GINGER CHICKEN MEATBALLS
This is a twist on the traditional meatball recipe. Enjoy! Top with sliced scallions.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
- Mix ground chicken, bread crumbs, egg, ginger, minced scallions, soy sauce, sesame oil, garlic, and kosher salt together in a large bowl.
- Form the mixture into 1 1/2-inch balls and arrange on the prepared baking sheet.
- Brush the meatballs with canola oil. Bake in the preheated oven until browned and no longer pink in the center, about 13 minutes. Transfer to a platter.

- In a large bowl, combine the egg, cookie crumbs and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place on greased racks in shallow baking pans. Bake, uncovered, at 350° for 15-20 minutes or until no longer pink; drain., In a large skillet, combine the ketchup, brown sugar, mustard and ginger. Add meatballs. Simmer, uncovered, for 15-20 minutes or until heated through, gently stirring several times.

GINGER RICE BALLS
One of my favourite types of rice balls especially when grilled and crispy. We buy our sushi ginger in thin slices in packets and jars, about 1/4 cup is what I use. Cooking time does not include time for rice.

Steps:
- Form sushi cakes either using a rice mould or your hands (make sure to wet them first).
- Make a small hole in the cake and fill with 2 slices sushi ginger.
- Re-seal hole and let rest for 5 minutes.
- Heat grill.
- Glaze rice ball and sprinkle with a few sesame seeds. Grill until golden. Turn, glaze and grill.

GINGER LIME MELON BALLS
I was looking for an easy, cool, summer fruit appetizer for my August wedding reception. My family made all the food for 100 guests by ourselves, so I needed something easy yet memorable. I found this recipe on a "melon web-site", AICR. It was so simple and after doing a tasting of 3 different recipes, this one was the clear favorite. If you've never used crystallized ginger, you should be able to find it in the bulk food section with dried fruits. It is NOT fresh ginger, it's like a soft, sugared, candy. You can't mince it too fine because it gets pretty sticky as you cut it. You can use any kind of ripe melon in season, but I like honeydew and cantaloupe best. Perfect for a picnic, summer brunch or a DIY wedding reception! Enjoy!

Steps:
- In small saucepan, combine juice, water, ginger and zest. Set pan over medium-high heat and bring to boil. Boil 5-7 minutes, stirring occasionally, until mixture reduces to 2 tablespoons.
- Strain mixture though fine sieve to remove zest. (I'm not sure this step is really needed).
- Place melon in bowl, toss with ginger-lime mixture. Let sit for 15 minutes. You can drain the sauce or serve it with the melon.
- Garnish with mint (optional).

WHITE CHOCOLATE GINGERSNAPS
My disdain for improperly used white chocolate is, I think, pretty well known, so one of my favorite holiday cookies might surprise you! It's one of the cookies in my Charm City Cakes Christmas cookie tins this year. It's a chewy-centered gingersnap cookie drizzled with white chocolate and chopped candied ginger. What's wonderful about these cookies is that you get a crackly texture from the candied ginger and the outside of the cookie as well as a soft, mushy texture from the inside of the cookie. You also get a sweet creaminess from the white chocolate that tempers the sharpness of the ginger. My philosophy is, when you use ginger, use it!

- Preheat the oven to 350 degrees F (175 degrees C).
- Cream 2 cups sugar, oil, molasses, and salt together in a bowl.
- Whisk flour, baking soda, ginger, and cinnamon together in a separate bowl and mix into the creamed mixture. Scrape the bowl during the process and try not to overmix.
- Roll dough into 1-inch balls, then roll the balls in remaining sugar.
- Bake in the preheated oven until edges are set and golden, 10 to 12 minutes, rotating the cookies halfway through the process so they don't bake unevenly. It's really important not to overbake so the middles stay mushy. Immediately remove the parchment paper from the cookie sheet so the cookies stop baking, and after 2 minutes, transfer to a wire rack to cool completely.
- Place white chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Drizzle cookies with white chocolate and immediately sprinkle with chopped candied ginger. You want the still-liquid chocolate to grab the candied ginger.
