50g butter , plus extra for the ramekins
1 large cooking apple , peeled, cored and finely chopped
75g light brown muscovado sugar
140g butter , softened
100g light brown muscovado sugar
1 egg
125ml buttermilk
2 balls preserved stem ginger , finely chopped, plus 1 tbsp syrup from jar
100g plain flour , plus extra for dusting
1 ½ tbsp ground ginger
½ tsp baking powder
½ tsp bicarbonate of soda
icing sugar , for dusting
cream or custard, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Lightly butter and flour 6 x 8cm deep ramekins, tapping out excess flour. Heat the butter in a pan until foaming, add the apple and cook for 1 min on a medium heat. Toss in the sugar and cook until dissolved. Divide between the ramekins.
  • For the puddings, beat the butter and sugar together with an electric whisk until fully combined. In a separate bowl, mix together the egg, buttermilk, chopped ginger and ginger syrup, then stir this into the butter mixture. Fold in the flour, ground ginger, baking powder, bicarbonate of soda and a pinch of salt. Divide between the ramekins so they are filled to 1cm below the top. Place them on a baking tray and bake for 20 mins, until golden and risen.
  • Serve warm, dusted with icing sugar. Accompany with cream or custard.

2 cups heavy cream
2 1/4 cups sugar
6 tablespoons unsalted butter, cut into pieces
1 1/4 cups light corn syrup
1/2 teaspoon coarse salt
1/2 teaspoon pure vanilla extract
2/3 cup toasted sesame seeds, divided
1/3 cup finely chopped candied ginger

Steps:

  • Lightly brush bottom and sides of a 9-by-13-inch rimmed baking sheet with oil. Line with parchment, leaving a 2-inch overhang on long sides; lightly brush parchment with oil. Sprinkle 1/3 cup sesame seeds on parchment-lined baking sheet.
  • Bring cream, sugar, butter, and corn syrup to a boil in a large saucepan over high heat, stirring until sugar dissolves. Reduce heat to medium-high; cook, stirring occasionally, until caramel reaches 248 degrees on a candy thermometer, about 15 minutes.
  • Immediately remove caramel from heat, and stir in salt, vanilla, and ginger. Pour caramel onto baking sheet, sprinkle with remaining 1/3 cup sesame seeds, and let stand, uncovered, at room temperature at least 8 hours and up to 1 day.
  • Lifting by parchment overhang, transfer caramel to a large cutting board. Cut into 3/4-by-1 1/4-inch pieces; wrap each piece in waxed paper or cellophane.

Making these at home, I am holding them up to the standard of an Italian bakery. These cannoli come together in two parts: make the shell, thin and crispy, and then make a filling with serious flavor.

2 cups all-purpose flour, plus more for rolling
1 tablespoon granulated sugar
1/4 teaspoon kosher salt
1 tablespoon plus 2 teaspoons unsalted butter, cut into small pieces
1 large egg yolk
1/2 cup dry white wine
3/4 cup powdered sugar
1/2 teaspoon ground allspice
1 tablespoon freshly grated ginger
2 cups ricotta cheese, preferably whole milk
1/4 cup heavy cream
1/4 cup small semisweet chocolate chips
1 lemon
4 cups canola oil, for frying
2 tablespoons sesame seeds, toasted
Powdered sugar, for dusting

Steps:

  • For the shells: Sift the flour, granulated sugar and salt into a medium bowl. Work the butter pieces in with your fingers. Then add the egg yolk. Work in the white wine until a smooth dough forms. Wrap the dough in plastic and let rest for a few minutes while you make the filling.
  • For the filling: Sift the powdered sugar, allspice and ginger into a medium bowl. In another medium bowl, whisk the ricotta until smooth and then add it to the dry ingredients; mix to blend. Beat the cream until fairly stiff and gently fold it into the ricotta mixture with a rubber spatula. Stir in the chocolate chips. Lightly zest the lemon and stir it into the ricotta. Refrigerate.
  • To roll and fry the shells: Heat the oil to 350 degrees F in a heavy-bottomed medium pot. Meanwhile, spread an even layer of flour on a flat surface and flour a rolling pin. Roll the dough until very thin (about 1/8-inch thick). Cut out 3- to 4-inch rounds, using a glass or a small bowl; you should have about 12 rounds. Wrap each one around a cannoli mold, pressing to enclose. Flare the edges out slightly from the mold. Use a pair of tongs to submerge the shell in the hot oil. Fry until crispy, 2 to 3 minutes. Remove from the oil and immediately slide the shell off the mold. Set aside to cool. Repeat for all the rounds.
  • To fill the cannoli: Just before serving, use a pastry bag to pipe the ricotta filling into the cannoli shells. Fill the shells from both sides so that the cream fills the length of the shell. Sprinkle the sesame seeds generously onto the ricotta on each end. Dust with powdered sugar. Serve immediately.

