GEORGE'S CADILLAC BURGERS

Steps:
- Preheat a griddle to medium. Make 4 equal-size patties from the ground bison meat, taking care not to overwork the patties.
- Season each patty with 1/4 teaspoon of Ted's Special Spice Mixture on each side, and place on griddle. Cover the burgers with a stainless-steel bowl or other heatproof dome-shaped object, and cook for 6 minutes. Turn burgers over, and season the top of each burger again with 1/4 teaspoon of the spice mixture. Cover with the dome, and continue to cook for 4 to 5 minutes, for medium.
- Place 1/4 cup cheese on each burger, and cook until cheese melts. Butter the cut side of the rolls and place, cut side down, on griddle. Cook until lightly toasted. Serve each burger on a roll with 2 tablespoons barbecue sauce and 3 slices bacon.

- 1. Mix meat with the one onion (minced), parsley, bread cubes, egg, salt and pepper.
- 2. Make into paddies and fry to brown outside. Remove from pan.
- 3. Put remaining ingredients in pan with the remaining chopped onions and hamburgers. Cover and simmer for about one hour.

- Gently mold the beef into a round hamburger patty. Heat a flat top griddle to medium-high, place the burger down, and sprinkle the top side generously with salt. Allow one side to sear for up to 4 minutes without moving.
- Flip burger and allow to sear for another 4 minutes without moving. Do not press the hamburger while searing on either sides. Place the cheese on top of the burger and allow to melt, about 1 minute. Place onion slices on bottom half of bun, and place cooked cheeseburger on top. Arrange the bacon slices on top of burger and garnish with lettuce and tomato, if desired. Serve with a side of pickle.

Place the burger down and season generously with salt. Sear for up to 4 minutes without moving. Flip the burger and sear for another 4 minutes without moving or touching (never press a hamburger).
- Place the cheese on top of the burger patty and let the steam from the burger patty melt the cheese. Arrange the cooked bacon slices on top and serve on a bun with the onion slice underneath and a pickle. Top with the lettuce and tomato, if desired.
