Artisan Style Gluten Free Bread image

This artisan style gluten free bread has a fantastic texture and delicious flavor. It also mixes up quickly and can be baked into various shapes and styles.

300g Gluten Free Bread Flour Mix (2 cups)
4g instant yeast (1 tsp)
24g sugar (1 1/2 Tbs)
42g softened unsalted butter (3 Tbs)
195g water (3/4 cup)
130g milk (1/2 cup)

Steps:

  • In a bowl, whisk together the dry ingredients (flour, sugar, yeast).
  • Cut in the butter until it's dispersed throughout the flour.
  • Gradually stir in the water and milk. You may want to warm up the milk to about 100ºF first.
  • Cover and let the dough proof in a warm place for 15 minutes.
  • Re-mix the dough, form it into the desired shape, and proof it in greased bread tin or a rice flour dusted proofing basket until about double in volume. This takes 1-2 hours, depending on your room and dough temperatures.
  • Preheat your oven to 400ºF. If making an artisan style loaf, preheat your baking vessel too.
  • Bake for 1 hour covered and 15 more minutes uncovered. If baking in a loaf pan, tent the pan with foil until the last 15 minutes.

6 cups stone ground white rice flour * ((36 ounces / 1,020 grams))
3 1/4 cups sorghum flour ((16 ounces / 455 grams))
1 3/4 cups tapioca flour or starch ((8 ounces / 225 grams))
1 1/4 cups potato starch ** ((8 ounces / 225 grams))
1/4 cup xanthan gum or psyllium husk powder ((1.4 ounces / 40 grams))
6 1/2 cups GLUTEN-FREE ALL-PURPOSE FLOUR MIXTURE ((990 grams))
1 tablespoon instant yeast (or dry active yeast) ((10 grams))
1 to 1 1/2 tablespoons coarse kosher salt ((10 to 15 grams))
2 tablespoons sugar ((30 grams))
3 3/4 cups lukewarm water ((850 grams))
parchment paper or cornmeal

Steps:

  • Whisk and mix the ingredients in a 5- to 6-quart lidded container. Finish by picking up the container and vigorously shaking until the flours are completely blended.
  • The ingredients must be very well mixed, otherwise the xanthan gum or psyllium will not be evenly distributed and your loaves will be inconsistent.
  • Store the flour mixture in an airtight container in a cool dark area until needed.
  • * Do not substitute with sweet white rice flour.
  • ** Do not substitute with potato flour.
  • If you're measuring by U.S. cup-measures, be sure to pack the flour tightly into the cup, as if you were measuring brown sugar.
  • In a 5 to 6-quart bowl or stand mixer, whisk together the flour, yeast, salt and sugar.
  • Add the lukewarm water - lukewarm water (100ºF) will allow the dough to rise to the right point for storage in about 2 hours.
  • Mix with the paddle attachment of mixer until mixture is very smooth, for about one minute. Alternatively, using a spoon or spatula, mix well by hand for one to two minutes. Kneading is not necessary. Transfer mixture to lidded (not airtight) food container.
  • Cover with a lid that fits well to the container but can be cracked open so it's not completely airtight. Plastic wrap is fine, too. Allow the mixture to rise at room temperature about 2 hours; then refrigerate it and use over the next 10 days. You can use a portion of the dough any time after the 2-hour rise. Fully refrigerated wet dough is less sticky and easier to work with than dough at room temperature, but whatever you do, do not punch down the dough - this is unnecessary with gluten-free bread baking.
  • On baking day: pull off a 1-pound (grapefruit-size) piece of dough, then place it on a pizza peel prepared with plenty of cornmeal or parchment paper. Gently press the dough into a ball and use wet fingers to smooth the surface. Allow it to rest at room temperature for 60 minutes loosely covered with plastic wrap or under a roomy overturned bowl. The dough will not look as though it has risen much after the 60 minutes - this is normal.
  • While the dough is resting, preheat a baking stone or baking steel near the middle of your oven set at 450ºF for at least 30 minutes. Alternatively, preheat a lidded Dutch oven for 45 minutes at 450ºF. If you are using the stone or steel, place an empty metal broiler tray for holding water on the shelf below the stone or steel.
  • Dust the top of the dough liberally with gluten-free flour. Slash a 1/4-inch to a 1/2-inch deep cross or scallop(s) across the top using a wet serrated bread knife.
  • Shimmy the loaf onto the preheated stone. Quickly and carefully pour 1 cup of hot water from the tap into the metal broiler tray and close the oven door to trap the steam. If you are using parchment paper on the steel or stone, remove it after 20 minutes. Bake loaf for a total of 45 minutes. Alternatively, use the piece of parchment paper as handles and carefully lower the dough-topped parchment paper into the preheated pot. Cover and place in the oven. No need for a steam bath with the dutch oven. If you are using the preheated vessel, remove the lid after 30 minutes, and bake for 15 minutes longer uncovered or until the crust is richly browned.
  • Allow bread to cool completely, about 2 hours, on a wire rack.
  • Store remaining dough in the refrigerator in your lidded or loosely plastic-wrapped container and use it over the next 10 days. If your container isn't vented, allow gasses to escape by leaving the cover open a crack for the first couple of days in the fridge. After that, it can be closed.