4 tablespoons all-purpose flour
1 tablespoon light or dark brown sugar
1/2 teaspoon ground ginger

1/4 cup milk (dairy or non-dairy)
1 1/2 teaspoons vegetable oil
1 1/2 teaspoons pure maple syrup
1/2 teaspoon fleur-de-sel
1 cup Apple Cider Caramel Sauce (recipe follows)
1 pint vanilla ice cream, for serving
1 3/4 cups granulated sugar
2 teaspoons fresh lemon juice
1/4 cup apple cider
1 stick (8 tablespoons) unsalted butter, cut into fourths
1/2 teaspoon fine sea salt
1 cup heavy cream
1 teaspoon ground cinnamon
1 teaspoon ground ginger

Steps:

  • Using a spoon, remove enough of the interior of each apple so that the walls are about 1/2-inch thick all around, including the bottom, and there's enough of a well for the cake batter. Place the apples in a microwave-safe dish. Microwave the apples until just warm, 20 to 40 seconds, then remove and set aside.
  • Whisk together the flour, brown sugar, ginger, cinnamon, baking powder, milk, vegetable oil, and maple syrup in a medium bowl until just combined. Spoon or pour the batter inside the apples, leaving about 1 inch of space at the top of each. Microwave the apples in the same microwave-safe dish until the batter rises and sets, about 2 minutes 20 seconds. Dust the top edges of the apples with a little fleur-de-sel and let cool slightly, then serve with Apple Cider Caramel Sauce and vanilla ice cream.
  • Mix the sugar and lemon juice in a deep nonstick saucepan, place over medium heat and cover. Have a pastry brush and a small bowl of water nearby to brush the sides of the pot of any granules of sugar.
  • When the sugar starts to brown, swirl the pan to ensure even browning until the sugar is amber in color, 5 to 6 minutes. Pour in the apple cider -- step back, because there will be sputtering.
  • Add the butter. Swirl the pan to melt the butter, then add the heavy cream, cinnamon and ginger. Remove from the heat. The caramel will continue to thicken off the heat. Stir before serving. Makes 1 1/2 cups. Can be refrigerated for up to 2 weeks. Reheat gently on the stove top or in the microwave.

1 cup heavy cream
1/2 cup (1 stick) unsalted butter, cut into pieces

2 cups sugar
1/2 cup light corn syrup

1/2 cup sesame seeds, toasted

Steps:

  • Lightly coat bottom and sides of an 8-by-8-inch square pan with cooking spray. Line with parchment paper, leaving a 2-inch overhang on all sides; lightly spray parchment.
  • In a small saucepan, combine cream, butter, and salt; heat gently over low. In a heavy medium saucepan, combine sugar, corn syrup, and 1/4 cup water. Clip on a candy thermometer. 1/4 cup lemon juice
8 pounds firm pie apples
1 cup sugar
1/4 cup crystallized ginger

Steps:

  • In large non-aluminum kettle, combine water and lemon juice. Peel and core apples; cut into eighths and place immediately into lemon water.
  • Add sugar and ginger; bring mixture to boiling over high heat, stirring constantly. Reduce heat to low and cook, uncovered, 10 minutes, stirring constantly.
  • Meanwhile, sterilize 2 quart or 4 pint jars and the necessary lids, and bands, according to manufacturer's directions. With slotted spoon, divide apples and ginger among sterilized jars. Fill with hot syrup leaving 1/2 inch space at top of jar. Wipe rims of jars to remove any syrup and seal with lids and bands.
  • Process jars in boiling water bath for 20 minutes (both quarts or pints). Remove jars from water bath, tighten lids immediately, and set aside to cool completely. Label jars and store in cool, dry place

One of the main characters, Shiro, is a hardheaded (though hiding a soft heart within) lawyer by day, who comes home and cooks their meals every night. Use eating apples, not tart cooking apples, for this dish, since not much sugar in proportion to the apples is used. Gala, Fuji and Gravenstein work well. If you plan to use unpeeled apples, select a rosy-skinned one for the best color.

2 lbs crisp sweet apples (1kg)
5 -7 ounces sugar (150-200g, The more tart your apples are, the more sugar you you will need, and vice versa)
3 tablespoons butter (optional)

Steps:

  • Wash the apples (peel them if you prefer), cut into half and core them, then cut into wedges or slices. Do this as you cook the caramel, if you're brave. Otherwise deal with the apples in advance so that you can pay full attention to the caramel.
  • Put the sugar in a large, heavy-bottomed pan over high heat. Heat the pan until the sugar starts to melt. Stir if you see clumps. The sugar will start to caramelize quickly at some point. If it looks like it's going to turn black, take the pan off the heat for a while to cool it down. Continue melting the sugar until a thick caramel is formed.
  • Tip all the sliced apples into the pan at once - be careful, the pot might spit at you when the moisture of the apples hits the caramel, and spitting caramel is very painful. Stir to combine the apple and caramel as well as you can - the caramel will stick to the bottom of the pan and your stirring spatula quite a lot, but don't worry about it. If your spatula gets too caramel-clogged, scrape it off gently with the back of a knife and plop the caramel lump back into the pot. It will melt as the apple cooks down and exudes more moisture.
  • Lower the heat to low, just high enough so that the pan is barely simmering. Put a lid on, and let it cook, stirring occasionally, for about 30 to 40 minutes, until the apple slices are permeated with caramel color, as in the photo above. At this point add the optional butter and stir it in, though it's fine to leave it out if you wish.
  • Let cool thoroughly before packing into jars or plastic containers. Since this doesn't have the large amount of sugar that jams or preserves do, it needs to be stored in the refrigerator, where it will keep for a couple of weeks, or the freezer, where it should keep for a month or more.
  • Eat hot or cold. It's really nice on pancakes, with or without butter, as well as on oatmeal, yogurt, ice cream, or on its own. In the manga they lightly toast some bread, pile the apple on top with a pat of butter, and toast it again in a toaster oven.
