Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with a silicone baking mats or parchment paper.
  • Whisk flour, cocoa powder, baking soda, and salt together in a bowl.
  • Beat butter, brown sugar, white sugar, eggs, and vanilla extract together in a bowl with an electric mixer until light and fluffy. 1/2 cup hungry jack instant potato flakes
1 teaspoon cream of tartar
1 teaspoon cinnamon
3/4 cup margarine or 3/4 cup butter, melted
3 tablespoons milk
1 egg
1/2 cup chopped nuts
1/4-1/2 cup sugar
1 cup powdered sugar
2 teaspoons unsweetened hershey cocoa
1 tablespoon soft margarine or 1 tablespoon butter
1 -2 tablespoon milk

Steps:

  • Heat oven to 350*. Combine first 7 ingredients; blend well. Stir in nuts. Let stand 5 minutes. Drop by rounded teaspoonsful into sugar; gently toss until sugar coated. Place 2 inches apart on ungreased cookie sheet. Bake at 350* for 8 to 10 minutes. (Cookies will be soft in center.) Cool 1 minute; remove from pans. If desired, frost cookies. 2 tablespoons shortening
1 teaspoon instant coffee granules
3 large eggs, room temperature
1-1/4 cups sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped pecans
48 pecan halves
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350° In a microwave, melt chocolate and shortening; stir until smooth. Stir in coffee granules; cool and set aside., In a large bowl, beat eggs and sugar until light and lemon-colored. Beat in cooled chocolate and the vanilla. Combine the flour, baking powder and salt; add to chocolate mixture and mix well. Stir in chopped pecans. , Working quickly, drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Place a pecan half in the center of each. Bake until cookies are set, 10-12 minutes. Cool for 1 minute before removing to wire racks. If desired, dust with confectioners' sugar.

It's fine if some of the coconut is still pale.
