Number Of Ingredients 4

1 pound of black eyed peas (pinto or red kidney beans can also be used)
5 cups of rice
1 tablespoon of baking Soda
1 teaspoon of salt

Steps:

  • Boil your beans in 5 cups of water for 30 minutes on medium high heat.
  • Add rice and 2 cups of water.
  • Add baking soda and salt right after your add in the rice and water.
  • When it's boiling, watch it because it may boil over because of the introduction of the baking soda.
  • Adjust flame as needed if it boil over.
  • Cook the waakye at medium heat with constant stirring every 10 minutes for 30-45 minutes, until the rice is tender.

Waakye is a traditional Ghanaian dish of cooked rice, beans and red millet leaves which give waakye this particular reddish color.

1 cup long grain rice
2 (14 oz) cans red beans ((or black-eyed peas))
A dozen leaves of dried millet ((waakye))
Salt

Steps:

  • Put the dried leaves of millet in 1 quart (1l) of boiling water for 15 minutes until the water is well colored. Remove the waakye leaves and stir.
  • Rinse the rice in water a couple times.
  • In a pot, pour 2 cans of beans (without the water) and the rice.
  • Pour the colored water on the rice and beans. Add water if necessary.
  • Cover and cook for 15 minutes or until the rice is cooked and has absorbed all the water. Season with salt.

Waakye is a very popular Ghanaian food. It is often eaten as breakfast or lunch, and sold by vendors on the streets of big and small cities alike in Ghana. It is made boiling rice and beans together. Some may include tomatoes, chilli pepper, other spicy ingredients and fish, prawn or meat. I got this recipe from the African Foods website. There are a couple of suggestions at the end of the recipe.I did NOT include the soaking time for the beans. Enjoy!

7 ounces dried kidney beans, red beans (beans) or 7 1/8 ounces black-eyed peas, rinsed
7 ounces long grain rice
salt
4 -5 cups water

Steps:

  • Soak your preferred beans in water over night in water to become soft and easy to cook. Alternatively, you can soak it for 3 - 5 hours in the morning, should you want to prepare this meal for lunch or dinner.
  • Now bring the soaked beans to boil in 2 cups of the water in a pot. Boil for about 15 minutes.
  • Then wash your rice and add to the boiling beans and add more water. Allow the mixture to boil for about 30 minutes, adding water to achieve the desired level of tenderness. Salt to taste.
  • Your waakye is ready to eat. Serve with a sauce of vegetable and fish or meat.
  • Some would add blended tomatoes straight into the boiled mixture, curry, magi cube, chilli pepper, and a little vegetable or palm oil and allow to boil for another 10 minutes.
