1/3 cup vegetable oil, divided
2 tablespoons chopped onion
2 cups ketchup
1/2 cup cider vinegar
2 tablespoons lemon juice
1 tablespoon hot pepper sauce
2/3 cup Worcestershire sauce
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up

Steps:

  • In a large saucepan, saute onion in 1 tablespoon oil until tender. Add the ketchup, vinegar, lemon juice, pepper sauce and Worcestershire sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally. , Meanwhile, brown chicken on all sides in remaining oil over medium-high heat. Drain chicken and transfer to a 13x9-in. baking pan. Pour sauce over chicken. Bake, uncovered, at 350° for 45-60 minutes or until juices run clear.

Steps:

  • In a large saucepan, saute onion in 1 tablespoon oil until tender. Add the ketchup, vinegar, lemon juice, pepper sauce, and Worcestershire sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally.
  • Brown chicken on all sides in remaining oil over medium-high heat. Drain chicken and transfer to a 13" x 19" x 2" baking pan.
  • Pour sauce over chicken. Bake uncovered at 350°F for 45-60 minutes or until juices run clear.

1 cup brown sugar
½ (12 ounce) jar molasses
½ cup lemon juice
3 tablespoons Worcestershire sauce
1 tablespoon hot sauce
1 clove garlic, minced
1 pinch cayenne pepper
freshly ground black pepper to taste

Steps:

  • Stir ketchup, brown sugar, molasses, lemon juice, Worcestershire sauce, hot sauce, garlic, cayenne pepper, and black pepper together in a saucepan; bring to a simmer over medium low heat. Cook the sauce at a simmer for about 20 minutes.

4 boneless skinless chicken breasts

Steps:

  • 1. Mix together all of the marinade ingredients in a bowl.
  • 2. Cover chicken with the marinade, and store in the refrigerator for 1-8 hours.
  • 3. Grill chicken and serve. (I use the George Foreman grill).
