- Before baking ham, place pineapple slices on ham with toothpicks and place cherries in center of pineapple.
- In a medium microwave safe bowl combine brown sugar and reserved pineapple juice. Mix together and microwave for about 5 minutes, until mixture is thick. Pour some of this glaze over the ham about every 15 minutes in the last hour of baking, until all is used.

- Peel pineapple; cut into six wedges. Cut wedges lengthwise to remove core; cut each widthwise into four pieces. Pour butter into a 2-qt. baking dish; top with pineapple. Combine the brown sugar, honey, pie spice and extract; spoon over pineapple., Bake, uncovered, at 400° for 35-40 minutes or until golden brown. Spoon cooking juices over the top. Serve warm with sorbet.

HONEY GLAZED GRILLED PINEAPPLE

- In a baking dish, mix together the honey, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate 2 hours, turning occasionally.
- Preheat a grill pan over medium heat.
- Place the pineapple slices on the preheated grill. Grill on both sides until the glaze caramelizes and grill marks form, about 2 minutes per side.
- To serve: Place the pineapple slices on individual plates and top with a scoop of ice cream. Drizzle the remaining honey syrup over the top.
GLAZED PINEAPPLE
Steps:
- Mix 4 tablespoons melted butter, 1/4 cup light brown sugar, 1/4 teaspoon each curry powder, cinnamon and vanilla extract, a pinch of salt and a splash of dark rum in a bowl. Slice a pineapple in half lengthwise (keeping the top attached), then cut each half into 3 long wedges; cut out the core. Place 2 wedges on a sheet of foil; brush with the spiced butter and fold up. Repeat to make 2 more packets; grill over medium heat until the pineapple is soft and golden on the bottom, 15 to 20 minutes.

BROWN SUGAR GLAZED PINEAPPLE
Steps:
- Preheat the broiler. Remove skin and "eyes" from pineapples and slice into 3/4-inch rounds; remove core if you wish or just thickly coat each slice with a layer of brown sugar. Set slices on a broiler pan.
- Place the pan under the broiler as close to the heat as possible and broil until the sugar is caramelized, about 3 minutes keep your eye on the pineapple to make sure it does not burn.
- Remove slices from the broiler pan and set on plates; garnish with drops of port wine if you wish.

- Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern; insert a clove in each diamond. Cover and bake 2 to 2-1/2 hours or until a thermometer reaches 130°., Meanwhile, in a large saucepan, dissolve cornstarch in water; stir in 2 cups dark brown sugar, pineapple, lemon juice, mustard and salt. PINEAPPLE GLAZE FOR BAKED HAM
Posted at the request of my sister. Glazing a ham while cooking is wonderful but the first person to the platter usually makes off the the glazed ends and the rest of the people get a "glazed rim". The solution in our house is to make lots of glaze and pour it over each slice!

Steps:
- Place all ingredients in a small saucepan including the juice/syrup from the pineapple.
- Turn heat on to medium and stir constantly to prevent burning.
- Continue to heat until mixture thickens and comes to a boil.
- Allow mixture to boil for approximately 1 minute.
- If mixture refuses to thicken, add more cornstarch- a little at a time.
- (Be sure to mix your cornstarch with a little cold water in a cup to make a smooth liquidified mixture before adding it to the hot sauce.) Pour finished sauce into a serving bowl, complete with a ladle, and let your guests pour it over baked sliced ham.
PINEAPPLE-GLAZED BAKED HAM
This pineapple baked ham recipe is one that I have adapted to my liking through trial and error. It makes a sweet ham with a nice brown sugar crust. I serve it with asparagus and potato salad or mashed potatoes.

- Preheat the oven to 325 degrees F (165 degrees C).
- Place ham in a large baking pan and score the surface with a knife. Mix 1/4 cup pineapple juice, 1/4 cup brown sugar, and butter together in a bowl. Inject the mixture into the ham; pour any remaining liquid over the ham. Pour an additional 1/2 cup pineapple juice and water into the pan. Rub 1/2 cup brown sugar onto the ham.
- Mix remaining pineapple juice, remaining brown sugar, ginger, and cloves in a small pan over medium heat. Cook until the mixture comes to a boil; simmer until glaze is reduced and dark brown, about 10 minutes.
- Bake ham in the preheated oven until an instant-read thermometer inserted into the thickest part of the ham and not touching the bone reads at least 160 degrees F (70 degrees C), about 2 hours.
- Continue baking, brushing glaze onto ham every 10 minutes, about 30 minutes more. Remove from the oven and allow to sit 10 minutes before slicing.

GLAZED PINEAPPLE KIELBASA BITES RECIPE

- 1. Soak your toothpicks in water for 20 minutes before baking. Be sure to use plain ( not colored) toothpicks. I learned from experience that the colored toothpicks will bleed and discolor the food. 2.Preheat oven to 425 F. degrees. Line a baking sheet with parchment paper. 3. Place a piece of pineapple in tip of a slice of kielbasa and place on the parchment lined pan. (I wait to put the toothpicks in until after I glaze. The reason being that if you get glaze on the tops of the toothpicks, it will burn in the oven.) 4. In a small bowl combine glaze ingredients.*** Glaze the kielbasa and pineapple bites. Stick each portion with a plain toothpick. 5. Bake for 15 to 20 minutes until hot. Let cool slightly and serve warm. *** I made extra batch of sauce for dipping.
HONEY-GLAZED PINEAPPLE
Steps:
- Using a large serrated knife, cut off top and bottom of the pineapple, just deep enough to expose the flesh. Stand pineapple on one end on a cutting board; begin cutting away the skin, from top to bottom, rotating pineapple on board until all skin is removed.
- Cut pineapple crosswise into 1/2 to 3/4-inch thick slices. Using a small biscuit cutter, core each slice and discard. Transfer to a shallow baking dish.
- In small bowl, combine honey and lime juice. Using a pastry brush, coat both sides of pineapple with mixture. Cover with plastic wrap, and let stand at room temperature for at least 1 and up to 8 hours.
- Preheat grill to medium. Sprinkle brown sugar evenly over slices. Grill 3 minutes, until golden brown. Garnish with mint leaves; serve hot or at room temperature with ice cream, if desired.
