tuna. Heat the olive oil in a small frying pan or saucepan over medium heat and add the garlic. Cook, stirring, just until fragrant, and remove from the heat. Add to the tuna. Add the parsley or basil, and mix together.
- Add the tomato sauce to the pan, heat through and season to taste with salt and add pepper and the red pepper flakes if using. Stir in the olives.
- When the water for the pasta comes to a boil, add a generous tablespoon of salt and the pasta. Cook al dente, until firm to the bite, following the cooking instructions on the package but checking the pasta a minute or two before the indicated time. Remove 2 tablespoons of the cooking water and mix with the tuna.
- When the pasta is al dente, drain and transfer to the bowl with the tuna. Add the tomato sauce with the olives, toss everything together, and serve. Pass the Parmesan at the table.

- Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, about 8 minutes.
- Meanwhile, combine the tomato sauce, tuna, capers, and lemon peel in a heavy large skillet. Using a fork, break the tuna into chunks. Simmer to blend the flavors, about 5 minutes. Season with salt and pepper, to taste.
- Drain the pasta, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat. Toss the pasta with enough reserved cooking liquid to moisten. Stir in the parsley and serve.

- FOR THE PASTA Knead the semolina with about 3/4 cup water and a pinch of salt to obtain a consistent and very smooth dough. Let it rest covered with a cloth for around 30 minutes. Roll it out into thin sheets (1/16") and cut it into strips 1/4" wide and 4"-5" long to form the busiate pasta. Roll one strip at a time on an iron rod or round skewer, forming a corkscrew shape that you will then remove. Place them on a tray, sprinkle them with semolina and let them dry for at least 3 hours.
- FOR THE TUNA SAUCE Soak the tuna in salted water for 1 hour. Drain it, remove the skin and cut it into 1/2" chunks. Chop the onion and peeled tomatoes. Gently fry the onion in a pan with 2 Tbsp. oil for 2-3 minutes, add the tomatoes and 2-3 basil leaves, season with salt and pepper and cook for 10-15 minutes.
- Heat 2 Tbsp. oil in another skillet with 1 crushed garlic clove(peel on), and 1 bay leaf; sauté tuna for 3-4 minutes, turning continuously. Deglaze with a splash of white wine, add the tomato and 1 small ladle of water; after 1 minute, season with chopped mint and removed from the heat.
- Bring water to a boil in a large pot and add salt. Boil the busiate and cook to al dente. Drain and toss them for 1 minute in the pan with the tuna sauce. Serve.
