1/2 tablespoon baking soda
2 teaspoons ground cinnamon

1 1/2 cups unsweetened applesauce
1/2 cup vegetable oil or melted coconut oil
2 eggs (room temp if using coconut oil)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Line muffin pan with muffins liners and set aside.
  • In a large bowl combine both sugars, baking soda, spices, and salt.
  • Add the applesauce and mix well (mixture should be completely smooth).
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and mix until incorporated. Do not over mix!
  • Scoop the batter into the muffin pan filling the cups to the top.
  • Bake for 20 - 21 minutes until a toothpick inserted comes out with a few crumbs.
  • Cool in pan 5 minutes then transfer to a wire rack (or large plate if you don't have a rack) to continue cooling.
  • Serve warm or cooled completely.

Steps:

  • Mix flour, baking soda, allspice, nutmeg, cinnamon, cloves, ginger, and salt together in a bowl.

Steps:

  • Preheat oven to 350 degrees F. Line a 12-cup muffin tin with paper liners or spray them lightly with vegetable oil spray.
  • Combine whole wheat flour, oats, ground flax, coconut, brown sugar, baking powder, salt, cinnamon, and nutmeg in a mixing bowl.

1/2 cup sweetened shredded coconut
1/2 cup raisins

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.

2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce

1 cup chopped walnuts, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. 1 teaspoon cinnamon

1 cup unsweetened applesauce
1/2 cup butter, melted
crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.

1 cup light brown sugar (can use more)
1/2 cup butter (butter is better!) or 1/2 cup margarine, melted (butter is better!)
1 1/4 cups unsweetened applesauce
1 1/4 cups chopped nuts
6 -7 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Butter 12 muffin tins or line with paper liners.
  • For muffins: in a small bowl mix together first 7 dry ingredients.
  • In another large bowl whisk together eggs and brown sugar until well combined.
  • Add in melted butter whisking continuously until mixture is creamy.
  • Stir in applesauce.
  • Fold in flour mixture until JUST combined.
  • Stir in nuts.
  • Divide the batter evenly between muffin tins.
  • To make the topping: stir together all ingredients then sprinkle over tops of muffin batter.

  • Preheat oven to 400.
  • 1. Soak box of raisins in water
  • 2. Sift together 3 times flour, baking soda, cinnamon, nutmeg, cloves, salt, & coco.
  • 3. Cream together sugar, shortening, & applesauce. Add eggs mixing 1 in at a time.
  • 4. Mix wet ingredients with raisins.
  • 5. Mix in dry ingredients a little at a time until well mixed.