1 tsp Xanthan Gum (3.5g)
If using Tara Gum, omit Guar and Xanthan Gums and use 3 tsp of Tara - Do not hydrate. Add to dry blend.
296 ml (10 fl. oz) Filtered Water - Room Temp or Lukewarm (1 1/4 C) note: if using Active yeast, reduce water to 8 oz and see note next to yeast below
4 Large Pasture Raised Egg Whites (120g)
2 T Oil - we use Avocado Oil (30 ml)
1 tsp Apple Cider Vinegar (5 ml)
255g (9 oz) Flour Farm Organic Gluten Free Flour Blend (2 1/3 C + 1 tsp spoon & level)
85g (3 oz) Potato Starch (1/2 C spoon & level)
2 1/4 tsp Instant or Rapid Rise Yeast (7.5g) note: if you only have Active yeast, place yeast in 2 oz of warm water with a pinch of sugar to activate and reduce water above to 8 oz. Allow to bloom for 15 minutes.

1 T Ground Golden Flax Seed (7g)
1 T Acacia Powder (7g)
1 1/2 tsp Fruit Pectin, we use Pamona's Universal Pectin (5g)
1 tsp Extra Fine Pink Himalayan Salt (6g)
1/2 tsp Aluminum Free, Double Acting Baking Powder (2.5g)
1/8 tsp Vitamin C Powder (optional: pinch of ascorbic acid)
236 ml (8 oz) Tap Water (1 C)

Steps:

  • Warm water to 100 F/38 C
  • Bring eggs to room temperature and separate
  • Prepare proofing basket or bowl (spray linen with water and then flour it)

  • Whisk the gluten-free all-purpose flour, tapioca starch, and salt together in a large bowl until the ingredients are well distributed.
  • Combine the warm water, yeast, and sugar together in another large bowl and mix well. Set aside for 5 minutes. (You should start see bubbles at the surface. If not, it means the yeast has expired and is not working, so you will need to use yeast from a new packet.)

  • In the bowl of a stand mixer fitted with the dough hook, add all dry ingredients and whisk using a handheld wire whisk. Add the honey, olive oil, and water. Place on mixer and mix briefly to incorporate. Turn the mixer up to medium high and knead for 5 minutes. Remove the dough hook and scrape the dough into a cohesive mass using a plastic dough scraper or a rubber spatula (or scrape into another bowl). Cover and place the bowl in a warm, draft-free area and allow it to rise (proof) for 1-2 hours, or until doubled in volume.
  • On baking day, remove the dough from refrigerator and dump it out onto well-floured surface. Knead until fairly smooth, adding more flour as necessary. If not using the psyllium husks, it will be a somewhat sticky dough so keep a small bowl of flour on hand to sprinkle the dough and/or surface with extra flour.
  • To shape into a boule, simply form into a round ball, pulling the dough up and under the ball and pinching on the bottom. Place on parchment paper. To shape into a baguette, smooth the dough and roll into a rope shape, tapering it at the ends, adding more flour as necessary. Roll out as thick or thin as you'd like and as long as you're able to fit in your oven (make sure it will fit on your pizza steel or stone). Place it on a sheet of parchment paper.

  • To make the preferment: mix together 140 grams of active starter, 110 grams of water, and 80 grams of rice flour. Cover and place in warm place overnight (ideal temperature = 75-78’F)
  • In the morning, in a large bowl, whisk together psyllium husk, honey, and 245 grams water. Allow to sit for 5 minutes to gel.
  • Scape preferment into psyllium husk mixture and gently mix to combine. Add in dry flours and stir with a wooden spoon until it starts to comes together then knead by hand until dough is smooth and elastic and pulls off the sides of the bowl nicely. Dust with a bit of extra sorghum flour if it feels too sticky. If it feels too dry, wet your hands while kneading to help bring the dough together.

  • The night before you're ready to make the dough for your bread, discard all but about ⅓ of your starter and feed it with 100 grams of whatever flour you've been using and 100 grams of water (or a splash or two more to make a thick pancake-like batter). This will vary depending on the size of your starter, but your goal is to have enough active (mature and ripe) starter to equal 140 grams when making the dough the next day.
  • The next morning, in the bowl of a stand mixer or a large bowl, whisk together the dry ingredients and then add the wet ingredients (including 140 grams of the ripe starter), beating on low until well combined. Increase the speed to medium high and mix for 5 minutes. If mixing by hand, mix vigorously for 5-7 minutes.
  • Cover the dough and allow it to rise in a warm, draft-free area until doubled in size, about 3-4 hours (sourdough always takes longer to rise). Place the risen dough in the refrigerator overnight.
  • The next day, remove the dough from the fridge and turn it out onto a well-floured surface. If using baking soda, add ¼-½ tsp to top of dough and begin kneading dough until smooth.

  • Prepare Dough for Baking. Your dough should be beautifully risen and ready to bake. Use a flat and bendable rubber spatula to gently loosen (shimmy) the edges of the dough from the sides of the bowl.
  • Eat! You’ll notice your gluten-free artisan bread has a wonderful hard crust and a doughy soft center. This is the magic of baking it inside a Dutch oven.
