"My mother gave me this microwave recipe several years ago," writes Marla Pinson from Granbury, Texas. "It's easy and so tasty even my kids eat their veggies with this on them!" Also try the garlic-flavored topping over bread as a yummy change of pace or substitute garlic salt for garlic powder for a bit more flavor.

3 tablespoons butter, softened
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
GARLIC BREAD:
4 hoagie buns, split
1/4 cup grated Parmesan cheese
VEGETABLES:
3 cups fresh broccoli florets
3 cups fresh cauliflowerets
1 to 2 tablespoons water
1/4 cup grated Parmesan cheese

Steps:

  • In a small microwave-safe bowl, combine the butter, garlic powder and thyme. Cover and microwave on high until butter is melted. Yield: 3 tablespoons., For garlic bread: Brush butter topping over cut sides of buns. Place cut side down on grill. Grill, uncovered, over medium heat for 1 minute or until toasted. Sprinkle with cheese. Yield: 4 servings., For vegetables: Place broccoli, cauliflower and water in a 2-qt. microwave-safe dish. Cover and microwave on high for 5-7 minutes or until crisp-tender; drain. Drizzle with butter topping; toss to coat. Sprinkle with cheese. Cook, uncovered, on high for 30 seconds or until heated through.

Garlic-Thyme Bread image

This is a great alternative to 'regular' garlic bread. Let it sit in your fridge 3 days before cooking and your garlic index will go through the roof! Prep time includes rising time.

Number Of Ingredients 9

1 package dry active yeast
1 1/2 cups water
2 teaspoons olive oil
2 teaspoons salt
5 cloves garlic, minced
1 tablespoon minced fresh thyme
2 cups whole wheat flour
1 -1 1/2 cup white flour
cornmeal, for dusting

Steps:

  • In a medium mixing bowl, combine yeast and water, and allow to stand in a warm place for 10 minutes or until foamy.
  • Stir in oil, salt, garlic, thyme, and whole wheat flour.
  • Add white flour 1/4 cup at a time, as needed, until a stiff manageable dough is formed.
  • Turn out onto a floured surface and knead for 5 to 10 minutes, or until dough is smooth and elastic.
  • Place in a lightly oiled bowl, cover, and set aside in a warm place for 1 hour, or until doubled.
  • (For even more garlicky flavour, after the dough has risen once, punch it down and place in refrigerator for 1 to 3 days. Let it come to room temperature, and then proceed with the following directions.) Preheat oven to 450° and dust a baking sheet with cornmeal.
  • If desired, work a bit of parmesan-reggiano into the dough at this point with some olive oil for extra flavour.
  • Form the dough into a round, place on prepared cooking sheet, cover with plastic, and let rise for 30 minutes.
  • Brush lightly with cold water, bake for 5 minutes, then reduce oven temperature to 400° and continue baking for 20-30 minutes, or until loaf is golden brown and sounds hollow when tapped.

3 crushed garlic cloves
1/8 teaspoon crushed red pepper flakes
1/4 teaspoon salt

Steps:

  • Put all ingredients in a bowl or jar and serve within a 1/2 hour.
  • This can also be refrigerated.
  • Refrigerate after using.
  • If you purchase a good olive oil, it will solidify in the fridge.
  • Just let it thaw for a few minutes at room temperature.

1 garlic clove
1/2 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
3 tablespoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
2 teaspoons grated fresh lemon zest
1/4 teaspoon black pepper

Steps:

  • Mince garlic and mash to a paste with salt using a heavy knife. Transfer to a food processor along with remaining ingredients and blend.
  • Roll into a 6-inch log in a sheet of plastic wrap, twisting ends closed. Chill, covered, at least 2 hours for flavors to develop. Bring to room temperature before using.

4 garlic cloves, sliced in half
sea salt
cracked pepper
1/2 cup unsalted butter, softened
1 sprig fresh thyme

Steps:

  • Place butter into a small pot and add thyme sprig.
  • Melt and let infuse for 10 minutes.
  • Preheat a grill to medium high.
  • Slice the rolls in half brush with a little of the thyme infused butter.
  • Place cut side down onto the grill and grill until bread is toasted and grill marks appear.
  • Rub each piece of toasted bread with cut side of garlic clove and then brush with a little more thyme butter.
  • Sprinkle with sea salt and cracked pepper and serve immediately.

The recipe calls for 1 cup frozen seasoning blend, which I am sure is a great convenience if you have it, but I chose to enter it with the components (onion, bell pepper, celery and parsley), as I felt more people would have that readily available. I buy peeled garlic cloves at the market, which is an enormous time-saver.

1/3 cup chopped onion
1/3 cup diced bell pepper
1/3 cup sliced celery
1 tablespoon chopped fresh parsley
1 teaspoon dried thyme, divided
40 garlic cloves, peeled, about 6 ounces
3 1/2 lbs chicken
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
olive oil flavored cooking spray
fresh thyme sprig, for garnish
1 1/2 cups low sodium chicken broth
1/4 cup white wine or 1/4 cup dry vermouth
1 teaspoon chopped fresh thyme
1/4 teaspoon salt
reserved roasted cloves from chicken
2 tablespoons all-purpose flour
3 tablespoons water

Steps:

  • Preheat oven to 375 deg F.
  • Combine onions, bell peppers, celery, parsley, 1/2 tsp thyme, and 5 garlic cloves and place in the cavity of the chicken. (If you prefer, use 1 cup frozen seasoning mix instead of the first four ingredients).
  • Place chicken, breast side up, on a rack in a roasting pan.
  • Sprinkle chicken with pepper, salt and remaining 1/2 tsp thyme and coat with cooking spray; surround with the remaining garlic cloves.
  • Tie ends of legs together with twine and tuck wing tips under the chicken.
  • Roast for 40 minutes.
  • Increase the oven temperature to 450 deg and bake an additional 20 minutes or until a thermometer registers 170 deg. Transfer chicken to a platter.
  • Remove the garlic cloves from the roasting pan and reserve five of them;scatter the remainder around the chicken, cover the platter with foil and allow the chicken to rest.
  • Prepare sauce: place the reserved cloves, broth, white wine, chopped fresh thyme and salt in a medium saucepan; bring to a boil, cover, reduce heat and simmer 10 minutes.
  • While the broth is simmering, combine flour and 3 tbl water in a small bowl, stirring with a whisk until smooth.
  • Stir the slurry into the broth mixture and simmer 5 minutes or until thick, whisking often.
  • Remove and discard garlic from the sauce.
  • Remove and discard skin from the chicken (or don't, if you prefer!); carve chicken; garnish with thyme sprigs, if desired.
  • Serve chicken with garlic cloves and sauce.
