Ginger-Lime Chicken with Coconut Rice image

Chicken breast chunks are marinated in ginger and lime, stir fried with sesame oil and honey, then served with coconut rice. A simple recipe with not too many ingredients, but the taste is an eye-opener!

1 ½ pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
2 limes, zested and juiced
2 tablespoons grated fresh ginger root
1 ¾ cups coconut milk
½ teaspoon white sugar
1 cup jasmine rice
1 tablespoon sesame oil
1 tablespoon honey
¼ cup sweetened flaked coconut

Steps:

  • In a glass bowl, mix chicken breast cubes with lime juice, lime zest, and grated ginger. Let marinate for about 20 minutes.
  • In a medium saucepan, combine the coconut milk and sugar over medium-high heat. Bring to a simmer. Stir in the jasmine rice, reduce heat to low, and cook tightly covered for about 20 minutes or until liquid is absorbed. Remove from the heat and fluff rice with a fork; cover, and keep warm.
  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add chicken and marinade. Stir fry until the chicken is nicely browned, about 3 minutes. Drizzle the honey onto the chicken and continue to stir-fry for another minute or so, being careful not to let the honey burn. Remove from the heat and sprinkle with coconut.
  • Serve hot with the coconut rice on the side.

Steps:

  • In a dry skillet, toast .25 cup shredded coconut.
  • Put the chicken, .5 cup coconut milk, .5 cup water and 1 tablespoon freshly grated ginger in another pan.
  • When the liquid boils, lower heat to a simmer; cover and cook chicken for 10 to 15 minutes or until tender and just cooked through.
  • Transfer chicken to a plate and keep warm. Turn heat to high and boil the mixture until it is reduced to your liking.
  • Lower heat and return the chicken to the pan to reheat and coat with sauce.
  • Garnish: The toasted coconut.

4 tablespoons minced garlic cloves
2 tablespoons minced ginger
1/2 teaspoon ground coriander
2 teaspoons dry red pepper flakes

2 tablespoons cilantro
4 boneless skinless chicken breasts

Steps:

  • 1. In a large mixing bowl mix all of the ingredients except for the chiken breast. Mix until well blended and add in the chicken breast.
  • 2. This needs to marinate for at least for 45 minuets.
  • 3. Turn on oven to broil and set oven-racks so they are about 6 inches from the element.
  • 4. Grease broiler pan and place chicken on it.
  • 5.Cook on both sides for about 4-6 minuets or until chicken is no longer pink.
  • 6. Remove from pan and garnish with cilantro.

1pkg fresh chicken tenders(14oz)
1 tbsp. honey
1 tsp. lemon juice or orange juice

Steps:

  • 1.In small bowl blend sour cream, pineapple, 1/4 tsp. of ginger & 1/4 tsp. of curry powder if desired. Cover & refrigerate until serving. 2. Preheat oven to 400F. Coat baking sheet with cooking spray; set aside. In blender or food processor combine coconut, breadcrumbs, remaining 3/4 tsp. ginger, 1/2 tsp. curry(if desired) & cayenne. Pulse to blend. Place in shallow dish; set aside. 3.Sprinkle chicken tenders with salt if desired. Cut tenders in half crosswise. Blend honey & lemon juice in separate shallow dish. Coat chicken pieces in honey and then in coconut mixture. Place on baking sheet. Bake 12-15 minutes or until chicken is tender & no longer pink(170F).

2 tablespoons white vinegar
2 pounds chicken breast tenderloins
2 large eggs
2 tablespoons heavy cream
1 pinch salt and ground black pepper to taste
1 cup coconut
¾ cup almond flour
¼ cup all-purpose flour
2 tablespoons white sugar
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon chili powder
½ cup coconut oil, or more as needed

Steps:

  • Combine milk and vinegar in a bowl. Add tenderloins. Place in the refrigerator to soak for 1 to 2 hours.
  • While chicken soaks, prepare egg coating by whisking together eggs, heavy cream, salt, and pepper in a bowl.
  • Prepare dry coating by pulsing coconut in the bowl of a food processor until it resembles large bread crumbs. Add almond flour, all-purpose flour, sugar, 1 teaspoon salt, 1 teaspoon pepper, and chili powder. Pulse to combine.
  • Preheat the oven to 250 degrees F (120 degrees C). Remove chicken from milk mixture; discard mixture.

An offspring of the recent RSC #9, this recipe was inspired by some leftover light coconut milk. Despite it's odd origins this chicken is light, easy and delicious. You could give it a more Thai feel with the addition of nam pla or a more Caribbean flair by replacing the cayenne with a small amount of finely diced scotch bonnet peppers. While I prepared this on my George Foreman, certain it would work equally well on an outdoor grill. (As per WW Recipe Builder, 3 pts per serving.)
